TROPICAL SHRIMP PAELLA

I made this for the first time last night on an almost dare, my cooking skills are not amazing, I am not sure where the recipe originates, my friend gave it to me, anyway it was amazing, to me anyway! It looks difficult and lengthy but it really is not, just takes time to get it together but I love chopping. Prep and cooking time is estimated.

1 1/2 cups yellow onions, diced 1/4 inch
1/2 lb linguica sausage or 1/2 lb smoked sausage
4 tablespoons olive oil
1 cup red pepper, diced 1/4 inch
1 teaspoon fresh thyme leave
1/2 fresh pineapple, diced 1/2 inch
1/2 teaspoon turmeric
1 mango, diced 1/2 inch
1 teaspoon kosher salt
1 papaya, diced 1/2 inch
1 cup arborio rice or 1 cup paella rice
1 star fruit, sliced 1/4 inch
2 1/2 cups chicken stock or 2 1/2 cups vegetable stock
2 tablespoons rum (optional)
1 tablespoon minced garlic
2 1/2 lbs prawns (16/20 count)

Steps:

  • Slice the linguica or smoked sausage or chorizo into 1/4-inch rounds, then quarter the sausage.
  • Marinate the prawns in olive oil which has been infused with saffron.
  • Season with kosher salt and crushed red pepper.
  • In addition, other seafood may be added such as clams and mussels.
  • Cook the onion in half the olive oil until translucent over medium-high heat.
  • Add the thyme, turmeric, salt and rice.
  • Stir well.
  • Add the stock, stir once and set on low heat for about 20 minutes, or until just al dente.
  • In large sauce pan, warm the garlic in the remaining olive oil and add the diced red pepper.
  • Add the fruit, sausage and prawns and sauté for one minute.
  • Add the rum and cook for another minute to burn off the alcohol.
  • Add the cooked rice.
  • Toss all together carefully until thoroughly incorporated.
  • Moisten with a little more stock if necessary.
  • Mound the paella in a bowl or on a plate.
  • Garnish the paella with two spears of pineapple, some sliced chives and sliced starfruit if desired.

1 tbsp. GOYA® Extra Virgin Olive Oil
1 small onion, finely chopped (about 3/4 cup)
1 package (3.5 oz.) GOYA Chorizo, cut in 1/4" slices
1 tsp. GOYA Minced Garlic or 2 cloves garlic, finely chopped
1 package (8 oz.) GOYA Yellow Rice
1/4 cup GOYA Pitted Alcaparrado, rinsed and roughly chopped
3/4 lb. large shrimp, peeled and deveined
10-12 little neck clams
1 jar (4 oz.) GOYA Fancy Pimiento, drained
1 tbsp. finely chopped fresh parsley

Steps:

  • 1. Heat oil in 10"-12" paella pan (or large skillet) over medium-high heat. Add onions and chorizo; cook until onions are tender and chorizo turns golden brown, about 7 minutes. Stir in garlic; cook until fragrant, about 30 seconds more.
  • 2. Add 1 3/4 cups water to pan; bring to boil. Stir in contents of yellow rice mix and alcaparrado. Boil rice mixture 1 minute; tightly cover pan. Reduce heat to medium-low; simmer until rice is tender and water is absorbed, about 25 minutes, adding shrimp and clams after 12 minutes.
  • 3. Arrange pimiento strips over rice; sprinkle with parsley. Serve immediately.

1 (16 ounce) package linguine pasta
½ cup olive oil
½ cup pineapple juice
½ cup no-pulp orange juice
5 teaspoons grated orange zest
5 teaspoons lemon zest
1 teaspoon salt
1 teaspoon pepper
5 cloves garlic, peeled
1 pound medium shrimp - peeled and deveined
2 tablespoons chopped fresh parsley
2 tablespoons grated Parmesan cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Stir in the linguine, and return to a boil. Cook until the pasta has cooked through, but is still firm to the bite, about 11 minutes.
  • While pasta is cooking, combine the olive oil, pineapple juice, orange juice, orange zest, lemon zest, salt, pepper, and garlic in a blender. Blend on high speed until smooth.
  • Pour sauce into a large skillet over medium-high heat. Bring to a simmer and cook for 2 minutes. Add the shrimp and parsley; cook until shrimp are pink and cooked through, 3 to 5 minutes.
  • Drain the linguini, and place on a serving platter. Spoon the shrimp and sauce over the pasta, and top with a sprinkle of Parmesan cheese.

