Number Of Ingredients 7

1 large head cabbage
3 cups cooked rice
1 lb bacon
1 large onion
2 teaspoons garlic powder

1/4 cup vegetable oil

Steps:

  • Place leaves on a cutting board and shave down the "vein" or if the leaf is large enough cut in half on either side of it.

UKRAINIAN CABBAGE

Ukrainian Cabbage image

Ukrainian Prockus (Stuffed Cabbage) is a DELICIOUS recipe that came to the United States from the Ukraine with my maternal grandmother, Anna Buhal'tsev (Bell) Mersky. It had been slightly revised by my mother, such as using cranberry sauce from the can, rather than using whatever type of berry that had been available and used in the Ukraine. A vegetarian who enjoyed the cabbage and sauce suggested that I devise a recipe for just the cabbage with the wonderful sauce, so I am calling it Ukrainian Cabbage, which can be a great side dish.

Categories     Vegetable

Time 40m

Yield 4 serving(s)

Number Of Ingredients 7

4 (16 ounce) cans jellied cranberry sauce (jelled not whole)
4 (16 ounce) cans tomato sauce
4 cups tap water
1/2 cup warm water
1 cup brown sugar
2 cups white raisins
3 heads green cabbage

Steps:

  • Combine the cranberry sauce, tomato sauce, 4 cups tap water and brown sugar and bring to boil.
  • Reduce to a simmer and add white raisins. Simmer 5 minutes.
  • Core the heads of cabbage and place into a large pot. Cover with boiling water. Cover the pot and cook about 10 to 15 minutes, until cabbage is wilted.
  • Remove from hot water. Then cover the cabbage with cold water and separate the leaves. You may have to replace the inner half of the cabbage into the hot water, in order to soften the rest of the leaves. When the rest of the cabbage is done, place that into the cold water and separate those leaves. You will want to tear the large leaves in half.
  • Preheat oven to 350 degrees F.
  • Drain all of the cabbage well and place the cabbage into a roasting pot. Pour the sauce into the same pot and mix the cabbage and sauce with a wooden spoon.
  • Cover pot with lid or with heavy duty aluminum foil and bake in preheated 375 degree oven for 15 minutes.

UKRAINIAN CABBAGE ROLLS

Ukrainian Cabbage Rolls image

My parents are Ukrainian and this is a recipe we always made when I was growing up. These cabbage rolls have no meat in them. Sometimes they used salt pork in them, but I didn't care for it.

UKRAINIAN CABBAGE SALAD BY FARIDA

Ukrainian Cabbage Salad by Farida image

Just a nice lil' crunchy Ukrainian cabbage salad I found about or around a year ago whilst interwebs surfing. The goal is to add a pleasant tang to the salad, and sour berries do the job nicely. Plus, they make for an eye-catching presentation. Use whichever berry is in season.

Provided by Iowahorse

Categories     Apple

Time 30m

Yield 4-6 serving(s)

Number Of Ingredients 10

1 small head cabbage, about 1 pound, shredded
1 tablespoon salt
1 medium apple, peeled and cut into matchstick strips
3 -4 tablespoons chopped green onions, green parts only
olive oil, to taste (traditionally sunflower oil is used)
freshly squeezed juice lemon, to taste
salt, to taste
ground black pepper, to taste
sugar (optional)
1 dried barberries or 1 sour cherry

Steps:

  • Place the cabbage in a large mixing bowl. Sprinkle with 1 tablespoon salt.
  • Mix, squeezing with your hands to soften, about a minute.
  • Leave aside for 15 minutes, to allow the juices to extract. Squeeze the cabbage with your hands to remove as much moisture as possible.
  • Try not to mash them. They should be tender but should still hold their shape. Place the cabbage back in the bowl.
  • Add the apple and green onions. Add the olive oil, lemon juice to taste.
  • Season with salt if needed (the cabbage may still have some salt, so don't over-salt), and black pepper to taste.
  • Sprinkle with a little sugar, if you wish (optional).
  • Toss to combine.
  • Transfer to a serving bowl.
  • Garnish with berries of your choice.
  • Prep time estimated and only approximately.

UKRAINIAN MEAT FILLED CABBAGE ROLLS

Ukrainian Meat Filled Cabbage Rolls image

In Ukrainian kitchens, cabbage leaves are often used as cases for soft fillings. These rolls are a little different, because the leaves are filled with a meat stuffing and not primarily a cereal mixture. This makes them 'holiday' fare. For a different flavor, use tomato juice instead of chicken broth. See the note at the bottom of the recipe for pressure cooking instructions.

Time 1h40m

Yield 8

Number Of Ingredients 12

1 tablespoon butter
1 large onion, chopped
¾ pound ground pork
½ cup fresh bread crumbs
1 egg
2 teaspoons salt
1 teaspoon freshly ground black pepper
1 head savoy cabbage, cored
2 cups chicken stock, or as needed
1 tablespoon all-purpose flour
1 cup sour cream
1 tablespoon chopped fresh dill

Steps:

  • Melt butter in a skillet over medium-high heat. Sautee onion in butter until tender. Remove from heat, and set aside to cool. When the onion is cool enough to handle, mix together the ground pork, bread crumbs, egg, salt and pepper until well blended.
  • Place the head of cabbage in a large pot, and add enough water to cover the cabbage halfway. Bring to a boil, and cook for about 2 minutes. As the outer leaves become translucent and soft, remove them one at a time by peeling them off with a wooden spoon. Trim off the thick ribs at the leaf stem.
  • Preheat the oven to 325 degrees F (165 degrees C). Grease the bottom of a 9x13 inch baking dish, and line the bottom with outer cabbage leaves. Lay a few more leaves on a clean work surface. Place a large spoonful of the pork mixture at the base of each leaf. Roll up towards the top. Repeat until filling is used up. Arrange the finished rolls over the leaves in the dish, and pour in just enough broth to cover the rolls. Place extra cabbage leaves over the top.
  • Cover, and bake for 1 hour in the preheated oven. When finished, drain off broth from the dish into a small saucepan. Whisk together the flour and sour cream. Gradually stir the sour cream into the broth. Cook over medium heat, stirring frequently until heated, about 5 minutes.
  • To serve, arrange cabbage rolls on a platter, cover with sauce and sprinkle with dill. This goes perfectly with homemade noodles, or millet kasha.
