TURKEY PESTO TOASTER "QUESADILLA" RECIPE BY TASTY
Here's what you need: large flour tortilla, pesto, mozzarella string cheese, roasted red pepper, deli turkey

Steps:
- Spread the pesto evenly over the tortilla with a butter knife.
- Peel the mozzarella string cheese into strips. Place the cheese and roasted red peppers over the top half of the tortilla. Top with the turkey.
- Fold the tortilla in half from the bottom, then fold in the sides, being careful not to tear the tortilla.
- Toast on medium-high, until golden brown. Watch to make sure it doesn't burn. Let cool for 1-2 minutes before removing from the toaster.
- Enjoy!

Once you get the hang of folding them, they are a breeze to put together and something the kids can make too. Serve with sour cream and salsa.

Steps:
- Lay tortillas flat on a clean work surface. Spread refried beans down the middle third from top to bottom, leaving a 1-inch space halfway down to allow for a fold. Sprinkle cheese on top, lightly pressing into the beans.
- Fold the left side over the beans, then the right side on top, so the two sides are overlapping in the middle. Fold in half vertically so the bottom edge meets the top edge.
- Place the quesadillas into the toaster slots and set the toaster to medium heat. Toast for 1 cycle. Carefully remove quesadillas and reverse the vertical fold, so that the inside is now the outside. Return to the toaster and toast until lightly browned, about half a toasting cycle.
- Carefully remove the hot quesadillas to a plate. Cut in half at the fold to make 4 pieces.

- Lay tortillas on a clean work surface. Spread 1 tablespoon of pesto over each tortilla, leaving a small space around the entire edge. Peel the cheese back in thin layers and divide between the two tortillas in a single layer. Place 1 slice of turkey over the cheese on each tortilla.
- Fold each tortilla in half, creating a half moon shape. Press down to flatten. Take the right half and fold it over to the middle. Take the left half and fold it over to the middle, creating an envelope shape. Press down to flatten again.
- Place quesadillas in the slots of the toaster. Set toaster to medium heat and toast for one cycle, about 3 minutes. Carefully remove quesadillas and flip them around. Toast for 2 minutes more.

- Heat a large griddle or skillet over medium-high heat. Place two slices of sourdough, side by side on a cutting board. On both slices of sourdough, spread 2 tbsp of pesto evenly.
- On one slice, top with 2 slices of Lilydale® Oven Roasted Carved Turkey Breast, followed by 2 slices of Lilydale® Turkey Bacon, 3 slices of provolone cheese, and 3 sundried tomatoes. Place the second slice of sourdough on top.
- Smear the top of the sandwich with 1 tablespoon of butter, and then place that side of the sandwich down on the large griddle or skillet. Smear the remaining tablespoon of butter over the top. Toast the sandwich in the pan until golden brown and the cheese begins to melt, about 4-5 minutes per side. Place a lid on top of the pan while cooking to speed up the cheese melting. Enjoy immediately!
