CORNFLAKE CHRISTMAS WREATHS

Cornflake Christmas Wreaths image

Cornflakes get dressed for the holidays when mixed with a green marshmallow coating. Shaped into individual wreaths and topped with festive candies, these crunchy treats are a fun no-bake project.

Categories     dessert

Time 1h10m

Yield 24 servings

Number Of Ingredients 8

One 16-ounce package marshmallows
6 tablespoons unsalted butter, cut into pieces
1 teaspoon pure vanilla extract
Green gel food coloring, for tinting
6 cups cornflakes
Mini round cinnamon candies, for decorating
Red sour candy roll-ups, such as Rip Rolls, or licorice ropes, cut into 5-by-1/4-inch lengths, for decorating
White mini nonpareils, for decorating

Steps:

  • Line 2 baking sheets with parchment. Combine the marshmallows and butter in a large bowl and microwave on 50-percent power in 30-second intervals, stirring in between each, until melted, about 1 minute 30 seconds.
  • Stir in the vanilla and enough food coloring to make the mixture a deep green, 10 to 15 drops. Stir in the cornflakes until they are completely coated.
  • Working with wet hands, form the mixture into twenty-four 2-inch balls. Flatten on the prepared baking sheets and poke a hole in the middle of each with your finger, molding the sides as needed to form a wreath shape. Decorate with the cinnamon candies to create holly berries. Form the red candy strips into a simple bow on each wreath. Sprinkle lightly with the white nonpareils for snow. Let set at room temperature to firm up, about 2 hours, or refrigerate 30 minutes.

VANILLA-BEAN SPRITZ WREATHS

Vanilla-Bean Spritz Wreaths image

The name for these pressed cookies comes from the German word "spritzen" (to squirt). They can be quickly formed with a cookie press. Although they have a very fine crumb, the wreaths are sturdy enough for packaging.

Yield Makes about 5 dozen

Number Of Ingredients 7

3 1/2 cups all-purpose flour
1 teaspoon salt
3 teaspoons ground cinnamon
2 vanilla beans, halved lengthwise, seeds scraped and reserved
1 cup plus 4 teaspoons sugar
3 sticks unsalted butter, room temperature
2 large egg yolks

Steps:

  • Preheat oven to 350 degrees. Whisk together flour, salt, and 1 teaspoon cinnamon.
  • Beat vanilla seeds and 1 cup sugar with a mixer on medium speed until incorporated, about 3 minutes (sugar will clump together slightly). Add butter, and beat until pale and fluffy. Add egg yolks, 1 at a time, beating well after each addition. Reduce speed to low. Add flour mixture, and beat just until smooth.
  • Divide dough into 3 portions. Pack 1 portion into a cookie press fitted with wreath disk (cover remaining portions with an inverted bowl or refrigerate in an airtight container for up to 3 days; bring to room temperature before using), and press shapes about 2 inches apart onto baking sheets. Bake until edges are just golden, 9 to 12 minutes.
  • Meanwhile, combine remaining 2 teaspoons cinnamon with remaining 4 teaspoons sugar. Sprinkle over hot cookies. Let cool on sheets on wire racks. Repeat. Cookies can be stored in a single layer in airtight containers up to 4 days.

VANILLA BEAN SPRITZ COOKIES

Vanilla Bean Spritz Cookies image

Delicate, buttery and festooned with colored sugar or sprinkles, spritz cookies are a holiday staple. You can make excellent ones without any special items like the vanilla bean paste and cultured butter called for here. But those ingredients will make your cookies even more delicious. You can leave them tasting purely of vanilla, or add another optional flavoring, such as citrus zest, cinnamon or cardamom, or almond extract. These fragile cookies don't ship well on their own, but you can increase their stability by turning them into sandwich cookies, filled with chocolate, Nutella, or thick jam.

