1/2 c soy sauce (low-sodium is fine)
2 Tbsp sesame oil
2 Tbsp granulated white sugar
1 Tbsp toasted sesame seeds
1 tsp minced fresh ginger
3 clove garlic, minced
1/4 tsp kosher salt (only if low sodium soy sauce is used)
1/2 tsp freshly coarse-ground black pepper
4 1" thick tuna steaks, 1/4-1/2 pound each

Steps:

  • 1. In a small mixing bowl or 2-cup measure, whisk together the soy sauce, sesame oil, sugar, sesame seeds, ginger, garlic, salt and pepper.
  • 2. Place the tuna steaks in a zip-lock bag and pour in the marinade, being sure each steak is coated. Seal the bag, refrigerate, and let the tuna marinate for 1 to not more than 1 1/2 hours, turning it occasionally. DO NOT OVER-MARINATE.
  • 3. Preheat your grill for high heat. Use a wire brush to make sure your grill is clean of any residue. Use tongs and paper towel to apply a liberal coating of vegetable or canola oil to the grill. You can either discard the marinade or place it in a small pan and boil it down a little to use as for a basting sauce.
  • 4. Grill the tuna for 1 1/2 to 2 minutes on each side. The "cooked" portion should extend only about 1/4" into the steak on each side, with pink and some red in the center. And trust me, the more red, the better. Please, oh please, do not over-cook this wonderful piece of tuna!

Steps:

  • To grill the tuna, get a charcoal or stove-top cast-iron grill very hot. Brush the fish with olive oil, and sprinkle with salt and pepper. Grill each side for only 2 to 2 1/2 minutes. The center should be raw, like sushi, or the tuna will be tough and dry. Allow to rest for 5 to 10 minutes and serve.

Easy enough for a weeknight but special enough for company, Asian-flavored marinated grilled tuna steaks with a sesame crust cook up quickly.

1/2 cup low-sodium soy sauce
1/4 cup chopped scallions (white and light green parts)
2 tablespoons fresh lemon juice
1 teaspoon sesame oil
1 teaspoon freshly grated ginger
4 (6-ounce) tuna steaks
1/2 cup sesame seeds (white and black combined or white only)
1/2 teaspoon cornstarch
1 teaspoon water

Steps:

  • Gather the ingredients.
  • In a large zip-top bag, combine the soy sauce, chopped scallions, lemon juice, sesame oil, and fresh ginger. Swish everything around in the bag until it's well combined.
  • Add the tuna steaks, turning to coat them completely with the marinade. Press the excess air out of the bag, seal, and marinate in the refrigerator for about 20 minutes. Preheat the grill to high heat; this can be a countertop contact grill, an open grill pan, or an outdoor gas or charcoal grill. If using a contact grill, set to "sear" or the highest temperature setting.
  • Place the sesame seeds on a plate or a shallow dish. Remove the tuna steaks from the marinade, brushing the scallions off the steaks; reserve the marinade. One at a time, coat the steaks in sesame seeds on all sides, pressing the seeds onto the steaks so they'll stick.
  • Spray the grill plates lightly with nonstick spray and place the steaks on the grill. If using a contact grill, close the cover so the top grill rests evenly on the steaks; do not press down. Grill for about 3 minutes for a rare, pink interior; grill longer if you prefer your tuna cooked through.
  • If you are using an open grilling surface, carefully flip the tuna steaks with a pair of tongs after 3 minutes and cook for 3 minutes on the other side. Remove the steaks from the grill and keep warm.
  • While the tuna cooks, pour the marinade into a small saucepan and bring to a boil. Mix the cornstarch with the water to create a slurry and add to the saucepan, stirring with a whisk. Simmer for about 3 to 4 minutes, until the sauce thickens.
  • To serve, slice the tuna steaks on the diagonal into thin pieces. Fan the slices on a plate and drizzle with the sauce.

2 cloves garlic
1 tablespoon coarse sea salt
2 tablespoons grated ginger
1/2 teaspoon ground cardamom
1 tablespoon dry vermouth
I tablespoon lime juice
1 teaspoon sesame oil
3 tablespoons olive oil
6 (8-ounce) tuna steaks, skin removed and dark sections discarded
3 thin slices bacon, cut into fine strips
2 medium red onions, cut into 1/4-inch slices
6 cloves garlic, thinly sliced
3 jalapeno chiles, seeded and julienned
1/4 cup red wine vinegar
6 plum tomatoes, cut into wedges
1/2 small bunch fresh thyme, leaves only, coarsely chopped
1/2 small bunch fresh oregano, leaves only, coarsely chopped
1 teaspoon salt
1/2 small bunch flat-leaf parsley, leaves only, coarsely chopped

