EASY MACARONI TUNA CASSEROLE

Easy Macaroni Tuna Casserole image

This dish is super easy. It is also a very hearty delicious bowl of comfort food. The guys in my house loved it. I loved this recipe but I used cream of mushroom soup and added the cheese into the casserole. I also melted butter and added bread crumbs to the top before baking, then sprinkle top lightly with dill seasoning. The resulting casserole was very creamy and flavorful.

Number Of Ingredients 11

1 (7.25 ounce) package macaroni and cheese
¼ cup butter
¼ cup milk
1 (10.75 ounce) can cream of mushroom soup
1 (5 ounce) can tuna, drained and flaked
½ cup milk
1 cup shredded Cheddar cheese
1 tablespoon minced fresh parsley, or to taste

½ teaspoon dried dill weed, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2-quart baking dish.

  • Bake in the preheated oven until cheese is melted and bread crumb topping is lightly browned, about 20 minutes.

Categories     main-dish

Time 1h

Yield 6 servings

Number Of Ingredients 16

Salt
1 pound hollow cavatappi or elbows with lines, or macaroni with lines
About 3 tablespoons EVOO, plus extra for drizzling
12 ounces line-caught canned tuna, drained
1/2 cup finely chopped fresh herbs, such as dill, parsley and tarragon
1/2 cup finely chopped red onion or scallions, whites and greens
2 tablespoons Dijon mustard
1 to 2 small ribs celery, finely chopped
1 lemon, juiced
Freshly ground black pepper
1 stick butter
3 tablespoons flour
About 2 1/2 cups whole milk
2 cups grated white Cheddar or gruyere cheese
1 1/2 cups homemade breadcrumbs or panko
1/2 cup grated Parm

Steps:

  • Bring a large pot of water to boil for the pasta. Salt the water and cook the pasta to less than al dente, 5 to 6 minutes. Drain and drizzle with a touch of oil to keep the pasta loose.
  • In a large bowl, flake the tuna and add the herbs (reserving a tablespoon or 2 for breadcrumbs), onions, mustard, celery, lemon juice, EVOO and some salt and pepper. Add the pasta and combine well. Transfer to a baking dish or large casserole dish.
  • In a medium saucepot, melt 4 tablespoons of butter. Whisk in the flour and cook 1 minute. Then whisk in the milk and season with salt and pepper, thicken to coat the back of a spoon. Stir in the Cheddar in a figure-eight motion. Pour the sauce evenly over the pasta and tuna. Gently combine with a spoon to settle the sauce. Cool and store for a make-ahead meal.
  • Melt the remaining 4 tablespoons of butter in a small pan and add the breadcrumbs and reserved herbs, toss to evenly distribute the butter, remove from heat and transfer to airtight container.
  • To prepare, preheat the oven to 400 degrees F and bring the casserole to room temperature. Top the casserole with breadcrumbs and Parm cheese. Bake until golden and hot through.

KRAFT® MAC AND CHEESE TUNA CASSEROLE

Kraft® Mac and Cheese Tuna Casserole image

I call this a classic tuna casserole because it is made with a boxed macaroni and cheese and the basic ingredients we all grew up with. This is comfort food at it's best, my two favorites mixed together. This is so good that I took a picture of it after having it for dinner and decided it should be shared on my favorite recipe site. You will love it too.

  • Boil the pasta in heavily salted water in a 2-quart saucepan according to the package directions.
  • Heat the empty saucepan over low heat. Add the butter and cream cheese and melt for 1 minute, stirring frequently, or until the butter is melted and starting to foam. Note: it's ok if the butter and cream cheese look separated. They will melt together completely in the next step.
  • Add the cheddar cheese, milk, and salt to the pan. Increase the temperature to medium-low and let the mixture come to a simmer, stirring the mixture as it cooks. Simmer the sauce for 5-6 minutes, continuing to stir every 15-30 seconds or so, or until the sauce is thickened and creamy. Note: you want the sauce to simmer lightly, but not boil or burn. If it starts to boil turn the heat back down to low.
