TACO MEATLOAF
This easy taco meatloaf is a tasty combination of ground beef, taco seasoning, pepper jack cheese, and crushed tortilla chips that's topped with taco sauce! It makes for an irresistible and delightfully cheesy meatloaf recipe that the whole family will love!

- Preheat your oven to 350°F (175°C).
- In a medium to large-sized mixing bowl combine the meatloaf ingredients (ground beef, tortilla chips, cheese, milk, eggs, taco seasoning, dried minced onion) with the exception of the taco sauce. Mix just enough to combine, and do not over-mix the meatloaf.
- Transfer the meatloaf mixture into a 9x5-inch loaf pan and shape the loaf (leaving a well around the edges gives the fat somewhere to drain off to).
- Bake at 350°F (175°C) for 45 minutes, then remove the meatloaf and top with red taco sauce if desired. Return to your oven and continue cooking an additional 10-15 minutes (55-60 minutes total) or until the meatloaf has an internal temperature of 160°F (71°C) before serving.
- Remove the fully cooked meatloaf from your oven and loosely tent with a sheet of aluminum foil. Allow the meatloaf to rest for 10 minutes before slicing and serving.

UNBEATABLE TACO MEATLOAF
I was disappointed with the lack of flavor of other Mexican meatloaves so I created this one. The secret to this moist loaf is the white bread although it may seem out of place. Its a little work but your tastebuds will thank you!

Steps:
- Move oven rack to top insert and broil poblano 4-5 minutes on each side until skin is blistered and mostly black. Remove and place in an airtight container for 20 minutes. Gently remove blistered skin and dice poblano.
- Dice onions, green pepper and jalapeño. Sautee in a bit of oil until onion is almost translucent. Allow to cool completely.
- Dice black olives and green onions.
- In a large bowl, combine the ground beef, 1/2 onion/jalapeño/green pepper mixture, 1/2 of the poblano, 1/2 green onions, and 1/2 cup Black olives, 1/2 cup Crushed Doritos, finely diced white bread slice, 2 tablespoons of taco sauce, whole packet of taco seasoning, 1/4 cup Half and half, and 1 egg and egg white.
- Shape into 4 small meatloaves and place on baking sheet. Bake at 350 degrees until loaves reach 160 degrees.
- Cut Velveeta into small cubes and add can of Rotel. Add in the remaining poblano, onions/jalepeno,and 4 tablespoons of salsa and cook over medium heat in saucepan until combined and melted stirring frequently. Serve over meatloaf. Sprinkle remaining green onions over loaves.

TACO MEATLOAF
I like meatloaf, my DH likes tacos. We both LOVED this recipe! Found in TOH "Comfort Foods Book **Updated to add -- I have done a few revisions on this recipe to include a different pan size for the "boil over" issue. I have also found that if turkey and beef are combined it is a bit drier, you can use all turkey or all beef it is really up to you.

- In a large bowl, combine the first eight ingredients. Crumble meat over mixture and mix well. Form a loaf and bake in a 11 x 7 pan.
- Bake, uncovered, at 350 degrees for 1 1/2 hours or until a meat thermometer reads 160 degrees. Serve with salsa, sour cream, cheese and olives.

- Preheat the oven to 350 degrees F (175 degrees C).
- Thoroughly combine beef, tortilla chips, pepper Jack cheese, onion, and taco seasoning in a bowl.
- Whisk eggs, milk, and taco sauce together in a separate bowl. Add to meat mixture and stir until well combined.

- 1. In a large bowl, whisk egg and add all ingredients except ground beef. Mix well. Add ground beef and mix well.
- 2. Shape into loaf in baking dish. Bake at 350 F for 60-70 minutes. Time will depend on how thick you make your loaf.
- 3. While hot, place on serving platter. Top with sliced tomato and grated cheese. Loosely cover with foil so the heat from the meatloaf melts the cheese.
- 4. Meanwhile, prepare any combination of shredded lettuce, chopped green onion, chopped black olives, sour cream and extra salsa to serve on the side or on top of meatloaf.

- Preheat oven to 400° Fahrenheit and grease a loaf pan with ghee or oil. Alternatively, you can line the pan with parchment paper for easier cleanup.
- Place beef in a bowl and add in 1/2 of the salsa, both eggs and the seasoning mix. Using your hands, mix the ingredients until the ingredients are evenly incorporated.
