PULLED PORK SLIDERS AND SLIDER BAR
Steps:
- I recommend these pork recipes from the slow cooker or Instant Pot. Both recipes yield 8 cups pulled pork.*Make the pork, bbq sauce, and coleslaw a day in advance for optimal flavor and convenience.
- Put the SLAW, BBQ SAUCE, PICKLES, and FRENCH FRIED ONIONS in serving dishes and arrange on a large serving tray or baking sheet. Reserve a spot for the PULLED PORK serving dish. Pull SLIDER ROLLS apart and arrange them around the toppings.*pro tip - nest the cold toppings in bowls of crushed ice to keep them chilled.
- To serve, reheat the PULLED PORK in a heat-safe serving dish and fit it in the reserved spot on the tray.*tip: keep a backup of pork in the Instant Pot or slow cooker in 'keep warm' mode and refill the serving tray as needed.
- Build the sliders from the bottom up in assembly-line fashion.
- Start with the slider bottom, and layer upwards with mayo, bbq sauce, pork, more bbq sauce, coleslaw, pickles, French fried onions, more bbq sauce, and the slider top.
- Serve immediately.

PULLED PORK SLIDERS

- Preheat the oven to 225 degrees F. Set the pork on a cutting board and score the fat in a crosshatch pattern, making the cuts about 3/4 inch deep and 1 inch apart. Make the rub: Combine the pimenton, garlic powder, cayenne pepper, brown sugar, celery salt, mustard powder and 1 1/2 teaspoons salt in a small bowl. Massage it into the meat.
- Place the pork in a roasting pan and pour the beer into the pan. Cover with foil and roast 3 hours. Check it periodically to make sure everything is going along just fine, and turn the roast over every hour.
- Remove the foil and continue roasting until the pork has reached an internal temperature of 190 degrees F, about 1 1/2 more hours. Remove from the oven, cover loosely with foil and let rest 30 minutes.
- Sometime during the marathon cooking time, make the sauce: Combine the vinegar, garlic, chile, brown sugar, tomato paste, dijon mustard and 1 1/2 teaspoons salt in a small saucepan and bring to a boil. Taste it to make sure it is delicious; set aside. Remove the chile. When the sauce is cool, I recommend putting it in a squeeze bottle for easy use.
- Pull the pork into long shreds using 2 forks. Get rid of the fat and anything else that doesn't look delicious. Toss the pork with any residual pan juices and add salt to taste.
- Serve the pork on slider rolls with a drizzle of sauce; top with coleslaw.
ROASTED PORK SLIDERS

- For the roasted pork: Preheat the oven to 375 degrees F. Season the pork loin on all sides with the salt and pepper.
- In a small bowl, combine the coconut milk and BBQ sauce. Set aside.
- In a 10-inch cast-iron skillet over medium-high heat, add the canola oil and heat until the oil just starts to smoke. Add the pork to the skillet fat-side down. Sear on all sides until golden brown, 2 to 3 minutes per side. Set the pork aside on a plate.
- Stir in the onions and cook until softened and browned, about 2 minutes. Add the diced pineapple, then place the seared pork on top of the onions and pineapple. Pour some of the BBQ mixture over the pork, coating the top, then pour the rest around the skillet, stirring it into the onion-pineapple mixture as much as possible. Transfer the skillet to the oven and cook until the pork and onions are deeply caramelized, and the internal temperature of the pork reaches 145 degrees F, 35 to 40 minutes. Let rest 10 to 15 minutes.
- For the slaw: Combine the napa and red cabbage together in a bowl. Add the salt and toss. Stir in the Spicy Mayo, adding more if desired, to evenly coat the cabbage. Set aside.
- To assemble: Slice the pork into thin rounds, then cut the rounds in half to make half-moons. Season the pork slices with salt. Place a heaping tablespoon of the pineapple and onions on top of each bottom bun, followed by 2 to 3 half-moon slices of pork, then a heaping tablespoon of the slaw. Place the top buns over the slaw on each. Serve immediately.
- Combine the mayonnaise, coconut milk, sriracha and lime juice in a bowl and stir together until smooth. Store in the refrigerator until ready to use, up to a week.
TRIPLE SLIDERS

- Burgers:
- Heat 3 tablespoons of canola in a large pan over medium low heat. Add onion and cook until golden brown and caramelized about 15 to 20 minutes, making sure to stir every few minutes.
- Preheat the broiler.
- Form the ground beef into 12 equal-sized mini patties. Heat the remaining canola oil in a large skillet over medium-high heat. Season each side of the patties with the grill seasoning, put them into the skillet and cook for 3 minutes. Flip the burgers, top 4 with some of the blue cheese, the next 4 with 2 slices of Cheddar and the final 4 with 2 slices of mozzarella cheese. Put under the broiler until the cheese is melted, about 30 seconds.
- Roasted Red Pepper Ketchup:
- In a mini chopper or blender add the ketchup and roasted red peppers (reserve 1 red pepper to garnish the burgers). Blend until smooth. If the mixture is too thick and not blending well, add 1 or 2 tablespoons of the liquid from the jar of roasted red peppers. Set aside.
- Pesto Mayo:
- Combine the mayonnaise and pesto in a small bowl. Set aside.
- Assembly: Slice the reserved red pepper into 4 pieces to garnish the Cheddar burgers. Put the burgers on the bottom halves of each bun. Top the 4 cheddar burgers with the pieces of red pepper, some of the ketchup and cover with the top half of the rolls. Top the 4 mozzarella burgers with some of the pesto mayo and cover with the top half of the rolls. Finally, top the blue cheese burgers with the caramelized onions and cover with the top half of the rolls. Arrange them on a serving platter and serve immediately.

- Make Bacon Roses: Heat oven to 375º F. Place a wire rack over a baking sheet, place half strips of bacon shaped into pinwheels ("roses") onto rack. Sprinkle tops with pepper and bake until crispy, about 20 - 25 minutes. Remove and let rest. *If making ahead, place into paper towel-lined container, cover, and refrigerate.
- Make Sauce: While bacon is baking, add all sauce ingredients to a small or medium saucepan, whisk to mix. Heat over medium heat, stirring, until simmering, simmer one minute until thickened. Remove from heat. Set aside.
- Make Burgers: Add ground pork to large bowl, crumbling in. Sprinkle with green onion, ground gingersnaps, garlic and pepper, drizzle with soy sauce and sriracha. Lightly but thoroughly mix together with hands until combined but not over mixed. Shape into small patties, sprinkle tops with pepper to taste. In large frying pan, add 3 - 4 Tbl. canola or vegetable oil and get hot. Turn down to medium-low heat and add 5 to 6 of the patties to the pan peppered side down. Sprinkle tops lightly with more pepper. Fry patties over medium-low heat for 5-6 minutes *per side* until very deep golden browned and caramelized on the outside. Remove patties to a plate after each batch, rinse out pan, wipe clean, and repeat until all are cooked.(*Don't forget the oil! Or they will stick, even to a non-stick pan.). *When almost done, top with swiss cheese pieces. Remove to a wire rack placed over a baking sheet, keep warm in a low oven if desired. These can also be rewarmed in the microwave.
- Make Onions: Slice onion(s) very thinly, toss with rest of ingredients. Heat 2 inches of oil in medium saucepan or frying pan. When oil is hot, drop coated onions into oil and fry until golden, remove to rack. (Can be done in batches.)
