One would think you spent all day in the kitchen when you serve these potatoes as a side dish. Feel free to season the potato filling to your liking.

5 pounds russet baking potatoes
¼ cup salted butter, melted
⅓ cup milk
¼ teaspoon salt
1 pinch ground black pepper
2 tablespoons chopped fresh chives, or to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Wash and scrub potatoes. Place potatoes on the center rack and bake until they are soft in the center, about 1 hour. Remove from the oven and cool to the touch, about 15 minutes.
  • Cut potatoes in half and remove potato flesh from the skin, leaving the skin intact. Place potato flesh in a large bowl and beat until fluffy using an electric mixer. Add butter, milk, salt, and pepper and beat until smooth.
  • Spoon potato mixture into a pastry bag fitted with a large tip and pipe back into the potato skins. Sprinkle with fresh chives. Transfer to freezer bags and freeze until ready to use.

Loaded Potato Skins are an easy appetizer made with the crispy skins of a baked potato and filled with bacon, cheese, sour cream, and chives!

Number Of Ingredients 8

6 small to medium sized russet potatoes (, washed and pat dry)
8 ounces cheddar cheese (, shredded)
8 slices bacon (, cooked and crumbled)
1/4 cup unsalted butter ((half of a stick), melted)
sour cream (, for topping)
chives ((or green onion), chopped, for topping)
salt (, to taste)
freshly ground black pepper (, to taste)

Steps:

  • Preheat oven to 400 degrees F. Poke potatoes with a fork, place on a baking sheet and cook for 1 hour.
  • Remove from the baking sheet, and allow to cool for about 15 minutes.
  • Once your potatoes are cooled cut each lengthwise into three sections, creating three long slices. (So each potato should yield two skins, plus a middle section that you can either discard, use to make something else, or keep to make some extra potato skins without the "skin").
  • Once you've cut all the potatoes, use a small spoon to scoop out about 70 percent of the potato to make a little boat. You still want to have a thick layer of potato near the skin, but you want it to be slightly hollowed-out in the middle to create a "boat".
  • Turn your oven on to a high broil. Brush the potatoes with butter on the inside and outside and place them back onto the baking sheet. Season with salt and pepper.
  • Broil for 7-8 minutes until the insides get a bit crispy from the melted butter.
  • Remove from the oven and add a generous amount of shredded cheese into each skin, topping with bacon pieces.
  • Place back under the broiler for about 3-4 minutes until the cheese is nice and bubbly.
  • Remove from oven and top with sour cream and chives or green onion. Serve warm.
  • Store leftover potato skins in the refrigerator. Rewarm them in the oven or microwave.

4 medium-sized Idaho potatoes
Extra-virgin olive oil
Kosher salt
1/2 stick butter
1/4 cup all-purpose flour
1/2 cup milk
About 2 cups, plus more for topping, shredded sharp white Cheddar
2 heads broccoli, florets, blanched in salty water
1/2 pound bacon, medium dice, cooked until crisp
2 tablespoons chives, chopped
Freshly ground black pepper

Steps:

  • Preheat oven to 400 degrees F.
  • Begin by baking the potatoes, as this will take the longest. Place potatoes onto a baking sheet. Pierce with a fork, drizzle with olive oil and season with salt. Place into preheated oven and bake for about 1 hour.
  • While they are baking prepare the stuffing. Make a mornay sauce by combining the butter and flour over medium heat and then whisking in the milk. Fold in about 2 cups cheese and stir until melted. Once melted, remove from heat and fold in the cooked broccoli florets, crispy bacon bits, chopped chives and season with salt and freshly ground black pepper.
  • When the potatoes are done make a cut across the top and squeeze it from the bottom so a small pouch opens up and the bottom is squared off. Spoon the filling over the top of the potato, sprinkle with cheese, season with pepper, to taste, and then pop in the oven for 2 more minutes until golden brown and bubbly.

This is one of my favorite recipes to make. They freeze well- just flash freeze and wrap individually in plastic wrap. You can add more of the spices and cheese at the end, to taste.

6 slices crumbled cooked bacon (for topping)
4 large baking potatoes
1/4 cup butter or 1/4 cup margarine
1/4 cup whipping cream
8 ounces sour cream
3/4 cup shredded sharp cheddar cheese
1/2 cup green onion, chopped (optional)
3 tablespoons grated parmesan cheese
1/2 teaspoon garlic salt
1/4 teaspoon pepper
chopped fresh chives or frozen chives, thawed

Steps:

  • Preheat oven to 400 degrees.
  • Scrub potatoes and prick several times with a fork.
  • Place 1" apart on paper towels in the microwave.
  • Microwave on high for 5 minute Turn. Cook 10 more minutes, turning one more time. Cool 2 minutes.
  • Cut potatoes in ½ lengthwise.
  • Carefully scoop out pulp, leaving ¼" thick shells.
  • Combine pulp, butter, & whipping cream and mash until fluffy (For best results, use a mixer).
  • Stir in sour cream and next 5 ingredients.
  • Spoon into shells and bake @ 400 degrees for 10 minutes.
  • Sprinkle with bacon and chives and serve immediately or flash freeze, wrap in plastic wrap, and use for OAMC.

I have been making these for years, and I always make lots to freeze! --- The potatoes must be baked firstly, cooled completely then frozen, do not omit the eggs and warm the whipping cream with butter on top of the stove firstly, or the potato filling will not freeze properly and become soggy and soft when reheated --- the amounts listed are for 7 jumbo russet potatoes, if you are making to freeze then you may easily double or triple the amounts, keeping the green onion amount as stated in recipe or you may increase slightly --- the potatoes may be used right away or frozen, directions include method for both --- purchase the jumbo russet potatoes for this.

7 jumbo russet potatoes
1/2 cup whipping cream
3/4 cup butter (can use more butter)
1 large egg
1 egg yolk
1/2 cup grated parmesan cheese
1 cup grated cheddar cheese
6 green onions, finely chopped (or to taste)
1/8 teaspoon ground nutmeg
2 teaspoons seasoning salt (or to taste)
1/2 teaspoon fresh ground black pepper (or to taste)
grated old cheddar cheese (for top)

Steps:

  • Prick a couple of holes in each potato with a fork.
  • Bake potatoes in a 350 degree oven until soft (if your potatoes are extra big this might take about 1 hour and 15 minutes or more).
  • Let cool for about 20-30 minutes then slice about 1/2-inch off the top off each potato.
  • Carefully scoop out the pulp with a spoon leaving about 1/4-in potato inside the shell.
  • Place the pulp into a large bowl.
  • In a saucepan heat the whipping cream with butter over low heat until the butter has melted; cool for about 15 minutes, then pour over the potato pulp.
  • Add 1 large egg, 1 yolk, 1/2 cup Parmesan cheese (or more if desired) 1 cup grated cheddar cheese and finely chopped green onions.
  • Using a hand mixer beat on high speed until smooth.
  • Add in seasoned salt and black pepper to taste.
  • Place on a baking sheet, then fill each shell with potato mixture.
  • Sprinkle the tops with a small amount parmesan cheese.
  • Bake in a 350 degree F oven for about 25 minutes or until the potato filling is set.
  • Cool completely then freeze.
  • TO SERVE; a day ahead remove from freezer and thaw the potatoes in the refrigerator overnight.
  • Heat in a 300 degree oven until hot.
  • Remove from oven then sprinkle with grated cheddar cheese, then return to oven for 5 minutes until the cheese has melted.
  • The potatoes can also be heated in the microwave on HIGH until hot.
