This is an open faced omelet that makes perfect use of leftover brocolli and/or turkey. It is wonderful for Sunday brunch or for a light dinner.

6 ounces roasted turkey, diced
2 green onions, sliced
5 eggs or 1 1/4 cups egg substitute
2 tablespoons milk
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup chopped broccoli
2 tablespoons grated parmesan cheese

Steps:

  • Spray a 10-9nch skillet with cooking spray and heat over medium heat.
  • Add the diced turkey and sliced green onions, sauté for 2 to 3 minutes or until turkey is warmed and onions wilted.
  • Beat the eggs or egg substitute with the milk, salt and pepper; pour over the turkey and cook until almost set, lifting the edges to allow uncooked portion to run to the bottom.
  • Warm the chopped broccoli in the microwave and sprinkle over the egg mixture.
  • Top with grated cheese and cover the skillet with a lid and allow omelet to rest in the pan for 2 to 3 minutes.
  • Slide the omelet onto a plate and cut into wedges.
  • Serve hot with fresh biscuits.

8 large eggs
2 tablespoons milk
1/2 teaspoon salt
1/4 teaspoon ground black pepper
8 slices turkey bacon, cooked until crisp (in the microwave or skillet)
1/2 cup sliced green bell peppers
1/2 cup sliced mushrooms
1/2 cup diced tomatoes or leftover tomatoes
1/4 cup chopped green onions
1/2 cup shredded Swiss cheese, optional

Steps:

  • Preheat oven to 250 degrees F.
  • Heat 2 teaspoons of the oil in a large skillet over medium heat.
  • Whisk together the eggs, milk, salt, and black pepper. Pour half of mixture into hot skillet. When egg starts to cook, lift edges with a spatula to allow uncooked egg to slide underneath. When almost cooked through, top 1 half with desired toppings. Fold over untopped side and cook 2 minutes, until egg is cooked through and cheese melts (if using cheese). Transfer omelet to a baking sheet and place in a warm oven while you prepare second omelet.
  • Slice omelets in half and serve.

1 tablespoon olive oil
2 teaspoons unsalted butter
1 tablespoon chopped fresh shiitake mushroom
1 shallot, finely chopped
¼ teaspoon salt
1 fresh sage leaf, minced
¼ teaspoon crushed red pepper flakes
¼ cup shredded cooked turkey
1 teaspoon dry vermouth
2 eggs, chilled
1 pinch ground white pepper
2 teaspoons olive oil
1 tablespoon creme fraiche

Steps:

  • Heat 1 tablespoon of olive oil and butter in a skillet over medium-low heat, and stir in the shiitake mushroom, shallot, salt, red pepper flakes, and sage. Cook and stir until the shallot is translucent, about 5 minutes. Mix in the turkey and vermouth, and stir for a minute or two just to heat; remove from heat.
  • Beat the eggs with a fork in a bowl until well blended, and season with a pinch of salt and white pepper. Heat 2 teaspoons of olive oil in an omelette pan over medium heat until hot, and pour the beaten eggs into the pan. Use a spatula to gently stir the eggs just until they begin to set, 1 to 2 minutes; shake the pan to cover the bottom completely with egg. Smooth out the top of the partially set eggs with the spatula, cook just until the bottom is firm and the top is still slightly soft, and turn off the heat.
  • Spoon turkey filling into the center of the omelette, filling about the middle third of the omelette; dot with small dollops of creme fraiche. Do not overfill omelet. With spatula, fold the upper third of the egg over the filling, and gently tip the skillet and shake the omelette towards the edge of the skillet. With spatula, fold the omelet over one more time, forming a loose cigar shape, and gently tip the omelet onto a serving plate.