Steps:

  • In a mortar and pestle or a food processor, combine the garlic, salt, ginger and cardamom and pound to a smooth paste. Add the vermouth and the lime juice and whisk to mix. Allow to sit for 5 minutes, then add the sesame oil and 1 tablespoon of the olive oil. Rub this mixture into both sides of the tuna steaks and allow to sit at room temperature for about 15 minutes.
  • Heat the remaining 2 tablespoons olive oil in a large skillet over medium-high heat. Add the bacon and saute, stirring, until crisp. Add the onions and continue to saute, stirring frequently, until the onions are golden. Add the sliced garlic and cook for 1 minute more, until the aroma of the garlic is released. Add the chiles, vinegar, tomatoes, thyme, oregano, and salt and cook only until the tomatoes are heated through. Preheat a grill or broiler to high heat. Grill the steaks about 4 inches away from the heat for 10 to 15 minutes, or until golden and cooked to the desired doneness. Let rest for 5 minutes. Cover the bottom of a heated serving platter with the braised onion mixture. Arrange the tuna steaks on top and surround them with the tomato wedges. Scatter the parsley over the top and serve immediately.

Tuna is available most of the year, so fresh steaks should be easy to come by. Be choosy: a reddish color is acceptable, but flesh with dark spots or streaks should be avoided. As with all great ocean fish, the flesh tends to be dry. Marinate with oil, and avoid overcooking. The timing is critical, as tuna should be served medium rare. Use a kitchen timer.

4 (6 ounce) albacore tuna steaks, 1 inch thick
3 tablespoons extra virgin olive oil
salt and ground black pepper to taste
1 lime, juiced
½ cup hickory wood chips, soaked

Steps:

  • Place tuna steaks and olive oil in a large resealable plastic bag. Seal, and refrigerate for 1 hour.
  • Preheat the grill for medium heat. When coals are very hot, scatter a handful of hickory or mesquite wood chips over them for flavor.
  • Lightly oil grill grate. Season tuna with salt and pepper, and cook on the preheated grill approximately 6 minutes, turning once. Transfer to a serving platter, and drizzle with freshly squeezed lime juice. Serve immediately.

4 (6 ounce) yellowfin tuna steaks
½ cup vegetable oil
⅓ cup soy sauce
¼ cup fresh lemon juice
2 teaspoons Dijon mustard
1 teaspoon grated lemon peel
1 clove garlic, crushed
4 wedges lemon, for garnish

Steps:

  • Prick tuna steaks all over with a fork and place in shallow glass dish.
  • Whisk oil, soy sauce, lemon juice, Dijon mustard, lemon peel, and garlic together in a bowl; pour over the tuna steaks. Cover dish with plastic wrap and refrigerate 1 to 3 hours.
  • Preheat grill for medium heat and lightly oil the grate.
  • Remove tuna from the marinade. Shake excess moisture from the steaks.
  • Pour the marinade into a small saucepan and bring to a boil. Reduce heat to medium-low and cook marinade at a simmer for 10 minutes.
  • Cook tuna on preheated grill, basting with boiled marinade, until cooked through, 5 to 6 minutes per side. Serve with lemon wedges.

I pulled this off the web and it has become one my absolute favourite recipes. We have it at least once a month, sometimes more. Guests never fail to ask for the recipe. Note that prep time and cook time are approximations. It's a very quick and easy recipe.

3 tablespoons soy sauce
1 teaspoon sugar
1/8 teaspoon dried red pepper flakes
1/2 cup canned chicken broth or 1/2 cup homemade stock
4 tuna steaks, about 1 ",thick
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
2 tablespoons cooking oil
1 teaspoon sesame oil
1 green onion, including green top chopped
3 cloves garlic, minced

Steps:

  • In a small bowl, combine the soy sauce, sugar, red pepper flakes, and broth.
  • In a small sauce pan, heat sesame oil.
  • Stir in the green onion and garlic and cook, stirring, for about 1 minute.
  • Add the soy sauce mixture; simmer until reduced to approximately 1/3 cup.
  • Meanwhile, sprinkle the fish with the salt and black pepper.
  • Heat the cooking oil in a large frying pan over moderately high heat.
  • Add the tuna and cook until brown, about 3 minutes.
  • Turn and cook the fish until done to your taste.
  • (This is best with the tuna still very pink in the center.) When done, cut the tuna into slices and serve with the sauce.
