POTATO CAKES WITH FRIED EGGS AND TURKEY-RED PEPPER HASH



Potato Cakes with Fried Eggs and Turkey-Red Pepper Hash image

Fuel up your houseguests for some serious holiday shopping with this hearty breakfast recipe. The potato cakes can be flavored with just about any herbs left in the fridge; leftover turkey and gravy can be transformed into this delicious hash by adding those last few spoonfuls of corn, peas, or even chopped Brussels sprouts.

1 cup leftover mashed potatoes, at room temperature
1 large egg, plus 4 for frying
1/4 cup milk
1/3 cup all-purpose flour
1/2 teaspoon finely chopped sage
Coarse salt and freshly ground black pepper, to taste
5 teaspoons extra-virgin olive oil
1/2 small onion, chopped
1 clove garlic, finely chopped
1 small red bell pepper, stemmed, seeded, and chopped
8 ounces diced leftover turkey meat, about 2 cups
1/2 cup leftover turkey gravy
1/4 cup leftover cooked corn kernels
1 teaspoon chopped fresh parsley

Steps:

  • Preheat the oven to 200 degrees F.
  • In a bowl, mix the potatoes, egg, and milk together until combined. Add the flour, season with salt and pepper, and mix until smooth. Heat 2 teaspoons oil on a non-stick griddle over medium heat; pour about 1/3 cup of the batter onto the warm griddle, gently spread it to a circle about 4" wide, and cook, flipping once, until golden brown, 3-4 minutes per side. Transfer to the oven to keep warm. Repeat with remaining batter.
  • Heat 1 tablespoon of oil in a small skillet over medium-low heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the red pepper and cook until softened, about 4 minutes more. Add the turkey, gravy, and corn and cook, stirring, until turkey is heated through. Season hash with salt and pepper, stir in the parsley, and keep warm over low heat.
  • Heat the remaining teaspoon of oil on the griddle over medium-high heat. Crack the eggs onto the griddle and cook until desired doneness. To serve, put a warm potato cake on each of 4 plates; top the cakes with a fried egg and divide the hash evenly among them.

FULL ENGLISH POTATO CAKE

Take time to start the day in style with a special breakfast of giant hash browns with bacon, eggs and tomato

1 ½kg potato , diced into 1cm chunks
4 tbsp olive oil , plus extra for drizzling
6 spring onions , finely chopped
2 thyme sprigs, leaves stripped, plus 1 sprig left whole
25g butter , melted, plus extra for greasing
12 rashers streaky bacon
3 large plum tomatoes , halved
cracked black pepper
6 medium eggs
buttered toast , to serve
brown and tomato sauce, tea and orange juice , to serve (optional)

Steps:

  • Bring a big saucepan of salted water to the boil. Tip in the potatoes and simmer until almost tender, about 20 mins. Drain really well and steam dry for a few mins. Return to the pan and toss with 2 tbsp of the oil, the spring onions, thyme leaves and lots of seasoning.
  • Grease your largest baking tray with some melted butter and press the potatoes into it. Put a baking sheet on top and gently press down to squash the spuds into a cake. Cover and chill until ready for breakfast.
  • Heat oven to 220C/200C fan/gas 7. Drizzle the melted butter and remaining oil over the potato cake and bake for 30 mins until golden.
  • Add the bacon in a few piles and bake for another 15 mins. Dot over the tomato halves and the remaining thyme sprig, sprinkle with plenty of pepper, then crack the eggs among the gaps and bake for 5-8 mins, depending how you like your eggs.
  • To serve, cut the potato cake into portions and pile onto 6 plates, along with the eggs, bacon, tomatoes and some buttered toast. Serve with brown and tomato sauce, tea and orange juice, if you like.

Water, milk and butter called for on potato mix pouch
2 cups chopped cooked turkey
1 bag (12 oz) frozen mixed vegetables, thawed
1 jar (12 oz) home-style turkey gravy
1/4 teaspoon poultry seasoning

Steps:

  • Heat oven to 350°F. Spray 2-quart casserole with cooking spray; set aside. Make mashed potatoes as directed on pouch using water, milk and butter.
  • In 2-quart saucepan, heat turkey, vegetables, gravy and poultry seasoning to boiling over medium-high heat, stirring occasionally. Pour turkey mixture into casserole. Spoon or pipe potatoes around edge of casserole.
  • Bake uncovered 35 to 40 minutes or until mixture bubbles around edge of casserole.

Throwing together leftover turkey and mashed potatoes after Thanksgiving turned out to be one of my best kitchen creations!

3 tablespoons butter
¼ medium white onion, chopped
5 medium carrots, finely chopped
3 stalks celery, finely chopped
salt and ground black pepper to taste
2 cups leftover shredded turkey
2 cups leftover mashed potatoes
1 cup heavy cream
1 cup leftover turkey gravy
5 medium (blank)s biscuits

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt butter in a large saucepan over medium heat. Add onion and cook until translucent, 5 to 7 minutes. Add carrots and celery; saute until carrots are just beginning to soften, about 3 minutes. Season with salt and pepper.
  • Lower heat and add turkey; cook and stir for 5 minutes. Add mashed potatoes, cream, and gravy; cook and stir until heated through, about 5 minutes. Pour into a 9-inch pie dish and top with biscuits.
  • Bake in the preheated oven until golden brown, about 10 minutes. Remove from the oven and let stand for 5 to 10 minutes before serving.

3 eggs
3 cups potatoes, shredded and peeled
1 1/2 cups finely chopped cooked turkey
1/4 cup sliced green onion (optional)
2 tablespoons all-purpose flour
1 1/2 teaspoons salt
vegetable oil

Steps:

  • Beat eggs.
  • Stir in potatoes, turkey, onions, flour and salt.
  • Mix well.
  • Heat about 1/4 inch of oil in a large skillet.
  • Measure mixture by 1/3 cupfuls and put in hot oil.
  • Flatten a bit (carefully!).
  • Fry approximately 5 minutes on each side until potatoes are tender and cakes are golden brown on both sides.

2 tablespoons butter
2 cups small diced onions
1 cup small diced celery
1 cup small diced carrot
salt
fresh ground black pepper
1/4 cup plus 2 tablespoons flour
1 tablespoon chopped garlic
1 cup assorted left-over cooked vegetables, like corn, green beans and peas
4 cups beef stock or 4 cups turkey stock
4 cups shredded left-over turkey meat
2 cups left-over mashed potatoes
1 egg
1/4-1/2 cup milk
2 tablespoons olive oil
1 tablespoon finely chopped fresh parsley leaves

Steps:

  • In a large saute pan, over medium heat, melt the butter. Add the onions, celery and carrots. Season with salt and pepper. Saute for 4 to 6 minutes. Dust the vegetables with 2 tablespoons of the flour. Continue to cook for 2 minutes. Stir in the garlic and left-over vegetables. Season with salt and pepper. Stir in the stock. Add the turkey meat. Bring the liquid to a boil, reduce the heat to medium-low and simmer for 25 to 30 minutes. Remove from the heat. In a mixing bowl, combine the left-over potatoes, egg and flour. Add enough milk to make a thick batter. Season with salt and pepper. In another large saute pan, heat 1 tablespoon of the oil. When the oil is hot, drop the batter, 2 heaping tablespoons at a time, into the pan. Cook the cakes in batches. Cook until the cakes are golden on both sides. Repeat until all of the oil and batter is used. Drain the cakes on paper towels. Sprinkle with Essence. To serve, place two cakes in the center of each serving plate. Spoon the stew over the cakes. Garnish with parsley.