1/2 cup reduced-fat mayonnaise
1/4 cup all-purpose flour
2 1/2 cups 1% low-fat milk
1 (4 ounce) package low-fat cheddar cheese, shredded
1 (16 ounce) package frozen broccoli, thawed
1 1/2 cups Minute Rice (NOT regular rice)
1/2 cup parmesan cheese, grated (Kraft Reduced Fat)
1 lb turkey breast, sliced and uncooked

Steps:

  • Preheat oven to 350°F.
  • In a medium saucepan whisk together the mayonnaise and flour over LOW heat until smooth (1 min.?).
  • Gradually stream in milk, whisking constantly, over MED heat until the mixture is thick (but not too thick -- you want a sauce, NOT a custard/pudding).
  • Add the cheddar cheese and continue stirring until it's melted.
  • Layer the broccoli and the uncooked MINUTE rice (NOT regular rice) in a 12 X 8 baking dish.
  • Top with half of the sauce; sprinkle 1/2 of the parmesan over the sauce.
  • Arrange the turkey slices over it next; then the remaining sauce; then the remaining parmesan.
  • Bake in the preheated 350°F oven for 30-35 min or until the turkey is cooked (170° with a meat thermometer) through and the casserole is hot and bubbly.
  • Variation: Use Chicken in place of the turkey for 'chicken divan'.
  • Variation: You can use a different vegetable, but as the recipe is specifically geared towards using broccoli, the recipe may not come out correctly.

Our family looks as much forward to this on the day after Thanksgiving as we do to the Thanksgiving meal! My Aunt passed this on to my Mom many years ago. It is simple to assemble and it's delicious! I use a deep baking dish as this tends to bubble as it cooks. I also will roast a Turkey breast the day before, if I'm not planning a big Turkey dinner, so we can enjoy this any time of the year!

2 (10 ounce) packages frozen broccoli, spears
2 -3 cups cooked turkey, cut up
16 ounces extra-sharp cheddar cheese, block
1 (14 ounce) can evaporated milk
1 (10 1/2 ounce) can cream of mushroom soup
1 (3 1/2 ounce) can fried onions

Steps:

  • Preheat Oven to 350 degrees F.
  • Cook Brocolli to tender crisp stage, drain.
  • Place Brocolli in 9x13 inch baking dish.
  • Layer Turkey on top of Brocolli.
  • Slice cheese block, place slices on top of Turkey.
  • Blend evaporated milk and soup.

  • Combine eggs, evaporated milk, salt and pepper.

¼ cup shredded Monterey Jack cheese

Steps:

  • Place broccoli in a saucepan with 4 cups of water. Bring to a boil; reduce heat, cover, and simmer until tender, 5 to 8 minutes. Drain.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt margarine in a saucepan over medium heat; stir in flour, salt, and pepper and mix well. Pour in chicken broth; cook and stir until sauce thickens and bubbles, about 10 minutes. Add cream and wine; stir until well-combined.

1/4 cup butter or 1/4 cup margarine
1/4 cup all-purpose flour
1 1/2 cups chicken broth
2 tablespoons sherry wine
1/8 teaspoon nutmeg
1/2 cup whipping cream (whipped)
1 cup parmesan cheese
1 1/2 lbs fresh broccoli or 2 (10 ounce) packages frozen broccoli spears, cooked and drained
5 slices turkey breast (large slices)

Steps:

  • Melt butter in medium saucepan over medium heat. Blend in flour. Cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat. Stir in chicken broth. Heat to boiling stirring constantly.
  • Boil and stir one minute. Remove from heat. Stir in wine and nutmeg; gently fold in whipping cream and 1/2 cup of the parmesan cheese.
  • Place hot broccoli in ungreased baking dish, top with turkey slices. Pour sauce over meat. Sprinkle with remaining 1/2 cup of cheese.
  • Set oven control to broil and /or 550 degrees. Broil 3 to 5 inches from heat just until cheese is golden brown. 5-10 minutes, watch closely.

There are a few similar recipes on Zaar to this one, but none exactly the same. This is the one that my mom served when I was a child. The only change I have made is to use broccoli florets instead of frozen spears, which are difficult to cut when serving this up. I've also made this without the broccoli in a smaller dish. My mom always made this recipe with the chicken created when making chicken stock. Feel free to substitute cooked leftover turkey in place of the chicken.
