Steps:
- Preheat oven to 350°. In a greased 8-in. square baking dish, layer stuffing, turkey, green onions and pepper. In a large bowl, whisk eggs, milk and mayonnaise until blended. Pour over layers., Bake, uncovered, 65-75 minutes or until a knife inserted in the center comes out clean. Let stand 10 minutes before serving.

TURKEY LEEK STRATA
You've got a great new strata to try! You know the routine--make it ahead and just pop it in the oven for a great brunch, lunch or even dinner dish.

Steps:
- In 1-quart saucepan, melt butter over medium heat. Cook leeks in butter about 3 minutes, stirring frequently, until softened; remove from heat.
- Mix bread cubes, leeks, turkey and dill weed. Spread bread mixture in ungreased square baking dish, 8x8x2 inches. Sprinkle with cheese. Mix remaining ingredients; pour over cheese. Cover tightly and refrigerate at least 4 hours but no longer than 24 hours.
- Heat oven to 325°F. Uncover and bake 50 to 55 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before cutting.

TURKEY STRATA
From the Turkey Store cookbook, this recipe uses Turkey Store Breakfast Sausage patties. I have also made this using turkey sausage links or turkey Italian sausage.

Steps:
- Spray 8 x 8" baking dish and large skillet with no-stick cooking spray. heat skillet over medium-high heat about 30 seconds. Add turkey breakfast sausage patties. Cook 12-15 minutes or until lightly browned and no longer pink in the center, turning occasionally. Drain on paper towel. Place in baking dish. Spread bread cubes over turkey. Sprinkle cheese over bread cubes.
- In large bowl combine milk, egg substitute, onions, parsley, mustard and pepper. Pour into baking dish. Cover. Refrigerate 8 hours or overnight.
- Heat oven to 325. Remove cover from baking dish. Bake 1 hour or until set.

- Heat oven to 325°F.
- Layer 3 cups bread cubes, 1 cup cheese, turkey, peppers and onions in 11x7-inch baking dish sprayed with cooking spray; top with remaining bread cubes.
- Whisk eggs, milk, dressing and mustard until blended; pour over bread. Top with remaining cheese; cover. Refrigerate at least 2 hours.
- Bake strata, uncovered, 45 min. or until knife inserted in center comes out clean. Let stand 10 min. before serving.
