TURKEY SOUP
My daughter got this recipe from her husband's mother. As in many households, our turkey gets picked over for a few days after the holidays. This soup is especially good on cold winter nights when it's snowing...which happens a lot where I live! -Carol Brethauer, Denver, Colorado

- In a stockpot, place turkey carcass, water and broth. Bring to a boil. Reduce heat; cover and simmer 4-5 hours. , Remove carcass from stock. Remove any meat; dice. Return to stock along with rice, onion, celery, carrots, bay leaf and poultry seasoning. Add remaining seasonings to taste. Cover; simmer over medium-low heat until rice is cooked. Discard bay leaf.

TURKEY POTPIES
With its golden brown crust and scrumptious filling, these comforting turkey potpies will warm you down to your toes. Because it makes two, you can eat one now and freeze the other for later. They bake and cut beautifully. -Laurie Jensen, Cadillac, Michigan

- Preheat oven to 375°. In a Dutch oven, saute potatoes, carrots, onion and celery in butter and oil until tender. Stir in flour until blended; gradually add broth. Bring to a boil; cook and stir 2 minutes or until thickened. Stir in turkey, peas, 1/2 cup cream, parsley, garlic salt and pepper. , Spoon into two ungreased 9-in. pie plates. Unroll crusts; place over filling. Trim crusts and seal to edge of pie plates. Cut out a decorative center or cut slits in crusts. In a small bowl, whisk egg and remaining 1 tablespoon cream; brush over crusts., Bake until golden brown, 40-45 minutes. Let stand 10 minutes before cutting. Freeze option: Cover and freeze unbaked potpies up to 3 months. To use, remove from freezer 30 minutes before baking (do not thaw). Preheat oven to 425°. Place pie on a baking sheet; cover edge loosely with foil. Bake 30 minutes. Reduce oven setting to 350°; remove foil. Bake until golden brown and a thermometer inserted in center reads 165°, 55-60 minutes longer.

TURKEY POOP
This is a little late for Thanksgiving this year but it will be something fun to do next year. You can also do this for Christmas dinner if you are having turkey!! People young and old will get a kick out of it. I found the poem on the internet and made the project on my "Printmaster Platinum 16 printing program. I used the Business Card format that has 8 business cards per sheet of paper. If you want to use a larger font, you can use the label format using the shipping labels that has 4 labels per sheet of paper. If you have Printmaster and would like to use my template, please feel free to ISO me or email me and I will be more than happy to send it to you via email. This is a recipe for one "serving" Multiply it by however many of these you want to make. Preparation time is approximate depending on how long it takes you to make the project on your print program and to print them out. Cook time is the time it takes to make each bag and is also approximate.

- This poem printed on paper: You invited me to Thanksgiving dinner, With your family and your friends(period) You didn't tell me I was the main dish, for me it was "THE END" (exclamation mark) You frightened me so badly--I knew I had been duped (exclamation mark) So, I left you with my calling card, this bag of turkey poop!
- Place the 10 malted milk balls (or whatever you are using) in the sandwich bag.
- Place the printed poem inside the sandwich hag so that it is in front of the malted milk balls (or whatever you use).
- Staple if necessary.
- Place at each table setting at dinner on Thanksgiving or Christmas day!
- Now watch the smiles on peoples faces and hear the laughter as well as ughs!
- Have a Happy Thanksgiving or Merry Christmas!

- Place the turkey carcass in a stockpot; add the water, onion, salt and bay leaves. Slowly bring to a boil over low heat; cover and simmer for 2 hours., Remove carcass; cool. Strain broth and skim fat. Discard onion and bay leaves. Return broth to the pan. Add the carrots, rice, celery and chopped onion; cover and simmer until rice and vegetables are tender. , Remove turkey from bones; discard bones and cut turkey into bite-size pieces. Add turkey and cream soup to broth; heat through.
