SIMPLE MACARONI AND CHEESE
A very quick and easy fix to a tasty side-dish. Fancy, designer mac and cheese often costs forty or fifty dollars to prepare when you have so many exotic and expensive cheeses, but they aren't always the best tasting. This recipe is cheap and tasty.

Steps:
- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain.
- Melt butter in a saucepan over medium heat; stir in flour, salt, and pepper until smooth, about 5 minutes. Slowly pour milk into butter-flour mixture while continuously stirring until mixture is smooth and bubbling, about 5 minutes. Add Cheddar cheese to milk mixture and stir until cheese is melted, 2 to 4 minutes.
- Fold macaroni into cheese sauce until coated.

MACARONI AND CHEESE
This is my mother's Mac & Cheese recipe, she never wrote it down, just showed us how to make it. It's not your typical mac & cheese made with a sauce. The addition of onions is what makes it so good! Enjoy!

Steps:
- 1. Bring a large pot of salted water to a boil.
- 2. Add diced onion to the pot while the macaroni is cooking.
- 3. Cook macaroni for 1 minute less than package directions, then drain.
- 4. In a buttered 9x13 pan, start with a layer of macaroni (just enough to cover the bottom of the pan) and top with a layer of cheese.
- 5. Repeat 2 more layers, ending with a heavy layer of cheese.
- 6. Pour milk over top of casserole, milk should come about half way up the casserole.
- 7. Bake at 350° for 45-60 minutes, until top is golden brown and milk is absorbed.
BAKED MEXICAN MACARONI AND CHEESE

Steps:
- Heat oven to 375°F. Cook and drain pasta as directed on package; set aside.
- In 3-quart saucepan, melt butter over medium heat. Add onion, mustard, salt, pepper and garlic; cook 5 to 7 minutes, stirring occasionally, until onion is tender. Stir in flour. Cook over medium-low heat, stirring constantly, until mixture is bubbly. Remove from heat.
- Stir in yogurt, stirring constantly. Gently stir in cheeses; stir in pasta. Pour into ungreased 2-quart casserole. Sprinkle with bread crumbs.
- Bake uncovered about 25 minutes or until bubbly.

- In 2 quart sauce pan melt butter add flour cook stirring til starts to look like cornmeal.
- Add hot half& half, add seasonings, stirring quickly with whisk.
- Add cheese stirring til cheese melts.
- Mix with macaroni in 2qt. casserole.
- Toss bread crumbs with melted butter, sprinkle over top.
- Bake 350F for 30 minutes.
BAKED MACARONI AND CHEESE
A wonderful comfort food. You can add chopped ham and peas, too! Cut down on the cooking time by using a can of evaporated milk for the milk.

- Preheat oven to 350 degrees. Rinse cooked macaroni with cold water and place in a 3 quart baking dish or 13x9 inch pan.
- In a saucepan, melt butter and stir in flour. Gradually stir in milk and then add sour cream. Add salt and pepper. Cook over medium heat until sauce bubbles and thickens.
- Reserve 1 cup of cheddar cheese and add the rest to the sauce, stir into the sauce until melted.
- Pour sauce over macaroni and mix thoroughly. Sprinkle with remaining cheese. (You could also sprinkle on a little parmesan cheese if you like.)
- Bake 1 hour, until bubbly and browned.
OLD FASHIONED MACARONI AND CHEESE
This recipe was handed down by my great-grandmother, Mary Shuler Baker. She was much loved- and so is this recipe! Yummy goodness that your whole family will love.

- Preheat oven to 350 degrees. Grease a 9x13 cooking dish lightly with butter or cooking spray. Mix together milk and eggs.
- Place 1/2 of cooked macaroni in the prepared dish.
- Top mac with approx. 1/3 of cheese.
- Pour 1/2 of egg mixture over cheese. Repeat steps 2 & 3 to make a second layer.
- Top with remaining cheese. Dot with slices of margarine.
- Bake at 350 degrees for 45 min to 1 hour, or until lightly golden brown and bubbling. Allow to set and cool slightly before serving.
