There are two things that make for a great Thanksgiving leftovers recipe. The first one is, it shouldn't remind you of the original meal. Plus, and just as important, it should be super easy and simple to make. Not only does this turkey chili mac satisfy those two requirements, it also happens to be incredibly delicious and pretty nice to look at. Garnish with grated cheese, onions, sour cream, and cilantro if desired.

2 tablespoons olive oil
1 medium yellow onion, diced
1 teaspoon salt, or more to taste
2 tablespoons chili powder, or to taste
½ teaspoon ground dried chipotle pepper, or more to taste
1 teaspoon ground black pepper
1 teaspoon ground cumin
1 teaspoon unsweetened cocoa powder
1 pinch ground cinnamon
½ teaspoon dried oregano
3 cloves garlic, minced
4 cups chicken broth, or more as needed
1 (10 ounce) can diced tomatoes with green chile peppers
1 cup tomato sauce
1 pound coarsely chopped leftover turkey
1 (15 ounce) can pinto beans, rinsed and drained
1 cup elbow macaroni
½ cup grated white Cheddar cheese

Steps:

  • Heat olive oil in a pot over medium-high heat. Add onion and 1 teaspoon salt; cook, stirring, until it starts to soften and turns translucent, about 5 minutes.
  • While onion cooks, make the spice mixture by combining chili powder, chipotle pepper, cumin, black pepper, cocoa, cinnamon, and oregano in a small bowl.
  • Add garlic and the spice mixture to the onion and cook, stirring, 1 to 2 minutes.
  • Stir in 4 cups chicken broth, diced tomatoes with chiles, and tomato sauce. Raise the heat to high and bring to a simmer. Reduce the heat to medium-low and simmer, stirring occasionally, for 15 minutes.
  • Add the leftover turkey meat along with additional chicken broth if needed, and cook, stirring occasionally, for another 15 minutes.
  • Taste for salt and other seasonings and adjust as needed. Raise the heat to high and bring to a boil. Stir in pinto beans and elbow macaroni and cover tightly with a lid. Cook, covered, until the pasta is just barely tender, about 5 minutes.
  • Turn off the heat, remove the lid, and stir very well. Cover back up and let sit with the heat off for 5 minutes. Uncover, stir in Cheddar cheese, and serve immediately.

1 package (20 ounces) lean ground turkey
3 celery ribs with leaves, chopped
1 large green pepper, chopped
1 large onion, chopped
2 garlic cloves, minced
1 can (46 ounces) tomato juice
1 can (11-1/2 ounces) V8 juice
2 cans (8 ounces each) tomato sauce
2 tablespoons brown sugar
2 tablespoons chili powder
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/4 teaspoon pepper
1 bay leaf
1 cup uncooked elbow macaroni
2 cans (16 ounces each) kidney beans, rinsed and drained
Optional toppings: sour cream, shredded cheddar cheese, thinly sliced green onions and ripe olives

Steps:

  • In a Dutch oven, cook the turkey, celery, green pepper, onion and garlic over medium heat until meat is no longer pink. Add the juices, tomato sauce, brown sugar, seasonings and bay leaf. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes., Meanwhile, cook macaroni according to package directions; drain. Add beans and macaroni to turkey mixture; heat through. Discard bay leaf before serving. Garnish servings with toppings of your choice.

A co-worker of mine use to bring this to lunch and it smelled so good. I finally asked her for the recipe and I have been making it ever since. It is healthy and addictive to boot!

Number Of Ingredients 12

1 (8 ounce) package elbow macaroni
1 lb fresh ground turkey
1/2 cup chopped onion
1/4 cup chopped green pepper
1 clove minced garlic
1 (12 ounce) can condensed tomato soup
1 can water
1 (8 ounce) can tomato sauce
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon salt
1 (15 ounce) can red kidney beans

Steps:

  • Cook macaroni according to package directions, drain and set aside.
  • Place ground turkey in a large pot and cook over medium heat 15 minutes or until turkey is browned, stirring to crumble.
  • Add onions, green peppers, and garlic.
  • Cook 5 minutes or until vegetables are tender.
  • Stir in next 5 ingredients.
  • Cover and simmer 20 minutes, stirring occasionally.
  • Add kidney beans and macaroni.
  • Simmer 5 minutes, stirring occasionally, until macaroni and beans are mixed through and warm.

1 lb ground turkey
1 teaspoon chili powder
7 ounces uncooked macaroni noodles
2 teaspoons oil
2 1/2 cups fat free chicken broth
1 (15 ounce) can tomato sauce
2 tablespoons white vinegar
1 teaspoon garlic salt
6 tablespoons parmesan cheese
1 1/2 tablespoons parsley

Steps:

  • Saute turkey, drain and save juices.
  • Return to pan and add chicken broth. Bring to a boil.
  • Add macaroni and simmer for 10 minutes, stir often until broth is almost absorbed. Stir in all remaining ingredients. Except 2 tablespoons of cheese and parsley.
  • Simmer 10 minutes.
  • Transfer to casserole dish if desired and sprinkle cheese and parsley on top.

  • Stir broth into juices.
  • Heat to boiling.
  • Stir in macaroni; reduce heat.
  • Simmer, stirring frequently, until broth is almost absorbed, about 10 minutes.
  • Stir in turkey mixture and remaining ingredients except 2 tablespoons of cheese.
  • Cook over low heat 10 mins.
  • Salt and pepper to taste.
  • Sprinkle rest of cheese on and serve.

2 cups macaroni noodles
1/4 cup butter
1 1/2 cups celery, finely chopped
1/2 cup chopped onion
1/2 cup chopped green pepper (optional)
2 (10 ounce) cans cream of chicken soup
2/3 cup milk
2 cups cheddar cheese, shredded
1 1/2-2 cups turkey, cooked and chopped
1/2 teaspoon salt
2 cups crushed plain potato chips

Steps:

  • Cook macaroni according to package directions, drain. Meanwhile, in a medium, saucepan melt butter over med-low heat. Add celery and onion, cook until tender. Blend in soup, milk and cheese. Cook until the cheese is melted. Combine cheese with macaroni, turkey, and salt. Spray 3 q casserole dish with non-stick spray. Transfer to baking dish and top with crushed potato chips. Bake 350 for 30 min or until hot and bubbly and the chips are toasted.
