I had some bananas sitting on the counter that needed to be baked into something, so I decided to make a cake. I didn't have any cream cheese to make a regular frosting, so I used the broiled frosting recipe my om had given me. Very easy, good flavors together. Makes a nice rustic presentation if you do it in layers. I included the cooling time in the prep time.

2 1/4 cups flour
1 1/2 cups sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup mashed banana (, about 3)
3/4 cup buttermilk
1/2 cup shortening
1 teaspoon vanilla
2 eggs
1 cup brown sugar
8 tablespoons butter or 8 tablespoons margarine, softened
4 tablespoons milk
1/2 cup chopped pecans
1 cup shredded coconut

Steps:

  • Mix the dry ingredients for the cake in a large bowl.
  • Add the banana, buttermilk and shortening, mix on medium with an electric mixer.
  • Add the eggs and vanilla, mix until well incorporated.
  • Pour batter into 1 9x13" pan which has been greased and floured, or 2 8" pans that have been greased and floured.
  • Bake at 350 for 35 minutes or until a cake tester comes out clean.
  • Remove cakes from oven and cool.
  • For 8" layers, cool 10 minutes in the pans, turn out onto racks and cool completely.
  • Frosting----------.
  • Mix the brown sugar with the butter until combined.
  • Add milk and mix until combine.
  • Add pecans and coconut.
  • For a 9x13 cake-------.
  • Cover the cake with the frosting mixture and put under a broiler for 3-4 minutes.
  • For the layer cake: Put the layers on a cookie sheet and spread each one with half of the frosting.
  • Broil for 3-4 minutes.
  • Let cool completely before assembling the cake.
  • This makes a very good, rustic looking layer cake.

3 medium ripe bananas, mashed
1 (8 ounce) can crushed pineapple in juice, drained and juice reserved, divided
¾ cup water
½ cup unsweetened applesauce
3 eggs
1 teaspoon coconut extract
1 (15.25 ounce) package yellow cake mix
1 cup sweetened flaked coconut
1 (3.5 ounce) package instant coconut cream pudding mix
¾ cup dark brown sugar
⅓ cup heavy cream
¼ cup butter
¼ cup dark rum

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a fluted tube pan (such as Bundt®).
  • Mix bananas, pineapple juice, water, applesauce, eggs, and coconut extract with an electric mixer until well combined. Add cake mix, coconut, and pudding mix; mix on medium speed for 2 minutes. Pour batter into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 45 to 50 minutes. Let cake cool in the pan.
  • Combine brown sugar, cream, and butter for the sauce in a saucepan. Bring to a boil. Add rum and crushed pineapple and boil, stirring occasionally, until it starts to thicken, 4 to 5 minutes. Set aside to cool down.
  • Poke holes all around the top of the cake still in the pan. Pour about 1/3 of the sauce over the cake with a spoon, trying not to get the pineapple during this stage. Place a serving plate on top of the cake pan and invert the cake, holding onto the pan and plate tightly. Pour remaining sauce and pineapples evenly over the cake. Let sit until cake has absorbed the sauce, about 30 minutes. Slice and serve.

½ cup coconut oil, melted
2 eggs, beaten

  • Combine coconut oil, eggs, and vanilla extract in a large bowl; whisk well to combine. Add flour, sugar, baking soda, cinnamon, and salt. Stir well until combined. Fold in bananas, pineapple, and coconut; stir until just blended. Pour batter evenly into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Cool in the pan for 10 minutes. Remove to a wire rack to cool completely.

3 cups all-purpose flour
2 cups granulated sugar
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon baking soda
3 eggs
2 teaspoons vanilla
1 cup canola oil (or vegetable oil or applesauce can be substituted)
4-5 ripe bananas, mashed (about 2 cups)
1 cup shredded sweetened coconut
1 (8 oz) can crushed pineapple, with juice reserved
1 cup powdered sugar

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl, combine the flour, sugar, salt, cinnamon, and baking soda. In another bowl, mix together the eggs, oil, and vanilla. Add in the pineapple, coconut and bananas and stir. Pour the wet ingredients in with the dry ingredients and mix until they are just barely combined- don't overmix. Pour the batter into two 8x4" greased loaf pans.
  • Bake for 65-75 minutes or until a toothpick inserted in the middle of the loaf of bread comes out clean. Let bread cool for 5-10 minutes before removing from pans and placing on a wire rack to continue cooling.
  • In a small bowl, mix together the reserved pineapple juice and powdered sugar. Drizzle over the top of the warm bread and enjoy!