This recipe was found in a supermarket pamplet put out by the Florida Bureau of Seafood and Aquaculture. I thought it was pretty good and easy to make. The picture shows the shrimp served on sauted vegetables (thinly sliced carrots, shallots and snow peas) which I made with the marinade.

1 1/2 lbs shrimp, peeled and deveined
1 cup fresh diced pineapple
1/2 cup diced water chestnut
2 tablespoons lime juice
2 tablespoons olive oil
2 tablespoons honey
1 tablespoon minced garlic
2 teaspoons soy sauce

Steps:

  • Combine all of the ingredients together and toss well.
  • Chill for 2 hours.
  • Drain.

8 chicken thighs
8 chicken drumsticks
1 lb shrimp
4 tablespoons olive oil
coarse salt and pepper
115 g precooked spanish chorizo, chopped
4 garlic cloves, minced
2 red bell peppers
1 onion, chopped
2 cups arborio rice
591 ml frozen peas
858 ml diced tomatoes
858 ml reduced-sodium chicken broth

Steps:

  • Season chicken with salt and pepper. In a 5-quart Dutch oven or heavy-bottomed pot, heat oil over medium-high.
  • Working in batches, cook chicken (do not crowd pot) until browned for about 7 to 8 minutes, turning once. Transfer to a plate and set aside. Reserve pot.
  • Place bell pepper, chorizo, onion, garlic and tomatoes (with their juice) in pot. Season with salt and pepper. Cook, stirring occasionally, until liquid has evaporated; about 4 to 6 minutes.
  • Add rice, stirring until translucent around edges; about 1 to 2 minutes.
  • Add broth and chicken, bring to a boil.
  • Reduce to a simmer, cover, and cook until rice begins to soften; about 10 minutes.
  • Add peas and shrimp, submerging them in liquid. Cover and cook until shrimp are opaque throughout; about 4 to 6 minutes.

4 cups shrimp stock (*) or 4 cups chicken stock
1/4 teaspoon saffron (optional)
3 tablespoons olive oil
1 medium onion, minced
1 teaspoon paprika
1 teaspoon ground cumin
2 cups Spanish rice (or other short grain rice)
2 cups raw peeled shrimp, cut into 1/2 inch chunks
salt
minced fresh parsley (to garnish)

Steps:

  • Preheat oven to 450°F.
  • Warm the stock in a saucepan along with saffron.
  • In a large ovenproof skillet, add olive oil over medium heat.
  • A minute later add the onion and cook, stirring occasionally, until the mixture is translucent and soft, about 5 minutes.
  • Add paprika and cumin and cook 1 minute more.
  • Add rice and cook, stirring occasionally, until glossy, 1-2 minutes.
  • Stir in the shrimp and season with salt.
  • Add the warm stock and transfer skillet to oven, baking 15 minutes or until liquid is absorbed and rice is dry on top.
  • Garnish with parsley, serve immediately.
  • *For shrimp stock, boil the shells from the shrimp in 4 cups water, then remove and steep until ready to use, or until water cools.
  • Strain and use.

1 lb smoked chorizo sausage, cooked & sliced
1 medium red bell pepper, cut into thin strips

1 (14 1/2 ounce) can diced tomatoes, undrained
2 1/4 cups uncooked arborio rice or 2 1/4 cups long-grain rice
1 cup dry white wine
1/2 lb medium shrimp, cooked peeled deveined (thawed if frozen and tails removed)
1 cup English pea
2 tablespoons fresh parsley, chopped

Steps:

  • Heat broth to boiling in 2-quart saucepan; stir in saffron. Set aside.
  • Meanwhile, cook sausage in large paella pan or 3-inch deep 12-inch ovenproof skillet over medium heat about 5 minutes, stirring occasionally, until brown.
  • Move sausage to one side of pan. Add bell peppers and onion to pan.
  • Cook about 5 minutes, stirring occasionally, until crisp-tender. Stir in garlic and tomatoes; heat to boiling.
  • Stir in rice, wine and heated broth mixture; heat to boiling. Reduce heat.
  • Cover and simmer 15 minutes; remove from heat.
  • Stir in shrimp and peas.
  • Cover and simmer about 10 minutes or until rice is tender.
