Another Vegemite find from Kraft, something different for the kids lunch box............and maybe big kids even!

Number Of Ingredients 8

2 slices wholemeal bread
1 slice white bread
butter, for spreading
tomatoes, slices
20 g sliced ham
1 teaspoon vegemite
lettuce leaf
20 g light cream cheese spread

Steps:

  • Spread one slice of wholemeal bread with a little butter.
  • Top with tomato and ham.
  • Spread the white bread on one side with a little butter and the Vegemite then place vegemite side down over the ham.
  • Top the white bread with the lettuce.
  • Spread the remaining wholemeal slice with cream chees and place spread side down over the lettuce.
  • Cut the sandwich into 3 fingers and serve cut side up.
  • Wrap in glad wrap to keep sandwhich .

Number Of Ingredients 10

2/3 cup pecan pieces
1/3 cup plain dry bread crumbs
Salt and freshly ground pepper to taste
4 skinless, boneless chicken breast halves
2 large eggs, beaten
Nonstick cooking spray
12 slices Pullman or other fresh bread
1/2 cup Creole Aioli (see recipe)
1/2 cup Onion Jam (see recipe)
8 leaves arugula

Steps:

  • Preheat oven to 400 degrees. In a food processor, combine pecan pieces, bread crumbs, salt and pepper. Dip cutlets into beaten egg, then coat with bread crumbs.
  • Cover a baking sheet with parchment paper. Spray. Place breaded cutlets on top. Bake until golden, about 15 minutes. Remove and set aside at room temperature.
  • Assemble the sandwich: Spread about 1 1/2 tablespoons creole aioli on a slice of bread. Cut 1 chicken cutlet diagonally into 4 wide, thin slices. Place 2 slices on the aioli and spread with about 1 tablespoon of onion jam. Cover with a second slice of bread. Top with remaining 2 slices of chicken, 2 leaves of arugula and a third slice of bread. Repeat.

Flipping the pages of my new EVERYDAY with Rachael Ray (May/2009) There it is....my favorite salad on bread!! I made a couple of additions.... Could it get any better?? :)

Number Of Ingredients 10

12 ounces bacon, thick cut
1 1/2 lbs chicken breasts, boneless and skinless
1 avocado, halved and pitted
1/4 teaspoon cayenne pepper (my addition)
2 tablespoons fresh lemon juice
1/3 cup mayonnaise
12 slices whole wheat bread
2 cups Baby Spinach
1 1/2 cups strawberries, hulled and sliced
1/2 red onion, sliced paper thin (my addition)

Steps:

  • In a large skillet, cook the bacon over med heat until crisp; drain on paper towels.
  • Pour off the fat from the skillet and heat the pan over med heat.
  • Season the chicken with salt, pepper and cayenne, add to pan, partially cover and cook, turning once, until golden on both sides and jus cooked through about 10 minutes, let rest for 5 minutes, then thinly slice.
  • Meanwhile using a food processor, puree the avocado with lemon juice.
  • Transfer to a bowl, stir in the mayo, then season with salt and pepper.
  • Spread 1 tbls avocado mixture on each slice of toast.
  • Divide the chicken among 4 toast slices and top each with 1/4 of the bacon.
  • Cover each stack with a toast slice, avocado side down.
  • Spread more avocado on top, then layer each stack with some spinach, strawberries, red onion and one of the remaining toast slices.
  • Cut each sandwich into quarters.

Very good and very tasty. Deli fresh meat, fresh garden tomatoes, crisp lettuce, fresh toasted bread with crisp bacon with a touch of basil and a touch of Miracle Whip topped with a slice of cheese--a sandwich lover's dream come true.

3 slices toasted bread
Miracle Whip
sliced deli chicken breast
fresh lettuce
4 slices cooked crisp bacon
3 slices fresh tomatoes
1 slice American cheese
basil

Steps:

  • Cook bacon.
  • Toast bread.
  • Spread Miracle Whip on toast slices.
  • Sprinkle a little dried basil on the Miracle Whip on the toast slices.
  • On the first slice of toast add the chicken breast slices; add lettuce on top of chicken.
  • Add second piece of toast with the Miracle Whip side up; add bacon slices, add cheese slice, and add more lettuce. Top with tomatoes.
  • Put third slice toast Miracle Whip side down.
  • Cut sandwich in half; serve and enjoy.

8 strips applewood smoked bacon
1 lb boneless skinless chicken breast
1 teaspoon sea salt
1/2 teaspoon ground black pepper
1 1/2 teaspoons wasabi powder
1 teaspoon lemon juice
1/2 cup mayonnaise
12 slices thin pullman bread, toasted
1 bunch watercress
1/4 red onion, sliced into rings
1 medium beefsteak tomato

Steps:

  • Heat oven to 350 degrees F.
  • Fit a wire rack on a baking pan and place bacon strips in a single layer. Bake for 20 minutes, turn bacon strips, and continue to cook until brown and just crisp -- about 5 minutes more. Transfer bacon to a paper towel-lined plate to drain excess grease.
  • Season the chicken on both sides with salt and pepper and place on a lightly oiled baking pan. Bake for 10 minutes at 350 degrees F, turn the meat over, and continue to bake until internal temperature at the center of the breast reaches 167 degrees F -- about 15 minutes more. Transfer chicken to a cutting board and let the meat rest for 15 minutes before slicing into 1/2-inch-thick strips.
  • Stir wasabi powder and lemon juice together until a paste forms. Blend in the mayonnaise, and evenly spread on the toasted bread. Place the watercress, chicken slices, and red onion on bread. Cut the beefsteak tomato into eight 1/4-inch-thick slices. Top with a slice of toast, then layer tomato and bacon. Top with remaining slices of bread, insert toothpicks, and cut into quarter triangles. Serve sandwiches immediately.
