Steps:
- Heat the oil and butter in a large, shallow ovenproof casserole dish. Add the onion and cook for 10 mins until really soft. Push the onion to one side of the dish and add the sausages, browning them all over (skip this step if you're using cooked leftovers).
- Remove the sausages from the dish and set aside to cool a little. Stir the mustard powder, flour and stock cube into the oil and butter for 1-2 mins, then add the white wine. Bubble for 1 min, scraping the bottom of the dish to release any tasty bits, then add the stock. Stir to make a smooth sauce, season and bubble for 5 mins. Heat oven to 200C/180C fan/gas 6.
- Cut the sausages and stuffing into bite-sized chunks, add to the sauce with the turkey, mustard, crème fraîche and parsley. When bubbling, remove from the heat. Crumble the potatoes in your hands over the top of the filling, so you have some larger and smaller chunks. Scatter with cheese and bake for 40 mins until the potatoes are crisp and the filling is bubbling around the edges.

Steps:
- Coat the entire turkey breast in about half of the BBQ Chip Dust. Place on a sheet pan fitted with a rack and let it dry brine in the fridge, uncovered, for 8 hours and up to overnight.
- Install an air fryer searing plate in an air fryer and set the temperature to 400 degrees F for 35 minutes for the plate to preheat.
- In a large bowl, toss the parsnips, sweet potatoes and baby potatoes with the avocado oil. Sprinkle with the remaining BBQ Chip Dust and toss until coated.
- Remove the searing plate and place the turkey breast skin-side down on one side. Arrange the vegetables on the other side. Cook until the turkey skin is golden brown, about 5 minutes (see Cook's Note). Flip the turkey breast and continue cooking until an instant-read thermometer inserted into the thickest part of the breast registers 165 degrees F and the root vegetables are tender, 35 to 40 minutes. Let the turkey rest for 10 minutes.
- Carefully remove the rib bone (if there is one) from the turkey breast and carve. Serve with the root vegetables.
- Combine the brown sugar, salt, chile powder, garlic powder, black pepper, onion powder and cayenne in a small bowl and mix until blended. Use immediately or transfer to an airtight resealable container.

- Preheat the oven to 375 degrees F. Use 1 tablespoon of the butter to grease a 9-by-13-inch baking dish. Set the dish on top of a sheet pan and set aside.
- In a large sauté pan over medium heat, heat 1 tablespoon of the olive oil until shimmering. Add the turkey and cook, breaking up any larger pieces, until almost fully browned, about 5 minutes.
- Add the remaining tablespoon olive oil to the pan along with the mushrooms. Cook until browned and their water has released, about 5 minutes. Season with 1/2 teaspoon salt and a pinch of pepper.
- Add the remaining 4 tablespoons butter to the pan and cook until melted and starting to bubble. Add the onions and cook until translucent and lightly browned, about 5 minutes.
- Return the turkey and mushrooms to the pan and stir to combine. (If your pan is too small, you can also pour the sauce into the prepared baking dish and stir in the turkey and mushrooms.)
- Bake until the pastry is puffed and golden brown, 40 to 50 minutes. Remove from the oven and let stand for 10 minutes before serving.
