ZUCCHINI FRUIT COCKTAIL LOAF

I was raised on a farm and learned to cook at a young age. My mother was so good at substituting ingredients if she thought something was missing in a recipe, so I tried the same when I first baked this bread. I added the fruit cocktail for more flavor and moisture-and it worked.

Yield 2 loaves.

Number Of Ingredients 12

3 eggs
2 cups sugar
1 cup vegetable oil
2 teaspoons vanilla extract
2 cups chopped peeled zucchini
1 can (17 ounces) fruit cocktail, drained
3 cups all-purpose flour
2 teaspoons baking soda
1-1/2 teaspoons ground cinnamon
1 teaspoon salt
3/4 teaspoon ground nutmeg
1 cup chopped walnuts

Steps:

  • In a large bowl, beat eggs. Add sugar, oil and vanilla; beat well. Stir in zucchini and fruit cocktail. Combine dry ingredients; stir into zucchini mixture. Stir in nuts. Pour into two greased and floured 8x4-in. loaf pans. Bake at 325° for 60-70 minutes or until bread tests done. Cool 10 minutes before removing from pans to a wire rack.

1 cup all-purpose flour
1 cup white sugar
1 egg
1 teaspoon baking soda
1 teaspoon vanilla extract
1 (16 ounce) can fruit cocktail
½ cup packed brown sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x9 inch square baking pan.
  • Combine the flour, white sugar, egg, baking soda, vanilla and undrained fruit cocktail. Mix until blended. Pour batter into the prepared pan and sprinkle the top with the brown sugar.
  • Bake at 350 degrees F (175 degrees C) for 40 minutes or until golden brown and firm.

1 cup sugar
1 teaspoon baking soda
1 teaspoon salt
1 can (15-1/4 ounces) fruit cocktail, undrained
1 egg, lightly beaten
1/2 cup packed brown sugar
1/2 cup chopped walnuts
Whipped cream, optional

Steps:

  • In a large bowl, combine the first six ingredients; stir until smooth. Pour into a greased 9-in. square baking pan. Combine brown sugar and nuts; sprinkle over top. , Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Serve with whipped cream if desired.

1 1/2 cups sugar
1 1/2 teaspoons vanilla
4 eggs
2 1/4 cups flour
1 (16 ounce) can fruit cocktail, well drained
1 1/2 teaspoons baking powder

Steps:

  • Mix cream cheese, butter, sugar, eggs and vanilla until fluffy.
  • Fold in flour and baking powder until just mixed.
  • Stir in fruit cocktail.
  • Pour into 2 greased and floured 9x5 inch loaf pans.
  • Bake at 325 for 1 hour.
  • Cool 10 minutes in pans; then remove from pans and finish cooling on wire rack.
  • May drizzle with powdered sugar icing when cool.
