No-bake, Two-Minute Hawaiian Pie is a tropical fruit pie that really does just take 2 minutes to put together. This recipe is everything you've been looking for in a tropical, no-bake dessert; it's easy, creamy, fruity, and SO delicious!

1 (20-ounce) can crushed pineapple in syrup, undrained
1 (6-serving-size) package instant vanilla pudding and pie filling
1 (8-ounce) container sour cream
1 (9-inch) prepared shortbread pie crust
1 (8-ounce) can sliced pineapple, drained and halved
8 maraschino cherries, drained
2 tablespoons sweetened flaked coconut

Steps:

  • In a large bowl, combine crushed pineapple with its syrup, dry pudding mix, and sour cream; mix until well combined. Spoon into pie crust and decorate top with pineapple slices and cherries; sprinkle with coconut.
  • Cover and chill at least 2 hours, or until set, before serving.

Cornstarch-thickened pudding, also known as cheater's pudding, creates the same thick, luscious texture as homemade custard with almost none of the fat. A coconut-milk beverage subbed in for regular milk lends a subtle tropical flavor in this classic Southern dessert.

2 cups coconut-milk beverage
1 tablespoon unsalted butter
1/4 cup sugar
2 tablespoons cornstarch
1 tablespoon pure vanilla extract
1/2 cup heavy whipping cream
2 medium bananas, sliced
1 cup chopped pineapple chunks
15 vanilla wafers
Toasted coconut flakes, for garnish

Steps:

  • Put the coconut milk and butter in a medium saucepan over medium-low heat, stirring gently to melt the butter and heat the milk.
  • Whisk together the sugar, cornstarch and 2 tablespoons water in a separate bowl to create a thick paste. Gently whisk into the milk and increase the heat to medium. Cook, stirring often, until thick and bubbly, 10 to 12 minutes.
  • Remove from the heat and stir in the vanilla extract. Let cool to room temperature, then transfer to a bowl and cover with plastic wrap, pressing the wrap directly against the surface. Refrigerate until set, 3 to 4 hours.
  • Beat the whipping cream with an electric mixer until stiff peaks form.
  • Arrange a layer of half of the banana slices on the bottom of a 9-inch pie dish. Add a layer of half the pineapple followed by half of the coconut pudding and a layer of half of the wafers. Top with some whipped cream and repeat to make a second layer.
  • Top with the remaining whipped cream and the toasted coconut flakes. Cover and refrigerate for at least 8 hours or up to overnight before serving.

Cook time is chilling time, and the prep time includes slicing all the fruit, which I usually do while chilling the pie.

1 prepared graham cracker crust
1 (4 5/8 ounce) package vanilla pudding mix, cook-and-serve, prepared, according to package
6 ounces custard-style vanilla yogurt
2 bananas, sliced and dipped in
lemon juice
2 kiwi fruits, sliced
1 cup strawberry, halved
2 tablespoons apricot preserves, melted

Steps:

  • Stir yogurt into pudding. Pour into pie crust.
  • Chill 2 hours.
  • Arrange banana slices around the outer edge of the pie, then the kiwis, then the strawberries.
  • Brush evenly with preserves.
  • Chill pie another 2 hours.

1 can (20 ounces) pineapple chunks
1 can (11 ounces) mandarin oranges
1 package (3 ounces) cook-and-serve vanilla pudding mix
1 cup sliced fresh strawberries
1/2 cup maraschino cherries
1 to 2 medium ripe bananas, sliced

Steps:

  • Drain pineapple and oranges, reserving juices in a 2-cup measuring cup; set fruit aside. Add enough water to juices to measure 1-1/2 cups. In a saucepan, whisk the juices and pudding mix. Cook and stir over medium heat until mixture comes to a full boil. Cool to room temperature, stirring occasionally., Fold in the strawberries, cherries and reserved pineapple and oranges. Cover and refrigerate. Just before serving, fold in bananas.

1/2 cup sliced peeled banana
1/2 cup diced peeled seeded papaya
Ground cinnamon

Steps:

  • Bring milk to simmer in heavy medium saucepan. Add coconut; remove from heat. Cover and let steep 20 minutes. Transfer to blender; purée until smooth.
  • Whisk sugar, cornstarch and salt in small bowl to blend. Add to same saucepan. Gradually whisk in coconut mixture then egg. Stir over medium heat until mixture boils and thickens, about 5 minutes. Remove from heat; cool slightly. Mix in vanilla. Cool completely. (Can be made 4 hours ahead. Cover; chill.)
  • Combine pineapple, banana and papaya in bowl. Divide half of fruit mixture among 4 wine glasses. Top with pudding then remaining fruit. Chill until cold, about 2 hours. Sprinkle with cinnamon.
