NO BAKE COCONUT ALMOND ENERGY BITES
This incredibly easy energy coconut almond energy bites recipe is packed full of nutrition and kid-approved! You'll see that it will become a go-to snack in your house.

Steps:
- Line a baking sheet with parchment paper.
- In a large bowl, combine oats, nut or seed butter, seeds, honey, and your choice of add-ins. Stir to combine.
- Using a rounded teaspoon, scoop out the oat mixture and roll it tightly into bite-size balls. Place on the prepared baking sheet. Repeat until the oat mixture is used up. It should make 12 bites.
- Place the baking sheet in the freezer for 1 to 2 hours, then transfer the bites to a freezer-safe container for up to 4 months. You can eat them frozen or at room temperature!

- Preheat oven to 350 degrees. Line a baking sheet with a nonstick baking mat or parchment. Whisk together sugar and egg white in a large bowl. Stir in the remaining ingredients.
- Form dough into eight 2-tablespoon mounds, and drop each onto sheet, 2 inches apart. Bake macaroons until golden-brown on bottoms and edges, about 15 minutes. Let cool on sheets for 5 minutes. Transfer to wire racks, and let cool.

- In a large bowl, beat the coconut, milk, confectioners' sugar and butter until blended (mixture will be sticky); set aside., In a microwave-safe bowl, melt chocolate chips, candy coating and shortening; stir until smooth. Spoon about 1/2 teaspoon chocolate mixture into 42 paper-lined miniature muffin cups. , Shape 1/2 teaspoonfuls of coconut mixture into balls; gently press into chocolate. Top each with an almond. Spoon 1 teaspoon chocolate mixture over each. Let stand until set. Store in an airtight container.

- Set a pot of water over medium heat and bring to a boil. Add a double boiler to the top of the pot and lower heat to a simmer.

COCONUT COVERED RAISINS & ALMONDS

- Heat coconut butter, coconut oil, raw honey and vanilla extract in a small sauce pan over low heat. Stir until all the ingredients are combined. Take of heat and pour over raisins. Mix well and allow the mixture to sit for 5 minutes or until raisins soak up the coconut mixture. Spread raisins over a parchment paper lined cookie sheet and place in refrigerator until cooled and hardened, about 30 minutes. Use a spatula to break up the coconut covered raisins. Serve and enjoy! Store in airtight container in the refrigerator.
