TUNA MELT CASSEROLE
Tuna Melt Casserole takes a few of your favorite dishes and pairs them together beautifully. Here we have the creamy and zesty tuna melt mixture, and pair it into a pasta dish that will send your taste buds on a frenzy! Steps:
- Preheat oven to 400°F.
- In a large pot, cook pasta in boiling salted water for about 3 minutes.
- Add the broccoli and cook for the last 5 min. Drain the pasta and noodles well and set aside.
- In a medium saucepan, melt the butter over low heat and then add the flour, stirring constantly. Add salt and pepper to taste and cook for 1 minute.
- Whisk in milk and increase heat to medium-high. Continue whisking until mixture starts to boil and slightly thicken.
- Remove from heat and stir in half of the Swiss cheese and half of the cheddar cheese. Stir to melt.
- Add the cheese sauce to the pasta and broccoli along with the tuna. Pour into a 9x13 casserole dish. Arrange tomato slices on top and cover with remaining cheese.
- Cover with foil and bake for 20 minutes until hot and bubbly. (You can remove the foil 5 minutes before it is done for a golden brown cheese.)
SALMON OR TUNA NOODLE CASSEROLE
This casserole came about when I didn't have any tuna but I did have some leftover salmon. What the heck .. let's toss it out there and see if it's any good. It's easy to make from items you probably already have in your pantry .. no special shopping required and there isn't much clean up at all. Serve with a side salad and/or...

Steps:
- 1. Preheat oven to 375 F. Coat a 2 quart baking dish with cooking spray, set aside.
- 2. In small bowl combine bread crumbs, garlic powder, dill weed and melted butter and mix until crumbly. Set aside.
- 3. In a large bowl, remaining ingredients except for the last 1/4 cup shredded cheddar cheese. Stir together until well blended. Spoon into prepared baking dish.
- 4. Spread the last 1/4 shredded cheese over the top of the casserole.
- 5. Sprinkle the bread crumb mixture evenly over the top of the casserole. Bake covered at 375 for 20 minutes.
- 6. Remove cover and return to oven for approximately 12 minutes until cheese is melted and casserole is bubbly.
- 7. Remove from oven and sit for at least 5 minutes before serving.
- 8. NOTE: Add more seasonings than listed if you like them, add less or remove them if you don't like them. This recipe is not set in stone .. however ... I recommend you try it this way first and then adjust according to your individual tastes. If you make this recipe and choose to substitute chicken or pork for the salmon or if you add chocolate or hot chili peppers or Dr Pepper you will not be happy and it is not my fault you did not follow instructions so please do not leave negative feedback .. this is a fish dish. - Grease a 9 inch pie plate with the oil.
- Combine the remaining ingredients.
- Pour into the pie plate and pat down firmly.

ULTIMATE TUNA MELTS
Steps:
- In a medium bowl, flake the tuna finely with a fork. Add the celery, scallions, and dill, and continue mixing and fluffing with the fork until combined. Add the lemon juice, 1 1/2 teaspoons salt, and 3/4 teaspoon pepper. Combine the mayonnaise and anchovy paste, if using, and mix into the tuna.
- Preheat the broiler. Toast the bread in a toaster and place the slices in a single layer on a sheet pan. Spread a quarter of the tuna mixture thickly and evenly on each piece of bread, covering the entire slice. Sprinkle the cheese evenly on the 4 sandwiches, covering the tuna completely. Broil for 1 to 2 minutes, just until the cheese melts and starts to brown. (Watch it carefully!) Sprinkle with the microgreens and serve hot.

If you enjoy diner tuna-melt sandwiches, you'll love the taste of this. To save time, use packaged frozen broccoli florets. Jarlsberg Swiss cheese works nicely in this casserole.

- Preheat oven to 400 degrees Fahrenheit. In a large saucepot, cook pasta in boiling salted water for 5 minutes; add broccoli to pasta and cook another 5 minutes or until broccoli is tender and pasta is al dente. Drain well and return to saucepot; set aside.
- Meanwhile, in a 3-quart saucepan, melt butter or margarine over low heat. Stir in flour, salt, and pepper until blended and cook, stirring constantly, 1 minute. Gradually stir in milk; increase heat to medium-high and cook, stirring occasionally, until mixture thickens and boils. Boil 1 minute, stirring frequently. Remove saucepan from heat and stir in 1 cup of cheese until blended.
- Add cheese sauce and tuna to pasta and broccoli in saucepot; toss until evenly mixed. Transfer mixture to a 13"x9" glass baking dish. Arrange tomato slices on top, overlapping if necessary. Sprinkle with remaining 1/2 cup cheese.
- Cover baking dish with foil and bake 20 to 25 minutes or until hot and bubbly. Makes 6 main-dish servings.
