Tender meatballs get bursts of sweetness from orange marmalade and savory note from McCormick® Poultry Seasoning.

1 egg
1/4 cup milk
1/2 cup plain bread crumbs
1 teaspoon salt
1/2 teaspoon McCormick® Poultry Seasoning
1/4 teaspoon McCormick® Black Pepper, Ground
1 pound ground turkey
1 tablespoon olive oil
1/2 cup chicken broth
1 cup orange marmalade
1 tablespoon white wine vinegar
Pinch McCormick® Red Pepper, Ground

Steps:

  • 1. Beat egg and milk in large bowl. Stir in bread crumbs, salt, poultry seasoning and pepper. Add ground turkey; mix well. Cover. Refrigerate 1 hour. Shape into 1-inch meatballs.
  • 2. Heat oil in large skillet on medium heat. Place meatballs in single layer in skillet. Cook until well browned on all sides. Remove meatballs from skillet. Set aside.
  • 3. Mix orange marmalade, broth, vinegar and red pepper in skillet on medium heat. Bring to boil, stirring to release browned bits in bottom of skillet. Return meatballs to skillet. Reduce heat to medium-low; cook 10 minutes or until meatballs are cooked through and sauce has reduced to glaze consistency.

Instead of being simmered in a tomato sauce, the meatballs for these tasty sub sandwiches get tons of flavor from a tangy-sweet glaze made with balsamic vinegar and chicken broth. A splash of soy sauce gives the glaze a touch of umami while the melted provolone cheese and peppery arugula in the subs round out all the flavors.

1 1/4 pounds ground turkey
1/2 cup Italian-style dry breadcrumbs
1/2 cup parsley leaves, finely chopped, plus more for garnish
3 scallions, minced
3 garlic cloves, finely grated
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons extra-virgin olive oil
1 cup low-sodium chicken broth
1/3 cup balsamic vinegar
Splash of soy sauce or liquid aminos
4 hoagie or sub rolls, split
12 slices provolone
2 cups baby arugula (optional)
Freshly grated Parmesan or pecorino, for topping

Steps:

  • Combine the turkey, breadcrumbs, parsley, scallions, garlic, salt and pepper in a large bowl and mix well. Using a 2-tablespoon scoop, scoop lightly packed mounds of the mixture onto a plate or baking sheet, then roll them into neat balls.
  • Heat the olive oil in a large nonstick skillet over medium heat. Add the meatballs and cook, turning occasionally, until browned but not cooked through, 6 to 8 minutes.
  • Whisk the broth, vinegar and soy sauce together in a small bowl. Pour the mixture into the skillet with the meatballs and bring to a boil over high heat. Reduce the heat to medium and simmer, basting occasionally, until the meatballs are cooked through and the sauce has thickened, 8 to 10 minutes.
  • Meanwhile, preheat the broiler with a rack about 8 inches from the heat source. Arrange the split hoagie rolls on a large rimmed baking sheet and top each with 3 slices of provolone. Broil until the cheese is melted and the buns are lightly toasted on the edges, 1 to 2 minutes. Fill the rolls evenly with the arugula, if using, and the meatballs, spooning some of the sauce on the subs. Top with Parmesan or pecorino, sprinkle with parsley and serve.

¼ teaspoon poultry seasoning
½ teaspoon garlic salt
1 teaspoon onion powder
1 teaspoon salt
½ teaspoon ground black pepper
¼ teaspoon Worcestershire sauce
1 pinch cayenne pepper
1 large egg, beaten
¼ cup milk
½ cup plain bread crumbs
1 tablespoon olive oil
1 cup canned jellied cranberry sauce
½ cup orange marmalade
½ cup chicken broth
1 tablespoon minced jalapeno pepper
1 tablespoon minced Fresno pepper
1 pinch salt and ground black pepper to taste

Steps:

  • Mix the turkey, poultry seasoning, garlic salt, onion powder, salt, pepper, Worcestershire sauce, and cayenne pepper together in a bowl. Stir in the egg, milk, and bread crumbs. Cover with plastic and refrigerate for 1 hour.
  • Heat olive oil in skillet over medium heat. Roll the turkey mixture into balls, about one tablespoon each. Place the meatballs in a single layer in the skillet. Brown meatballs on all sides, flipping occasionally. Place browned meatballs on a clean baking sheet. Set aside.
  • Combine cranberry sauce, marmalade, and chicken broth over medium heat in the skillet used to cook the meatballs. Stir in the jalapeno and Fresno peppers, then return meatballs to skillet. Reduce heat to medium-low, and continue to cook until the meatballs are no longer pink in the center and glaze is reduced. Season with salt and pepper.

