6 ounces fresh baby spinach (about 7 cups)
1/4 pound sliced deli smoked turkey, cut into strips
2/3 cup sliced baby portobello mushrooms
1 hard-boiled large egg, chopped
1/3 cup sliced red onion
1/4 cup walnut halves
1/4 cup dried cranberries
4-1/2 teaspoons olive oil
1 tablespoon maple syrup
1-1/2 teaspoons finely chopped shallot
1-1/2 teaspoons red wine vinegar
1-1/2 teaspoons Dijon mustard
1 small garlic clove, minced

Steps:

In a large salad bowl, combine the first 7 ingredients. In a small bowl, whisk the remaining ingredients. Drizzle over salad; toss to coat.

6 slices JENNIE-O® Turkey Bacon, cut into pieces
¼ cup diced red onion
1½ cups sliced fresh mushrooms
2 (10-ounce) packages fresh spinach (washed, dried and stems trimmed)
2 tablespoons olive oil
1 tablespoon sugar
2 tablespoons cider vinegar

Steps:

Heat skillet over medium-high heat; spray with cooking spray. Cook bacon, onion and mushrooms 5 to 7 minutes or until bacon is crispy and vegetables are tender.
Always cook to well-done, 165°F. as measured by a meat thermometer.
Toss spinach, bacon, onion and mushrooms in bowl. In small bowl, whisk olive oil, sugar and vinegar. Drizzle dressing over salad; toss to coat.

8 ounces turkey bacon
3 tablespoons white balsamic vinegar
2 tablespoons olive oil
Coarse salt and ground pepper
1 pound baby spinach
1 small red onion, halved and thinly sliced (3/4 cup)
1/4 cup crumbled blue cheese
4 hard-cooked eggs, quartered
Herb Toasts

Steps:

Preheat oven to 350 degrees. Line a large rimmed baking sheet with parchment; arrange bacon in a single layer. Bake until browned and crisp, turning once halfway through, 20 to 25 minutes. Transfer to a paper-towel-lined plate. When cool, slice crosswise into 1/2-inch strips.
Meanwhile, in a large bowl, whisk together vinegar and oil; season with salt and pepper. Add spinach and onion, and toss to combine. Divide among plates; sprinkle with turkey bacon and cheese. Serve with quartered eggs and herb toasts on the side.
