SPICED LILLET SPRITZ



Spiced Lillet Spritz image

Lillet is an infused wine aperitif available in white, rose and red - each with slightly different flavor notes. While delicious on its own, this cocktail adds a warming spiced syrup and fresh blood orange juice to make it feel extra cozy for the holidays and pick up on the berry and spice flavors in Lillet Rouge.

Number Of Ingredients 8

3/4 cup sugar
8 whole cloves
1 cinnamon stick, broken in half
6 strips blood orange zest
1/2 cup chilled Lillet Rouge
1 tablespoon blood orange juice
1/3 to 1/2 cup cold seltzer
Blood orange slice, for garnish

Steps:

  • Make the spiced syrup: Combine 1 1/2 cups water, the sugar, cloves, cinnamon stick and blood orange zest in a small saucepan. Bring to a simmer over medium-high heat, stirring to dissolve the sugar; simmer until syrupy and reduced to 1 cup, about 15 minutes. Let cool, then strain.
  • Make the cocktail: Combine the Lillet, blood orange juice and 1 tablespoon of the spiced syrup in a large glass and stir. Add ice and top with seltzer. Garnish with a blood orange slice.

Steps:

  • Combine Suze, club soda, and orange juice in an ice-filled rocks glass. Stir gently to combine. Top with Champagne; garnish with an orange wheel and a sage sprig.

6 ounces chilled hard apple cider, preferably semi-dry
2 ounces cognac
1 (3 x 1/2-inch) strip orange zest

Steps:

  • Pour apple cider and cognac into a Collins glass filled with ice.
  • Light a match, let it burn 2 seconds to get rid of excess sulfur, and hold it 3" over cocktail and 1" away from peel; the outside of the peel should face down, over the drink. Squeeze peel to release oils into drink.
  • Rub flamed peel around rim of glass, then place peel in glass.

1/4 recipe Basic Sugar-Cookie Dough
1 tablespoon finely grated orange zest
2 ounces bittersweet chocolate, finely chopped

Steps:

  • Preheat oven to 350 degrees, with racks onupper and lower thirds. On a piece ofparchment paper, pat out dough to 1/2inch thick. Sprinkle zest evenly over top;knead to incorporate.Transfer to a cookiepress; pipe shapes, about 1 inch apart,onto ungreased baking sheets.
  • Bake cookies in upper and lower thirdsof oven, switching positions of sheetshalfway through, until edges are lightgolden, about 15 minutes. Transfer towire racks to cool completely.
  • Set a small heatproof bowl over a panof simmering water; add half the chocolateto bowl, and stir until melted andsmooth. Add the remaining chocolate;remove bowl from heat. Stir until smooth.Transfer chocolate to a pastry bag fittedwith a very small (less than 1/16 inch) plainround tip, such as Wilton #1.
  • Transfer cookies to a sheet of parchmentpaper. Pipe chocolate in a zigzagpattern over tops. Let stand until chocolatehas set.

1 c butter, softened
1 c sugar, granulated
1 egg yolk
2 Tbsp orange juice
2 1/4 c all purpose flour
1 Tbsp orange zest
1/4 c pecans, finely chopped (optional)

Steps:

  • 1. Preheat oven to 350°F.
  • 2. In mixer bowl, cream butter and sugar. Beat in egg and orange juice.
  • 3. Mix in flour, orange rind and optional pecans.
  • 4. Mix just until combined. Dough should be soft but not sticky.
  • 5. Shape dough into small logs and place in Cookie Press.
  • 6. Using desired disk, press shapes onto ungreased cookie sheet.
  • 7. Bake 10-12 minutes or until edges are lightly browned.
  • 8. Cool 2 minutes on cookie sheet on rack.
  • 9. Remove from cookie sheet and cool completely on rack.

1 cup water
1/2 cup sugar
2 teaspoons orange juice
2 teaspoons grated orange zest

1/2 cup ground nuts
DOUGH:
1 cup butter, softened
1 cup sugar
1/2 cup packed brown sugar
3 large eggs, room temperature
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
Confectioners' sugar, optional

Steps:

  • In a small saucepan, combine the first 5 ingredients; bring to a boil, stirring constantly. Reduce heat; cook and stir for 8 minutes or until thickened. Cool completely. Stir in the cherries, coconut and nuts; set aside., In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in eggs and extracts. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well., Using a cookie press fitted with a bar disk, press a 12-in.-long strip of dough onto an ungreased baking sheet. Spread fruit filling over dough. Press another strip over filling. Cut into 1-in. pieces (there is no need to separate the pieces). Repeat with remaining dough and filling., Bake at 375° for 12-15 minutes or until edges are golden. Recut into pieces if necessary. Remove to wire racks to cool. Dust with confectioners' sugar if desired.

1/2 cup granulated sugar
1/2 cup water
2 teaspoons lightly crushed whole cardamom pods
2-inch strip orange zest, removed with a vegetable peeler
For the cocktail:
1 750-ml bottle prosecco, chilled
Cardamom syrup (recipe follows)
Angostura bitters
Orange twists, for serving
