Healthy Hawaiian Mango Bread image

Yummy quick bread or muffins. Makes 2 loaves of bread or 24 muffins. Great for breakfast or an afternoon snack. The bread even makes good toast.

2 cups flour
2 cups whole wheat flour
4 teaspoons baking soda
4 teaspoons cinnamon
1/4 teaspoon ground ginger
1 teaspoon salt
6 eggs, well beaten
2 cups sugar
1 1/2 cups vegetable oil
3 1/2 cups mangoes, diced (about 3 very ripe mangoes)
2 teaspoons vanilla
2/3 cup raisins
1 cup walnuts, chopped or 1 cup coconut

Steps:

  • Preheat oven to 350°F.
  • Grease and flour two loaf pans or muffin tins.
  • Whisk together first 6 ingredients; form a well in the center.
  • Add all remaining ingredients, and incorporate into the dry ingredients, stirring until well combined.
  • Pour mixture into bread pans or muffin pans and bake bread for 1 hour or muffins for 30 minutes.

3/4 cup guava or 3/4 cup mango nectar
1 egg
2 tablespoons melted butter
3 tablespoons honey
3/4 teaspoon salt
3 cups bread flour
2 tablespoons dry milk
2 teaspoons fast rising yeast or 2 teaspoons quick-rising yeast
1 cup chopped dried mango (chopped to the size of raisins)

Steps:

  • Place ingredients in bread machine container in order directed by manufacturer.
  • Cycle: white, sweet.
  • Add mango at the beep(20 min after start).
  • Setting: Medium.
  • For those of you who like a softer crust, as soon as it comes out of the bread machine, place in a plastic grocery bag and tie it closed till it cools.

2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon baking powder
2 teaspoons cinnamon
3 eggs, well beaten
3/4 cup canola oil
1 1/2 cups granulated sugar
2 cups peeled and diced fresh mango
1/2 cup raisins
1/2 cup macadamia nuts, chopped
1/2 cup grated coconut

Steps:

  • Preheat oven to 350°F.
  • Grease and flour two 9x5 inch loaf pans.
  • Sift the flour, baking soda, baking powder and cinnamon into a small bowl.
  • In a large mixing bowl, combine eggs, oil and sugar and mix with dry ingredients until well blended.
  • Fold in mango, raisins, nuts and coconut.
  • Pour into loaf pans and bake 45 to 50 minutes or until a toothpick inserted in the center comes out clean.
  • Let cool 10 to 15 minutes, unmold and let completely cool on baking racks.

3 eggs
¾ cup Mazola® Corn Oil
1 cup diced mango
1 (8 ounce) can pineapple tidbits, well drained
¼ cup chopped macadamia nuts
½ cup shredded coconut
1 ½ cups powdered sugar
½ teaspoon Spice Islands® Pure Vanilla Extract
1 tablespoon butter or margarine, melted
2 tablespoons hot tap water, or as needed

Steps:

  • Preheat oven to 350 degrees F. Stir together flour, sugar, baking powder, cinnamon and salt in a large bowl. Make a well in the dry ingredients and add vanilla, eggs, oil, fruits, nuts and coconut; mix well. Pour into 2 greased 8-1/2 x 4-1/2-inch loaf pans.
  • Bake for 45 to 50 minutes or until a wooden pick inserted near the center of loaf comes out clean. Cool in pans 5 minutes. Remove from pans and cool completely on wire racks. When loaves are cool, mix together ingredients for glaze and pour over loaves.
