Spicy Turkey Stir Fry with Noodles image

I created this ground turkey stir-fry recipe when I began my journey to get fit. Healthy eating always sounds so bland and boring, so I wanted to bring life to the world of healthy eating. I think I did it with this spicy dish. -Jermell Clark, Desert Hot Springs, California

2 ounces thick rice noodles
1/2 pound lean ground turkey
1 small onion, chopped
1/2 cup shredded red cabbage
1/2 cup chopped fresh kale
1/4 cup packed fresh parsley sprigs, chopped
1 teaspoon coconut or olive oil
1/2 teaspoon pepper
1/4 teaspoon salt
3 green onions, thinly sliced
1 jalapeno pepper, sliced
2 teaspoons Sriracha chili sauce
Thai peanut sauce, optional

Steps:

  • Cook noodles according to package directions. Meanwhile, in a large skillet, cook turkey, onion, cabbage and kale over medium-high heat until turkey is no longer pink and vegetables are tender 8-10 minutes, breaking up turkey into crumbles., Drain noodles; add to skillet. Stir in parsley, coconut oil, pepper and salt. Serve with green onions, jalapeno, chili sauce and if desired, peanut sauce.

Noodles with Peanut Sauce image

A delicious and easy 20-minute meal you can throw together with pantry ingredients and any vegetables you like.

8 ounces angel hair or other skinny pasta (or udon noodles )
½ cup creamy peanut butter
¼ cup hot water (or more as needed)
2 tablespoons soy sauce
2 tablespoons lime juice
½ teaspoon chili garlic paste
1 tablespoon brown sugar or honey
½ teaspoon minced garlic
½ cup slivered radishes (julienned, or cut into matchsticks)
½ cup sliced scallions (white and green parts)

Steps:

  • Cook pasta according to package directions.
  • While the noodles are cooking, put the peanut butter, water, soy sauce, lime juice, chili paste, brown sugar or honey, and garlic in a food processor or blender and process until smooth.
  • When the pasta is cooked, drain it and return the pasta to the pot. Add the sauce and toss until well coated. If you need to add more hot water to loosen the sauce so it distributes easily over the noodles, add more.
  • Turn the pasta into a shallow serving bowl and top with the radishes and scallions. Toss and serve warm.

This recipe is from my new favorite web site, Epicurious. I have made it many times and have not deviated from their original recipe except for deleting the celery and using snow or snap peas instead. This is a great recipe to use left over turkey or chicken, I have used a store bought cooked chicken.

1 lb linguine
3 garlic cloves, finely chopped
1/2 teaspoon hot red pepper flakes
2 teaspoons vegetable oil
3/4 cup chicken broth (can use water)
2/3 cup peanut butter, smooth
2 tablespoons soy sauce
2 teaspoons sugar
1 teaspoon ginger, peeled and minced
2 tablespoons lemon juice
1 lb cooked turkey, shredded (4 cups)
4 celery ribs, thinly sliced
1 cup scallion, thinly sliced

Steps:

  • Cook noodles in a 6-8 quart pot of boiling salted until tneder about 12 minutes.
  • Reserve 1 cup cooking water, then rinse noodles in a colander under cold water.
  • Drain well.
  • While noodles are cooking, cook garlic and red pepper flakes in vegetable oil in small heavy sauce pan over moderate heat, stir util galice is golden.
  • Whisk in chicken broth, peanut butter, soy sauce, sugar and ginger.
  • Simmer while whisking for 2 minutes.
  • Remove from heat and whisk in lemon juice.
  • Toss together turkey, celery, scallions, noodles and sauce.
  • If necessary add some reserved cooking water to thin the sauce.
  • Serve immediately.

1 lb shredded cooked turkey or chicken (4 cups)
4 celery ribs, thinly sliced
1 cup thinly sliced scallion greens

Steps:

  • Cook noodles in a 6- to 8-quart pot of boiling salted water until tender, about 12 minutes. Reserve 1 cup cooking water, then rinse noodles in a colander under cold water. Drain well.
  • While noodles are boiling, cook garlic and red pepper flakes in oil in a small heavy saucepan over moderate heat, stirring, until garlic is golden. Whisk in broth, peanut butter, soy sauce, sugar, and ginger and simmer, whisking, 2 minutes. Remove from heat and whisk in lemon juice.
  • Toss together turkey, celery, scallions, noodles, sauce, and (if necessary) some reserved cooking water to thin. Serve immediately.
