MAPLE NUT CREAM FUDGE BY FREDA
I have always Love maple Cream anything. . . So When I found this recipe, I was delighted, its a Canadian recipe. ( My Mother is from Canada, Says "everythings better in Canada") We'll let you decide!! Easier than it Looks. Photo Coming.

- 1. READ ENTIRE DIRECTIONS BEFORE STARTING THIS RECIPE. Follow EXACTLY. Line Pan with Foil & Butter well. Set aside. Add White & Brown Sugars, Butter & Cream, Maple Syrup & salt into Heavy Saucepan. Place over Medium Heat, Stir all the while Bringing to a boil. Lower Heat, Continue to stir Slowly as Mixture cooks. After Timing & cooking for 7 Min, Test by pouring a small amount into some Cold Water. you want it to Form a Soft ball (235-240ºF) (112-116ºC) or use Candy Thermometer, to soft ball stage @ 235-240ºF (112-116ºC) You Might need to cook this for another minute or two. REMOVE FROM HEAT.
- 2. Add Nuts, Vanilla & maple flavoring, and start Stirring. Keep Stirring . . . It takes about 14-15 min for the Fudge to cool & thicken.
- 3. Pour into 9 X 10 Buttered Dish. Tip: Let the fudge sit for 10 min, after removing from the heat, & allow this to cool slightly, this will reduce the stirring time.
- 4. INFORMATION TIPS: SOFT BALL STAGE; 235-240ºF (112-116ºC) Is used for; Fudge, Fondant, Creams, Penuche, Maple, etc: When a small amount of sugar syrup is dropped into very cold water, it forms a ball that does not hold its shape when pressed with your fingers.
STRAWBERRY VANILLA CUSTARD PUDDING BY FREDA
This Pudding Very Light and Creamy, Very SIMPLE to make. It is a Partially Borrowed, Tried and True Recipe from an old 1950's cookbook that was given to me by an Aging and Very ill Aunt of one of My best Girlfriends in Missouri,(Jo). She had been cared for by My friend Jo. This book was given to me before her passing as She enjoyed me & my Friend so much and was so grateful for the "Good times" we shared with her. Noting "She hated to Cook, and Knew I love to, along with my Love of Cookbooks. This recipe is In Her Memory. "Aunt Inez" I make this and simply Layer Fresh or Frozen Strawberries, or Raspberries with this custard in a Footed dessert dish, with a dollop of Whip Cream on top. Very Good and Very Pretty. Great for Valentines day or Mothers day, or Just any time you desire.

- Follow Directions above. Stir Constantly. after it comes to a Boil, Boil 1 min, til thick and creamy. . . Remove from heat. Add butter and Vanilla, and Blend Well. Cool til ready to serve.
- To Serve; Slice fresh Strawberries, or thaw Frozen Berries. Layer Pudding in footed dish, or glass. Pudding then Berries, and top with Whip Cream and a fresh berry Variation; Use raspberries in place of Strawberries. Also can Use Fruited Yogurt layered with Berries and custard Pudding.
- Enjoy, this is so light and creamy, You'll wonder why you buy store bought puddings ever. Very In-expensive to make. . . Easy on the Budget.
- NOTE: This Photo is Just poured from the saucepan into a bowl, to be layered into dishes later as it cools.

- Arrange in a 9x13-inch pan.
- Mix pudding with milk and pour over Twinkies.

- 1. #1. Haystacks directions: Melt Chips add shortening, when all melted well, remove from heat. Toss in Noodles, & peanuts, coat well. Drop on wax paper By Tbs. Chill til set.
- 2. #2. ASIAN FLAIR Directions: Make same as for Haystacks above; spoon by Tbs. onto wax paper. add into center of each nest 1 or 2 whole Almonds. Chill till set.
- 3. #3. SHREDDED COCONUT HAYSTACKS Directions: Melt White Choc chips, remove from Heat. add 2 C shredded coconut toss fast and well to coat. Drop by tsp onto wax paper lined sheet, to harden about 35-45 min. or chill in refer
- 4. #4. PEANUT BUTTER HAYSTACKS Directions: Line pan with wax paper. Microwave Chips 1 min. then 10 to 20 sec more,till just melted, and stirs smooth. Stir in Peanut butter. Add: Noodles,& mini marshmallows, toss to coat well. Drop by Tbs onto wax paper lined tray. Chill till ready to serve.

- 1. Preheat Oven @ 325 degrees. Note: (do not grease Cookie sheets) WHIP butter Until Light & Fluffy. Add Flavoring, Whip well
