TURMERIC RAISIN RICE

2 tablespoons butter
1/4 cup finely chopped onion
1 teaspoon finely chopped garlic
1 cup converted rice
1/3 cup raisins
1 teaspoon turmeric
2 sprigs fresh thyme or 1/2 teaspoon dried
4 drop Tabasco sauce
1 bay leaf
1 1/2 cups water
Salt and ground pepper to taste

Steps:

  • Melt 1 tablespoon of the butter in a saucepan and add the onion and garlic. Cook, stirring, until wilted. Add the rice, raisins, turmeric, thyme, Tabasco, bay leaf, water, salt and pepper. Bring to a boil, stirring. Cover the pot tightly and simmer for 17 minutes.
  • Discard the thyme sprigs and bay leaf. Distribute the remaining butter through the rice. Keep the rice covered in a warm place until it is served.

A colorful, fragrant Indian-style rice. If desired, for presentation purposes, the rice can pressed into a lightly-oiled bowl, inverted and unmolded on to a decorative serving plate, and then garnished with fresh cilantro and slices of lime and tomato.

1 tablespoon vegetable oil
1 ½ cups basmati rice
1 (14 ounce) can coconut milk
1 ¼ (14 ounce) cans chicken stock
½ teaspoon ground cumin
½ teaspoon ground coriander
1 pinch crushed red pepper flakes
1 teaspoon salt
¼ teaspoon ground turmeric
1 bay leaf
½ cup raisins
¾ cup cashew halves

Steps:

  • Heat oil in a large pot over medium-high heat. Stir in rice, and cook for 2 minutes. Pour in the coconut milk, chicken stock, cumin, coriander, red pepper flakes, salt, turmeric, bay leaf, raisins, and cashew halves. Bring to a boil, then cover, and reduce heat to low. Cook until rice is tender, about 20 minutes.

1 1/2 cups chicken broth

1 drop thyme

Steps:

  • Melt 1 tbsp butter in saucepan, add onion and garlic, cook until softened.
  • Add rice and turmeric; stir to coat.
  • Add remaining ingredients,bring to boil, cover and simmer 17 minutes.
  • Stir in remaining butter, remove bay leaf, serve.

1 cup uncooked white rice
2 tablespoons raisins
1 ½ cups chicken broth
salt and pepper to taste
¼ cup sliced almonds

Steps:

  • Melt butter in a medium saucepan over medium heat. Saute onion, stirring, until tender. Stir in the rice, raisins, broth, salt and pepper. Bring to a boil.
  • Reduce heat to low, cover and simmer 15 to 20 minutes, or until rice is cooked and liquid is absorbed. Stir in almonds before serving.
