GREEK TURKEY BURGERS



Greek Turkey Burgers image

These Greek Turkey Burgers, mixed with Kalamata olives, feta, and spinach,combine all my favorite Greek flavors and can be served with or without the bun.

Number Of Ingredients 9

1 ½ pounds 93% lean ground turkey
1 tablespoon minced garlic
1 teaspoon ground cumin
2 teaspoons dried oregano
1/3 cup Kalamata olives (finely chopped)
3 ounces crumbled feta cheese
1 cup finely chopped and packed fresh spinach
Pinch each of sea salt and black pepper
Olive oil spray

Steps:

  • Preheat the oven to 420°F.
  • Add all the ingredients to a large bowl and mix together thoroughly.
  • Scoop out a large fistful of meat, roll it into a ball, then flatten it to form a patty around 1 ½ inches thick. Repeat with the remaining meat to make 5 large patties of equal size.
  • Once the patties are formed, use your thumb to make a shallow indentation in the middle of each patty to prevent them from forming a dome as they cook.
  • Set a large oven-safe nonstick skillet over medium-high heat and spray lightly with olive oil. When the skillet is hot, add the patties.
  • Cook on one side for 3 to 4 minutes, until the edges are brown and seared, then flip the patties over.
  • Cook for an additional minute, then place the entire skillet in the oven to cook until the internal temperature is 165°F, 9 to 11 minutes.
  • You can also bake them on a baking sheet lined with parchment paper or aluminum foil for 8 to 10 minutes.
  • Enjoy these as a burger with a toasted whole wheat bun, butter lettuce, cucumber slices, thin red onion slices (optional), sliced tomato, and a little Greek yogurt instead of mayo. Or pair a patty with salad, rice, quinoa, or even roasted vegetables!

500g lean turkey mince
100g feta , crumbled
1 large courgette (about 200g), ends trimmed, halved widthways and spiralized into thin noodles
2 garlic cloves , crushed
½ small pack mint , leaves picked and chopped
½ tsp chilli flakes
1 tsp sumac
zest and juice of 1 lemon (save the juice for the salad)
1 large egg , beaten
1 tsp olive oil
2 tbsp extra virgin olive oil
110g bag of rocket salad
250g pack cherry tomatoes , halved

Steps:

  • Mix all of the ingredients for the turkey burgers, bar the olive oil, together in a large bowl. Season with a generous amount of black pepper and a little salt (you won't need a lot because of the feta). Shape into 4 burgers, the mixture will be quite sticky so cover and chill in the fridge for 15 mins or until needed to firm up a little. At this point the burgers can also be frozen.
  • Preheat the grill to its highest setting then brush the burgers on both sides with the olive oil. Transfer the burgers to a non-stick baking tray and cook for 8-10 mins on each side, until cooked through and golden brown.
  • While the burgers are cooking, mix together the olive oil, lemon juice and some seasoning. Add the rocket and tomatoes to a large salad bowl, add half the dressing and toss well to combine. Serve alongside the turkey burgers and with the extra dressing on the side.

These are a big hit in the summertime when everyone is tired of the same old hamburgers and hot dogs. Serve with or without buns and your favorite condiments. I like to serve these with lettuce, tomato, and Tzatziki sauce (you can find recipes for that on this site as well).

1 cup frozen chopped spinach, thawed
1 pound 93% lean ground turkey
½ cup crumbled feta cheese
½ teaspoon garlic powder
½ teaspoon dried oregano
¼ teaspoon salt
¼ teaspoon ground pepper
4 small hamburger buns, preferably whole-wheat, split
4 tablespoons tzatziki
12 slices cucumber
8 thick rings red onion (about 1/4-inch)

Steps:

  • Preheat grill to medium-high. Squeeze excess moisture from spinach. Combine the spinach with turkey, feta, garlic powder, oregano, salt and pepper in a medium bowl; mix well. Form into four 4-inch patties. Oil the grill rack (see Tip). Grill the patties until cooked through and no longer pink in the center, 4 to 6 minutes per side. (An instant-read thermometer inserted in the center should register 165 degrees F.) Assemble the burgers on the buns, topping each with 1 tablespoon tzatziki, 3 cucumber slices and 2 onion rings.

  • Gently mix together the ground turkey, feta crumbles, chopped basil, worcestershire sauce, salt, and pepper with your fingertips. Make sure not to overwork the meat, but rather to think of distributing the ingredients evenly.
  • Form the meat mixture into 4 patties, keeping in mind that the burger will shrink up during cooking. For this reason, I usually make them flatter than I ultimately want, and a little bit wider than the bun. Don’t make the patties too thick or they’ll take too long to cook.
  • To cook on the stove, heat up a cast iron skillet over medium high heat for a couple minutes. Once the pan is hot, add the turkey patties and cook for about 3 minutes on each side. Time will vary depending on how hot your pan is and how thick your patties are, but you want the center of the turkey burger to read at 165 degrees F. If you find that the burgers are browning too much before the interior is cooking through, you can put a lid on the pan, or pop the burgers into a hot oven for a few minutes to finish cooking.
  • You may also grill the burgers either on an indoor or outdoor grill. About 3 minutes on each side as well, depending on how intense the heat is. Check for doneness using a thermometer, aiming for 165F.