Categories     cookies and bars, dessert

Time 1h

Yield 4 dozen cookies

Number Of Ingredients 9

1 cup/225 grams unsalted butter (2 sticks), preferably cultured, softened
1/2 cup/100 grams granulated sugar
1/4 cup/55 grams light brown sugar
1 large egg, at room temperature
2 teaspoons vanilla bean paste (or use 1 tablespoon vanilla extract)
1 teaspoon grated lemon zest or orange zest, 1/4 teaspoon ground cinnamon or cardamom, or 1/2 teaspoon almond extract (optional)
2 1/4 cups/290 grams all-purpose flour
1/2 teaspoon fine sea salt
Decorative sugar, for sprinkling

Steps:

  • Heat oven to 350 degrees. Using an electric mixer fitted with the paddle attachment or a handheld electric mixer, beat butter and sugars on medium speed until light and fluffy, 2 to 3 minutes. Add the egg, vanilla and the zest, spices or almond extract (if using), and mix until well combined and smooth.
  • Reduce speed to low, and gradually add flour and salt until just incorporated.
  • Load dough into a cookie press. Following the directions that came with your cookie press (models can vary), push the dough onto ungreased baking sheets, leaving about 1 inch between cookies. Sprinkle cookies with decorative sugar.
  • Bake until firm to touch and golden brown at edges, about 12 to 17 minutes. Transfer cookies onto a wire rack to cool completely.

LINZER DOILY WREATHS

Linzer Doily Wreaths image

Rolling a woven doily over cookie dough leaves an impression which, after baking and glazing with a simple green frosting, looks like the fluffy pine needles of a holiday wreath. A paper doily doesn't provide enough of an indentation, so using a woven doily is a must-plus it can be washed and used year after year! Tart raspberry jam pairs well with the almond Linzer cookie, but feel free to mix it up with your favorite flavor.

Categories     dessert

Time 3h

Yield 20 to 24 cookies

Number Of Ingredients 14

2 3/4 cups all-purpose flour, plus more for rolling
1/2 cup almond flour
1/2 teaspoon ground cinnamon
1/4 teaspoon baking powder
1/2 teaspoon kosher salt
2 sticks (1 cup) unsalted butter, softened
3/4 cup granulated sugar
1 teaspoon grated orange zest
1 large egg, at room temperature
1 teaspoon pure vanilla extract
1/2 cup raspberry jam
1 cup confectioners' sugar
Green gel food coloring
24 small red candy bows

Steps:

  • Whisk together the all-purpose flour, almond flour, cinnamon, baking powder and salt in a medium bowl. Set aside.
  • Beat the butter, granulated sugar and orange zest together in on medium-high speed in a stand mixer fitted with a paddle attachment until light and fluffy. Add the egg and vanilla and mix on low until just combined. Add the dry ingredients and mix on low until fully combined. Divide the dough in half and wrap each piece in plastic and refrigerate for at least 2 hours and up to a day ahead.
  • Preheat oven to 350 degrees F. Line 2 sheet pans with parchment paper or silicone baking mats.
  • Lightly flour a clean work surface and roll out one half of the dough until it is roughly 1/4-inch thick. Place a clean woven cloth doily over top of the dough (or multiple doilies, if they are smaller) and gently press down with the rolling pin to adhere the doily to the dough. Roll out the dough with the doily until it is closer to 1/8-inch thick. Carefully peel off the doily, leaving behind an impression. If the dough sticks to the counter, use a bench scraper or large offset spatula to gently release it, keeping the impression of the doily intact.
  • Cut out circles from the dough with a 2 1/2-inch fluted round cutter. Cut out the center of the circles with a 1-inch fluted round cutter to create wreath shapes. Use an offset spatula to transfer the wreaths to the prepared sheet pans, spacing them 2 inches apart. Freeze until firm, about 15 minutes. Bake until golden brown around the very edges, 10 to 12 minutes.
  • Gather the scraps and roll them out again and repeat imprinting the dough with the doily, refrigerating the dough if it gets too soft.
  • Roll out the second half of the dough but do not imprint with the doily (this will be the bottom half of the cookie); punch out wreaths with the fluted cutters and continue to freeze and bake, rolling out the scraps again.
  • Cool the cookies on the tray for 10 minutes before transferring to a rack to cool completely.
  • Transfer the raspberry jam to a small piping bag and snip off the end. Pipe a ring of jam around each of the flat cookies, and then sandwich them with the textured cookies on top. Whisk together the confectioners' sugar, 3 tablespoons of water and 1 drop green gel food coloring. Adjust the color as desired. Use a pastry brush to spread the glaze over the tops of the cookies, then immediately place a red candy bow on each cookie. Let dry, about 30 minutes.
