This is an adaptation of a recipe on wikipedia! I am posting this to see the nutritional content of this candy.

2 cups sugar substitute
1/2 cup cornstarch
1 1/2 cups water
1/2 teaspoon cream of tartar
1 tablespoon vanilla extract
food coloring (optional)
1/2 cup chopped roasted pistachios (optional) or 1/2 cup almonds (optional)
granulated sugar or desiccated coconut, for dusting
1/2 teaspoon rose syrup
1/4 cup fruit juice
1 tablespoon vanilla extract
1 tablespoon orange extract
1 tablespoon creme de menthe

Steps:

  • Combine sugar, 1 c water, cream of tartar, and flavoring(s) in a small saucepan and bring to a boil.
  • In a separate bowl, combine cornstarch with remaining water, mix completely, and slowly stir into sugar mixture.
  • Boil over medium-low heat for 20-30 minutes, until the mixture reaches "Firm-ball stage," or 245ºF (120ºC) on a candy thermometer.
  • Apply non-stick cooking spray to a form (ice cube trays will do nicely), shallow pie pan, or jelly-roll pan.
  • Pour the hot mixture into the pan or form and allow to set.
  • When cool, release from form or cut into cubes as applicable and roll each piece in powdered sugar, granulated sugar, or coconut.
  • Store at room temperature in airtight container.
  • *with the exception of the sugar, cornstarch, water, cream of tartar, and cooking technique, this recipe may be altered according to taste and/or occasion.

2 cups granulated sugar
1 cup cold water
1.5 (1/4 ounce) envelopes unflavored gelatin
1 orange, juice of
1 lemon, juice of
red food coloring, to your liking
1/2 cup chopped nutmeats
powdered sugar (confectioners)

Steps:

  • Soak gelatin in one-half cupful of the cold water for ten minutes.
  • Place sugar and remaining cold water in a saucepan and bring to the boiling point, add soaked gelatin and the juices of the orange and lemon.
  • Boil to 240°F on a candy thermometer, or soft ball stage(spoon a drop of this mixture into a glass of cold water and it should form a soft putty ball).
  • Add nutmeats and red food coloring until desired color is achieved.
  • Remove from heat and beat until creamy.
  • Turn into a bread pan that is lightly greased and placed in cold water to the depth of one inch.
  • Let stand until firm, turn out onto board, and cut into cubes. Roll in powdered sugar.

3 envelopes unflavored gelatin
2 cups sugar
1/8 teaspoon salt
1 cup water (add some rose water to make up cup)
1 tablespoon lemons or 1 tablespoon orange juice
1 teaspoon lemons or 1 teaspoon orange rind, grated
food coloring
powdered sugar

Steps:

  • Mix gelatin, sugar and salt in a heavy pot.
  • Add water.
  • Bring to slow boil and simmer without stirring for 10 minutes.
  • Remove from heat and stir in juice and rind.
  • Add a few drops of food coloring.
  • Taste for flavor; may add more juice.
  • Pour into 8 inch square pan which has been rinsed in cold water but not dried.
  • Chill overnight.
  • Cut into squares and roll each in powdered sugar.
