Chicken, Rice, and Rotel image

I made this up on the fly tonight, and it ended up surprisingly delicious! The creamy chicken and rice with rotel flavors blend to a tasty treat. I also think this would work great as a cheese-free chicken enchilada filling. Good for one of those nights you need something filling for a few, but not much time for prep!

4 chicken tenderloins
1 can(s) cream of chicken soup
1 can(s) rotel mild
2 c instant rice
1 can(s) water
2 pinch pepper
1 Tbsp italian seasoning
1 tsp garlic powder

Steps:

  • 1. Preheat oven to 375 degrees. Into 8 inch round pan, stir together chicken soup, rotel, water, and rice.
  • 2. Add 4 chicken tenderloins and sprinkle pepper, Italian seasoning, and garlic powder over the top. Stir slightly to settle it into the pan.
  • 3. Place cake pan in center of pizza pan to catch any drips. Bake 35-45 minutes.

1 lb Velveeta cheese (approximately 1/2 a block)
8 ounces cream of mushroom soup (1 can)
8 ounces cream of chicken soup (1 can)
4 -6 chicken breasts
1 cup Minute Rice
8 ounces rotel (1 can)

Steps:

  • Melt Velveta with Rotel, stirring occasionally.
  • Preheat oven to 350 degrees.
  • Boil chicken breasts until done.
  • While chicken is boiling, mix cream of mushroom soup , cream of chicken soup, and Minute rice with Velveta and Rotel.
  • Dice chicken, add to cheese mixture, and bake for 20 minutes.

2 1/2 cups uncooked rice
1 (8 ounce) can rotel, undrained
2 1/2 cups vegetable broth (see step 2 below)

Steps:

  • Drain Rotel, reserving liquid.
  • Add vegetable broth or water to Rotel juice to make 3 cups of liquid.
  • Combine rice, Rotel and liquid in large saucepan. Cover and bring to a boil. Reduce heat to the lowest setting and simmer 20 minutes. (Don't open the lid!).
  • Fluff rice with fork before serving.

1 (8 ounce) package yellow rice mix
1 (15 ounce) can black beans
1 (15 ounce) can rotel
1 cup green pepper
1 cup diced onion
2 cups low-fat monterey jack cheese (divided)
2 cups cooked chicken (cubed)
1 tablespoon olive oil

Steps:

  • preheat oven 350 degrees. cook rice according to package directions, sautee onions and bell pepper in oil for 10 minutes In large bowl combine black beans, 1 1/2 cup Cheese, Rotel, Chicken, Bell Pepper/Onion Mixture, and yellow rice. Spoon into 13x9 dish sprinkle the rest of cheese on top, bake covered for 30 minutes.

2 boneless skinless chicken breasts
1 Tbsp olive oil
1 clove garlic, minced
1 cup of Minute Rice, uncooked
1 small jar or can sliced mushrooms [optional]
1 can Ro*Tel
1 cup shredded cheddar cheese

Steps:

  • Cut chicken breasts into 1 inch squares. Heat olive oil in a non stick skillet, add chicken and minced garlic. Cook for about 5-7 minutes stirring chicken occasionally.
  • While chicken is cooking go ahead and cook rice according to package directions. Next add mushrooms and Ro*Tel to chicken. Do not drain Ro*Tel, do not drain mushrooms.
  • Cover and let simmer until chicken is tender, about 10 minutes. When chicken mixture is done, turn off heat and sprinkle with cheese. This mixture will be juicy, just serve over rice!!
