GRILLED TANDOORI-STYLE LAMB SKEWERS



Grilled Tandoori-Style Lamb Skewers image

Number Of Ingredients 15

1 teaspoon cumin powder
1 teaspoon garam masala
Seeds from 3 cardamom pods (1/2 teaspoon ground in mortar and pestle)
1 teaspoon onion powder
3 tablespoons bottled minced garlic or 8 cloves minced
1 cup plain yogurt
2 tablespoons sweet paprika
3 tablespoons Indian curry powder
1/2 cup chopped cilantro leaves, plus leaves for garnish
2 teaspoons kosher salt or Hawaiian sea salt
2 teaspoons cracked black pepper
1 pound boneless leg of lamb, trimmed and cut into 1-inch cubes
4 to 5 scallions, cut into 1-inch pieces
Basmati rice with cilantro (or orzo with spinach and butter), for serving
Lime wedges and a side of raita (yogurt sauce with vegetables), for serving

Steps:

  • Heat the cumin, garam masala and cardamom in a dry pan, over low heat, until fragrant, about 1 to 2 minutes. Add the onion powder and garlic then transfer the mixture to a bowl. Add the yogurt, paprika, curry powder, cilantro, salt and pepper.
  • Thread 4 cubes of lamb on each skewer, alternating with scallion pieces and leaving about 1/3 of the skewer as a handle. Arrange them in a shallow glass baking dish and pour the yogurt mixture over them, (turn to coat if needed). Allow to marinate for 1 hour to overnight, in the refrigerator. Brush the grill with an oiled paper towel and preheat it to medium-high. Arrange the skewers at angle for nice grill marks and grill 3 to 4 minutes per side for medium-rare, 5 to 6 minutes per side for medium. Transfer the skewers to a serving platter and garnish with lime wedges and cilantro.
  • Serve with basmati rice with cilantro or orzo with spinach and butter and a side of raita (yogurt sauce with vegetables), if desired.

1/2 cup soy sauce
1/2 cup sherry
1/2 cup mango juice
2 tablespoons balsamic vinegar
1/2 teaspoon dry mustard
1 tablespoon grated fresh ginger
1 tablespoon minced garlic
16 (1-ounce) abalone steaks
2 1/2 tablespoons light brown sugar
1 1/2 teaspoons cornstarch
8 ounces pineapple, cubed
8 ounces pears, cubed
8 ounces peaches, cubed
Wooden skewers, soaked in water for 30 minutes

Steps:

  • Mix soy sauce, sherry, mango juice, vinegar, mustard, ginger, and garlic together in a bowl. Reserve 1/3 of the mixture for a glaze. Put abalone steaks in a shallow baking dish, pour marinade over. Marinate the steaks for at least 30 minutes or refrigerate covered up to 4 hours.
  • Preheat an outdoor grill to high heat.
  • Put the reserved marinade in a saucepan, whisk in the brown sugar and cornstarch. Simmer over low heat until marinade thickens to create a glaze. Set side but keep warm.
  • Place 2 skewers about 2 inches apart on your work surface. Weave the marinated abalone steaks onto the skewers so that the steaks will lie flat on the grill. Alternate with fruit pieces between the steaks. Each double skewer will hold 2 to 3 steaks plus fruit.
  • Grill over high heat until abalone is cooked, about 1 minute per side. Brush the fruit with the glaze and serve immediately.

GRILLED STEAK SKEWERS WITH HORSERADISH

1/2 cup soy sauce
1/4 cup vegetable oil
3 tablespoons prepared horseradish
2 tablespoons rice wine vinegar
1 tablespoon grated fresh ginger
1 tablespoon honey
1 pound sirloin, cut into 1-inch cubes
6 scallions
Nonstick cooking spray, for the grill
1/2 cup mayonnaise
2 tablespoons prepared horseradish
1/2 teaspoon hot sauce
1/2 teaspoon Worcestershire sauce
1/4 teaspoon kosher salt
1/4 teaspoon ground ginger

Steps:

  • For the steak skewers: Assemble the marinade by combining the soy sauce, vegetable oil, horseradish, rice wine vinegar, ginger and honey in a bowl. Put the sirloin in a large ziptop bag and pour the marinade over the meat. Gently massage the meat and place in the refrigerator for a minimum of 1 hour.
  • In the meantime, prepare for the skewer assembly. Put the wooden skewers in a shallow bowl of water and soak for 1 hour. This will prevent burning on the grill. Discard the water after soaking.
  • Prep the scallions by slicing the white and light green parts into 1-inch pieces. Set aside for the skewers. Then, slice the dark green tops and set aside for the sauce.
  • For the horseradish sauce. In a mixing bowl, combine the mayonnaise, horseradish, hot sauce and Worcestershire. Stir in the salt, ginger and reserved scallion tops. This can be stored in an airtight container in the refrigerator. When ready to serve, pour the horseradish sauce in a small bowl and garnish with a few more pieces of scallions on top.
  • Preheat a grill or grill pan over medium-high heat. Spray with nonstick cooking spray.
  • Slide 4 to 5 cubes of beef onto each skewer, alternating with pieces of scallion (discard the marinade). Grill until browned and crispy, 3 to 4 minutes on each side. Serve warm alongside the horseradish sauce for dipping.

2 tablespoons mayonnaise

Steps:

  • Preheat a grill or grill pan for cooking over medium-high heat. Thread a few pieces of lettuce onto a skewer, followed by a cherry tomato; repeat twice so that you have three lettuce clusters and three cherry tomatoes on the skewer. Repeat with the remaining skewers.
  • Brush both sides of the skewers with the oil and sprinkle lightly with salt and pepper.

1/2 5-to-6-pound seedless watermelon, cut into 1-inch cubes
1 pineapple, peeled, cored and cut into 1-inch cubes
2 mangoes, peeled, pitted and cut into 1-inch cubes
Grated zest and juice of 1 lime
Vegetable oil, for brushing
2 teaspoons chili powder
Coarse sea salt

Steps:

  • Soak 18 wooden skewers in water 20 minutes. Thread the watermelon, pineapple and mango cubes on the skewers. Put the skewers in a large zip-top plastic bag, being careful not to puncture the bag; add the lime juice, seal and toss gently to incorporate. Refrigerate at least 30 minutes or until ready to use.
  • Preheat a grill or grill pan to medium high. Remove the skewers from the bag and place on a baking sheet. Brush the fruit with vegetable oil and place the skewers on the grill. Grill, turning once, until marks appear, 6 to 8 minutes. Transfer to a serving platter.
  • Combine the lime zest, chili powder and 1 teaspoon salt in a small bowl. Sprinkle the seasoning over the grilled fruit.

1 teaspoon minced fresh ginger root
2 teaspoons grated orange zest
1 pound top sirloin, cut into 1-inch cubes
1 large red onion, cut into wedges
2 large red bell peppers, cut into 2 inch pieces
2 tablespoons olive oil
1 ½ cups 1-inch fresh pineapple cubes
1 large navel orange, peeled, sectioned

Steps:

  • Combine yogurt, cayenne pepper, ginger, orange zest, and sirloin cubes in a large freezer bag. Massage bag to mix and coat beef well. Refrigerate for at least 2 hours.
  • Preheat an outdoor grill for medium heat, and lightly oil the grate. Remove beef from freezer bag; shake off as much marinade as possible. Thread onion, red pepper, and marinated beef cubes onto skewers; brush with olive oil.
