TROPICAL BANANA BREAD
Moist, tropical banana bread with the addition of pineapple and coconut! So yummy! I adapted several recipes to come up with this one. And, you don't need to use a mixer!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
- Combine coconut oil, eggs, and vanilla extract in a large bowl; whisk well to combine. Add flour, sugar, baking soda, cinnamon, and salt. Stir well until combined. Fold in bananas, pineapple, and coconut; stir until just blended. Pour batter evenly into the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Cool in the pan for 10 minutes. Remove to a wire rack to cool completely.

We love loaf breads at our house, and I make them a couple times a week...I have collected hundreds of loaf bread recipes over the years, here is another winner from my 5 star folder. (note: the dates can be replaced with raisins if desired)

Steps:
- set oven to 350 degrees.
- Grease a 9x5-inch loaf pan, or mini loaf pans.
- Sift together, the flour, sugar, baking powder and salt.
- Stir in coconut.
- Mix together the milk, egg and vanilla.
- Combine with the dry mixture.
- Mix in chopped dates and apples; mix well until combined.
- Spoon mixture into a prepared loaf pan.
- Bake for 1 hour and 15 minutes.

- In large mixing bowl, combine first 7 ingredients; mix well. Combine the flour, sugar, baking soda, cinnamon, nutmeg and baking powder; gradually add to pumpkin mixture and mix well. Stir in dates and pecans. Pour into two greased 9 x 5 x 3 inch loaf pans.
- Combine topping ingredients; sprinkle over batter. Bake at 350 for 55-65 minutes or until a toothpick comes out clean. Cool for 15 minutes before removing from pans to wire racks.

TROPICAL PINEAPPLE BANANA BREAD
Banana bread travels to the tropics with the addition of pineapple and macadamia nuts. Excellent with coffee in the morning or as a snack with a glass of milk in the afternoon. These loaves freeze well, too. Wrap tightly in plastic wrap, and wrap again in aluminum foil or a freezer bag.

- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 8 1/2x4 1/2 loaf pans.
- Beat sugar and butter in a large mixing bowl on medium speed until creamy, about 2 minutes. Add eggs, one at a time, beating after each addition until just combined. Stir in mashed bananas, crushed pineapple, and vanilla.
- Whisk flour, salt, baking soda, and cinnamon together in a separate bowl until well blended. Add macadamia nuts and stir until coated. Add flour mixture to the banana mixture; stir until just combined.
- Divide batter evenly between the prepared loaf pans.
- Bake in the preheated oven until a toothpick inserted in the centers comes out clean, about 1 hour and 10 minutes.
- Cool in the pans for 10 minutes, then remove to a wire rack and allow to cool completely, about 20 minutes longer.

- Bring milk almost to a simmer. Place oatmeal and dates in a large mixing bowl and add milk. Set aside to cool to room temperature. In another bowl, whisk together flour, baking powder, salt and sugar. When oat mixture is cool, beat in egg. Stir in dry ingredients, mixing well.

- Sift dry ingredients together.
- Dust dates with 1 T flour mixture, then add to the bowl.
- Then add the brown sugar, all bran, and grated lemon peel.
- Combine 3/4 cu buttermilk, 2 beaten eggs, 1/4 cup vegetable oil.
- Add all once to flour mixture with the sourdough starter, stirring until well moistened.
- Pour into greased or waxpaper lined loaf pan about 9 x 5-inches.
- Bake at 350 degrees for 1 hour.
- Allow to stand 10 minutes in pan and then remove from pan and cool until cold.
- Wrap in plastic wrap or foil and place in Refrigerator.
- Use cream cheese or home made butter on this bread for an out of this world taste.

- Place butter, sugars and dates to a metal mixing bowl. Pour the hot water over the mixture, and stir until combined. Let stand 10 minutes to enable the dates to soften.
- Whisk in the beaten egg, baking powder, salt, vanilla and cinnamon until well combined. Stir in the flour in small batches until incorporated. Fold in the apples and the walnuts.
