Butternut Squash Noodle Soup with Turkey image

Using spiralized butternut squash as an alternative to pasta, this soup is loaded with fall flavors and gets its smoky spiciness from ground chipotle. The ideal soup to warm you up on cold winter days. Perfect for using up leftover turkey.

6 cups low-sodium chicken broth
3 ribs celery, chopped
½ white onion, chopped
1 teaspoon chopped garlic
¾ teaspoon Mexican oregano
¼ teaspoon ground chipotle chile pepper, or to taste
¾ butternut squash, peeled and cut into noodle shapes
2 cups diced cooked turkey
1 teaspoon chopped fresh cilantro, or more to taste

Steps:

  • Combine chicken broth, celery, onion, garlic, Mexican oregano, and ground chipotle in a large pot; bring to a boil. Cover and reduce heat; simmer until vegetables are softened, about 20 minutes.
  • Stir butternut squash and turkey into the broth mixture; simmer until turkey is heated through, 3 to 5 minutes. Garnish with cilantro.

2 medium stalks celery, coarsely chopped (1 cup)
1 medium onion, coarsely chopped (1/2 cup)
1 teaspoon dried sage leaves
6 cups Progresso™ chicken broth (from two 32-oz cartons)
2 1/2 cups chopped deli rotisserie chicken (from 2- to 2 1/2-lb chicken)
1 1/2 cups uncooked tricolor rotini pasta (about 5 oz)
1 1/2 cups 3/4-inch cubes peeled butternut squash
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In 4 1/2- to 5-quart Dutch oven, heat oil over medium-high heat. Cook celery, onion and sage in oil 5 to 6 minutes, stirring frequently, until onion is softened.
  • Stir in remaining ingredients. Heat to boiling; reduce heat to medium. Cover; cook 12 to 15 minutes, stirring occasionally, until pasta and squash are tender.

1 large onion, chopped (1 cup)
2 cloves garlic, finely chopped
1 teaspoon finely chopped gingerroot
1 container (8 oz) refrigerated prechopped tricolor bell pepper mix
2 tablespoons red curry paste
3 cups cubed (1/2 inch) seeded peeled butternut squash
1/2 teaspoon salt
1/4 teaspoon ground red pepper (cayenne)
3 cups Progresso™ chicken broth (from 32-oz carton)
1 can (13.5 oz) coconut milk (not cream of coconut)
2 cups shredded cooked turkey

Steps:

  • In 4-quart Dutch oven, heat oil over medium-high heat. Add onion, garlic, gingerroot and bell peppers; cook 5 to 6 minutes, stirring frequently, until onion is crisp-tender. Add curry paste; cook 1 minute. Stir in squash; cook 3 to 4 minutes or just until squash begins to brown.
  • Add salt, red pepper, broth, coconut milk and turkey. Heat to boiling; reduce heat. Simmer uncovered 20 minutes or until squash is tender and soup is slightly thickened.

This quick soup has such a great flavor that everyone I've shared it with has added the recipe to her list of favorites. It also simmers up well in a slow cooker.

1 cup uncooked small pasta shells
1 pound lean ground turkey
2 medium onions, chopped
2 garlic cloves, minced
3 cans (14-1/2 ounces each) reduced-sodium chicken broth
2 cans (15 ounces each) cannellini beans, rinsed and drained
2 cans (14-1/2 ounces each) Italian stewed tomatoes
2 teaspoons dried oregano
2 teaspoons dried basil
1 teaspoon fennel seed, crushed
1 teaspoon pepper
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large stock pot, cook turkey, onions over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in the broth, beans, tomatoes and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. , Drain pasta and add to the soup. Cook 5 minutes longer or until heated through.

I discovered this recipe back in the winter but my family likes it so much I make it even during the hot weather. Adapted from Betty Crocker.

1 tablespoon olive oil
2 stalks celery, coarsely chopped
1/2 cup coarsely chopped onion
1 teaspoon dried sage
6 cups chicken broth or 6 cups chicken stock (homemade stock is better but canned broth will do)
3 cups chopped cooked turkey (1/2 inch pieces)
1 1/2 cups uncooked tri-color spiral pasta
1 1/2 cups peeled chopped butternut squash (3/4 inch cubes)
1/4 teaspoon salt (or to taste)
1/4 teaspoon pepper (or to taste)

Steps:

  • In a 5-quart soup pot, heat the oil over medium-high heat.
  • Saute celery, onion, and dried sage for 5-6 minutes, stirring often.
  • Add the remaining ingredients; bring to a boil.
  • Lower the heat to medium, cover and cook 12-15 minutes (stir every so often), until the noodles and squash are tender.
  • Adjust seasoning to taste.
