Over time, I have edited and upgraded my mornay and now it has become the most requested item to bring to parties etc! Even better, its low in fat!

Number Of Ingredients 17

1 tablespoon low-fat butter or 1 tablespoon low-fat margarine
4 tablespoons plain flour
1 pinch nutmeg
1 teaspoon mustard
1 pinch salt
1 pinch cayenne pepper
1 teaspoon mixed herbs
1 pinch paprika
1 liter skim milk
425 g tuna in water
1 red onion, finely diced
2 eggs
3/4 cup corn kernel
3/4 cup baby peas
1 cup cooked rice
1/2 cup breadcrumbs
1 cup low-fat cheddar cheese, grated

Steps:

  • Melt butter.
  • Add flour and dry ingredients (not bread crumbs). Mix to thick paste.
  • Slowly add milk, stirring with a whisk so as not to form lumps.
  • Heat until thickened.
  • Mix tuna, onion, eggs, cooked rice, corn, peas and half of cheese.
  • Pour into casserole dish, and top with remaining cheese, then breadcrumbs.
  • Bake in moderate oven for an hour.

2 (6 ounce) cans tuna or 2 (6 ounce) cans tuna packed in oil
1 bunch scallion, green tops included
2 tablespoons lemon juice
8 ounces cheddar cheese
1/4 cup mayonnaise
1/2 teaspoon garlic powder or 1/2 teaspoon salt

Steps:

  • Drain tuna, don't have to wash off the oil-packed, squeeze lemon over tuna. Let sit while chopping green onions, add cheese, mayo and seasonings. Mix well, get a bag of regular saltines and ENJOY!
