SLOW COOKER TURKEY LEGS

This makes a yummy mini-Thanksgiving, which my girls and husband love! I serve this with jellied cranberry sauce, quick stuffing, and gravy.

6 turkey legs
3 teaspoons poultry seasoning, divided
salt and ground black pepper to taste
6 12x16-inch squares of aluminum foil

Steps:

  • Wash the turkey legs, and shake off excess moisture. Sprinkle each turkey leg with about 1/2 teaspoon of poultry seasoning, salt, and black pepper to taste. Wrap the leg tightly in aluminum foil. Repeat with remaining legs.
  • Place the wrapped turkey legs into a slow cooker with no liquids or other ingredients. Set the cooker to Low, and cook until the meat is very tender, 7 to 8 hours.

The grocery here often has fresh turkey legs and they're very inexpensive. I make this recipe using 4 or 6, however many happen to be in the package. I then take the meat off the bone and use it in recipes that call for cooked chicken or turkey.

4 -6 turkey legs
1 (1 1/4 ounce) envelope dry onion soup mix
1/4 cup water

Steps:

  • Place turkey legs in Crock pot. Sprinkle with onion soup mix. Add 1/4 cup water.
  • Cook on low 9-10 hours until done.
  • Juice can be thickened with flour or cornstarch for gravy.

3 medium potatoes, quartered
2 cups fresh baby carrots
2 celery ribs, cut into 2-1/2-inch pieces
1 medium onion, peeled and quartered
3 garlic cloves, peeled and quartered
1/2 cup chicken broth
3 turkey drumsticks (12 ounces each), skin removed
2 teaspoons seasoned salt
1 teaspoon dried thyme
1 teaspoon dried parsley flakes
1/4 teaspoon pepper
Chopped fresh parsley, optional

Steps:

  • In a greased 5-qt. slow cooker, combine the first six ingredients. Place drumsticks over vegetables. Sprinkle with the seasoned salt, thyme, parsley and pepper. Cover and cook on low for 5 to 5-1/2 hours or until turkey is tender. If desired, top with chopped fresh parsley just before serving.

1 (10 ounce) can enchilada sauce
1 (4 ounce) can chopped green chilies, drained
1 teaspoon dried oregano
1/2 teaspoon garlic salt
1/2 teaspoon ground cumin
6 turkey drumsticks
3 tablespoons cornstarch
3 tablespoons cold water

Steps:

  • In a bowl, combine the enchilada sauce, chilies, oregano, garlic salt and cumin.
  • Place the drumsticks in crock pot and top with sauce.
  • Cover and cook on low for 8-10 hours or until a meat thermometer reads 180°.
  • Remove turkey and keep warm.
  • Strain sauce into a saucepan.
  • Combine cornstarch and water until smooth and stir into the pan.
  • Bring to a boil and cook and stir for 2 minutes or until thickened.
  • Serve with turkey.

4 -6 big turkey drumsticks
1 large onion, chopped
1 (14 ounce) can chicken broth
1/2 teaspoon salt
1/2 teaspoon pepper, freshly ground
1 teaspoon dried sage
1 teaspoon dried thyme
strained stock, from above
1/2-1 cup turkey meat
1 large onion, chopped
1 cup frozen peas
1 cup frozen carrot
1 (14 ounce) can creamed corn
1 (28 ounce) can diced tomatoes
1/2 cup dry white wine
1 teaspoon Tabasco sauce (pepper sauce)
1/4 teaspoon salt

Steps:

  • Remove the skin and all visible fat from the drumsticks, place in crock pot.
  • Add the can of chicken broth, onion, salt, pepper, sage and thyme.
  • Cook on low for about 8 to 10 hours depending on your crock pot, until meat is falling off the bone.
  • Strain ; pick out the bones and discard, Add larger pieces of meat to a plastic freezer bag, seal and freeze. (For use in salads or sandwich spreads.) Add smaller pieces of meat to the strained stock. Add to the stock: the onion, peas, carrots, cream corn, diced tomatoes, wine and tabasco sauce. Taste and adjust seasoning with the salt and more pepper if desired. Bring to boil and simmer for 30 minutes.
