"I make this family favorite at least two or three times a month," remarks Jackie Messina of Chardon, Ohio. "It's wonderful with a salad and fresh Italian bread." Besides being easy to prepare, this meatless main dish is easy on the pocketbook at just 61 cents per serving.

1 package (16 ounces) spaghetti
10 garlic cloves, minced
1/4 cup olive oil
1/4 cup minced fresh parsley
2 teaspoons dried oregano or 2 tablespoons minced fresh oregano
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup grated Parmesan cheese

Steps:

  • Cook spaghetti according to package directions. Meanwhile, in a skillet over low heat, cook garlic in oil until lightly browned. Remove from the heat; stir in parsley, oregano, salt and pepper. Drain spaghetti; place in a large bowl. Add garlic mixture and Parmesan cheese; toss to coat.

The One and Only Garlic Spaghetti image

Very bold. If you are not a garlic lover, don't try this recipe. This is an adaptation of Spaghetti a la Carbanora. The garlic and egg are both raw, but don't worry, the butter melts, the egg cooks ever so slightly, the cheese melts and an indescribably heavenly amalgamation takes place. Number Of Ingredients 12

8 ounces spaghetti
1 raw egg
5 -8 cloves garlic, peeled and press (not less)
4 tablespoons butter
1/4-1/3 cup grated parmesan cheese
1 teaspoon dried sweet basil leaves
1/4 cup finely chopped parsley
fresh fresh coarse ground black pepper (a lot)
red pepper flakes
vegetarian bacon bits or regular bacon bits
parmesan cheese
black pepper

Steps:

  • Boil spaghetti in a pot of boiling water; (don't over cook).
  • While spaghetti cooks, prepare sauce (this is a thick paste that you toss over the cooked spaghetti).
  • Place the egg garlic, butter, grated Parmesan cheese and dried sweet basil in a blender or food processor and blend together until smooth and well blended.
  • (You can do this by hand if the garlic is pressed).
  • When spaghetti is cooked and drained, (and hot) place it in a large bowl and add the garlic-cheese paste and chopped parsley and ground black pepper.
  • Toss well.
  • Place on servining plater (I warm my plates) and pass the red pepper flakes, bacon bits and more Parmesan and black pepper around for each to add.
  • You can vary this recipe by adding sauteed onions and mushrooms, stir-fried green peppers or added cream or sauteed shrimp.
  • Enjoy, and you will know you added enough garlic if you wake up the next morning tasting it on your breath.

SPAGHETTI WITH OIL AND GARLIC (AGLIO E OLIO)



Spaghetti with Oil and Garlic (Aglio e Olio) image

Kosher salt
1 pound spaghetti
3 cloves garlic, minced
1/2 cup extra-virgin olive oil
Pinch red pepper flakes
2 tablespoons chopped flat-leaf parsley
1/2 lemon, zested, optional
Freshly grated Parmigiano-Reggiano, optional

Steps:

  • Bring a large pot of cold water to a boil over high heat, then salt it generously. Add the pasta and cook, stirring occasionally until al dente, tender but not mushy, about 8 minutes.
  • While the pasta cooks, combine the garlic, olive oil, 1 teaspoon salt and the red pepper flakes in a large skillet and warm over low heat, stirring occasionally, until the garlic softens and turns golden, about 8 minutes.
  • Drain the pasta in a colander set in the sink, reserving about a 1/4 cup of the cooking water. Add the pasta and the reserved water to the garlic mixture. Mix well. Add the parsley and lemon zest (if using). Adjust seasoning, to taste. Transfer to a large serving bowl or divide amongst 4 to 6 dishes. Serve topped with grated cheese, if desired.

Easy Garlic Spaghetti image

This recipe is so easy and quick to make! We eat it as a main meal, but it could also be a delicious side. You can also add fresh chopped parsley before serving. I use the pre-minced garlic that comes in a jar occasionally to save time. My family loves this recipe. I love it because it's inexpensive and quick to make! You can easily adjust this recipe to make larger serving size for a bigger family.

8 ounces spaghetti (1/2 box or pkg)
1/4 cup olive oil
2 tablespoons minced garlic cloves
1/4 cup parmesan cheese

Steps:

  • Cook spaghetti noodles according to directions. Drain and return to pot. Can use any pasta - does not have to be spaghetti.
  • In a skillet, add olive oil and garlic. Saute garlic over medium heat until it begins to brown, then remove from burner.
  • Pour garlic and olive oil over spaghetti and add parmesean cheese. Salt and pepper to taste. Toss to coat spaghetti and serve. I sprinkle more parmesean cheese on top after serving.