1/2 cup shredded pared tart apple
3/4 teaspoon salt
1/8 teaspoon garlic powder
2 teaspoons vegetable oil
1/2 cup apple jelly
2 tablespoons spicy brown mustard

Steps:

  • Combine turkey, apple, salt and garlic powder in a medium bowl.
  • Shape into 16 meatballs, about 1 1/2 inches in diameter.
  • Heat oil in a large skillet over medium heat.
  • Add meatballs; cook and turn until browned, about 8 minutes.
  • Stir together jelly and mustard in a small bowl; spoon over meatballs.
  • Simmer an additional 8-10 minutes or until glazed, turning meatballs several times.
  • Sauce will thicken as it cooks.

1 pound ground turkey
¼ cup corn flake crumbs
1 egg
3 scallions, chopped
1 tablespoon minced fresh ginger root
1 tablespoon low-sodium soy sauce
2 teaspoons sesame oil
1 teaspoon dried parsley
½ teaspoon salt
1 clove garlic, minced
2 tablespoons low-sodium soy sauce
2 tablespoons water
1 tablespoon chile-garlic paste (sambal oelek)
1 tablespoon palm sugar

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a large baking tray with cooking spray.
  • Combine turkey, corn flake crumbs, egg, scallions, ginger, soy sauce, sesame oil, parsley, salt, and garlic in a large bowl. Shape into 1-inch meatballs. Arrange on the prepared baking tray.
  • Combine soy sauce, water, chile-garlic paste, and palm sugar in a separate bowl to make the glaze.
  • Bake meatballs in the preheated oven until no longer pink on the outside, about 10 minutes. Coat the meatballs with the glaze. Continue baking until glaze thickens, 10 to 12 minutes.

1/4 cup dry bread crumbs
1 egg, beaten
1 Tbsp. LEA & PERRINS Worcestershire Sauce
1 clove garlic, minced
1 can (8 oz.) pineapple tidbits in juice, undrained
1/4 cup GREY POUPON Dijon Mustard
2 Tbsp. brown sugar
2 Tbsp. honey
2 tsp. cornstarch
1/8 tsp. ground ginger

Steps:

  • Heat oven to 350ºF.
  • Cover rimmed baking sheet with parchment; spray with cooking spray. Mix first 5 ingredients just until blended. Shape into 24 (1-inch) meatballs. Place on prepared baking sheet.
  • Bake 20 min. or until done (165ºF).
  • Meanwhile, drain pineapple, reserving juice. Add enough water to reserved juice to measure 1/2 cup. Place pineapple in small saucepan. Add pineapple juice and remaining ingredients; mix well. Cook on medium heat 5 min. or until thickened, stirring constantly. Remove from heat.
  • Thread meatballs and pineapple onto 24 skewers; brush with pineapple sauce.

  • Make the meatballs by combining all the meatball ingredients except the oil. Mix well, but don’t overwork the meat, or you’ll have tough meatballs. Scoop out about 1 tablespoon at a time, and roll them into balls. Set aside on a baking sheet. You can set these in the fridge for a few hours if you need to.
  • Pour enough oil into a pan to come about halfway up the side of the meatballs. Heat the oil to somewhere between 325°F and 350°F. Brown the meatballs well. You’ll probably need to do this in two batches.
  • When the meatballs are all nicely browned, drain the oil; you can reuse it later. Leave about 1 tablespoon in the pan. Mix all the glaze ingredients in a bowl to combine, then put the mixture into the pan and turn the heat to high. When it boils, add back all the meatballs. Roll the meatballs around to coat, and cook, shaking the pan constantly, until the sauce cooks down into a glaze. Remove from the heat and serve.
