CARROT, PEACH AND FRESH THYME SMOOTHIE (RAW FOOD)



Carrot, Peach and Fresh Thyme Smoothie (Raw Food) image

The original of this recipe was found online at GoneRaw, but I tweaked it a little. I've used a rounded 2-up measure of frozen peaches for this.

6 medium carrots
2 fresh peaches, peeled
1 orange, juice of
1/2 cup water, very cold
2 sprigs fresh thyme, leaves only

Steps:

  • Process the carrots in a juicer & use the resulting juice for this drink.
  • In a blender process all ingredients until smooth.

2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme
2 teaspoons canola oil
1 teaspoon honey
1/4 teaspoon salt

Steps:

  • Preheat oven to 400°. Place carrots in a greased 15x10x1-in. baking pan. In a small bowl, mix thyme, oil, honey and salt; brush over carrots. Roast until tender, 20-25 minutes., ,

1 tablespoon butter
4 sprigs thyme
1/2 cup water
Coarse salt and ground pepper

Steps:

  • In a large skillet, combine carrots, butter, thyme, water; season with coarse salt and ground pepper. Bring to a boil over high and cook, stirring occasionally, until liquid is absorbed and carrots are tender, 7 to 9 minutes.
