Did you know that authentic Turkish rice pilaf is supposed to be a bit sticky? Well, it is. So, for a nice change of pace, give this one a try. Posted for ZWT 6.

Number Of Ingredients 10

1/4 cup butter
1 cup diced green bell pepper
1 cup sliced mushrooms (about 4 oz.)
1 large tomatoes, cubed (about 1-1/4 cups)
1 cup uncooked long-grain rice or 1 cup uncooked whole grain rice
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon pepper
1 (10 1/2 ounce) can condensed chicken broth
3/4 cup water

Steps:

  • In a medium-sized saucepan, melt the butter over medium-high heat. Add the green pepper and mushrooms and saute for 5 minutes. Add the remaining ingredients, stirring until blended. Bring to a boil, then reduce the heat to low. Simmer, covered, for 30 minutes or until all the liquid has evaporated.

I've seen many varying dishes of rice in Turkey, all of them quite good, so this is just one of many. This variation has a good taste, but because the flavor isn't too bold it makes an easy side dish to most meals. Afiyet Olsun!

Number Of Ingredients 6

1 cup white rice
4 tablespoons brown rice or 4 tablespoons noodles
3 tablespoons oil
1 1/2 cups hot water
1 chicken bouillon cube
vegetable seasoning

Steps:

  • Over high heat, add oil and brown rice to pan.
  • Cook until rice is browned well (will look dark, almost burnt -- if using noodles, they will look slightly burnt).
  • Mix in water, white rice, and boulion cube (for easier mixing, break cube first).
  • Sprinkle a small amount of vegetable seasonsing over the mixture (amount depending on desired taste -- I would guess about 0.5 to 1 TBSP max). Stir.
  • Turn heat to medium and cover.
  • Occasionally stirring the rice, cook until tender (water will be gone before rice is done).

  • On low-medium heat, melt the butter in a medium saucepan and add the oil. Stir in the orzo and cook for 1 minute, till it changes colour (be careful not to let it burn).
  • Pour in the hot water or liquid, add salt and stir. Cover with a lid, bring to a boil, and simmer for 10 minutes.
  • Remove from heat, and keeping the lid on, allow to stand for 5 mins. Fluff with a fork and serve.
