BEEF MEXICAN TRASH
This cheesy taco-flavored ground beef casserole may not look pretty, but it's outrageously delicious!

Steps:
- Preheat oven to 350 degrees F. Lightly spray a 9x13-inch baking pan.
- Brown ground beef; drain any fat.
- In a large bowl, mix the browned beef, 2 cups cheese, cheddar cheese soup, Rotel tomatoes, sour cream, milk and taco seasoning.
- Place 1/2 of the crushed tortilla chips in the prepared baking dish. Spread 1/2 of the ground beef mixture over them. Spread the other 1/2 of the tortilla chips on top, then spread the remaining beef mixture over the top.
- Top with additional cheese (amount depends on your taste).
- Cover with foil and bake for 35-40 minutes.

SCRUM-DELICIOUS BURGERS
I'm not sure where this recipe originated, but it's one of my family's summertime favorites. I usually serve these juicy mushroom burgers when we have company. - In a large bowl, combine the beef, onion, garlic salt and pepper. Shape into 6 patties, 3/4 in. thick. , In a small bowl, combine the cheese, mushrooms, bacon and mayonnaise; chill., Grill burgers, covered, over medium heat until a thermometer reads 160°, 5-7 minutes on each side. During the last 3 minutes, spoon 1/4 cup of the cheese mixture onto each burger. Serve on buns, with lettuce and tomato if desired.

WHITE TRASH HAMBURGER GRAVY AND BREAKFAST BISCUITS
This was my sister's favorite thing to eat when she was growing up. She wouldn't let anyone but me make it for her.

Steps:
- Cook and drain beef. (I rinse the beef under hot water to remove all of the grease -- it is rich enough!).
- Melt butter in a pan and when melted and lightly sizzling add the flour.
- Whisk until combined and gently simmer the butter/flour mixture for about two minutes to remove the flour/starch taste but don't let it brown any.
- Add the 1.5 cups of milk and quickly whisk until smooth. SImmer until thick over medium heat stirring constantly. It will be quite thick.
- Add the half and half cream and quickly whisk until smooth.
- Cook over low heat until thickened.
- Add the beef and adjust the seasonings.
- Serve over good biscuits well buttered.
- This is a very creamy and rich gravy. You may use 2 cups whole milk if you need to omit the cream.
- If it is too thick for your taste -- then dilute with more milk -- but it usually is perfect the way it is written.
- Leftovers are excellent.

MEXICAN TRASH CASSEROLE

- Make your according to package instructions. Set aside
- Brown your ground beef (or meat of your choice) until it is fully cooked. Add taco seasoning and minced garlic. Stir to combine, then set aside.
- Preheat your oven to 400°F
- Begin your casserole by starting with an 8 x 8 pan that has been greased. Add your first layer of prepared rice, then add your black beans that have been rinsed and drained, next add your canned corn that have been drained. Your next layer will be your ground beef mixed with taco seasoning and garlic. Then spread your mini sweet peppers and Roma tomatoes over the top. Sprinkle on some shredded cheese of your choice, and top with some dried cilantro flakes. Bake for 15-20 minutes, or until the cheese is melted, and your casserole is warmed all the way through.
- When you serve this, top with a dollop of sour cream and fresh guacamole serve with your favorite tortilla chips. Serve while hot and enjoy!
BACON CHEESEBURGER GARBAGE BREAD

Don't forget the special sauce!

- Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
- Heat a large skillet over medium heat. Add the beef and cook, stirring to break it up into small crumbles, until cooked through, 8 to 10 minutes. Meanwhile, roughly chop half of the cheese, leaving other half as slices. Set aside.
- Using a slotted spoon, remove the beef from the skillet and transfer to a large bowl; discard the fat and liquid in the pan. Let the beef cool completely in the bowl, then stir in the chopped cheese.
- On a lightly floured work surface, roll the dough into a 20-by-14-inch rectangle. Arrange the beef and cheese mixture evenly on one half of the dough, starting on the shorter end and leaving a 1-inch border on the sides. Drizzle 2 tablespoons ketchup evenly over the beef mixture and the uncovered half of the dough; repeat with all the mustard, and then the red onion. Lay down the remaining cheese slices evenly over the half of the dough with no beef mixture, leaving a 1-inch border on the sides. Arrange the bacon pieces and 24 dill pickle chips just over the beef mixture.
- Working from the short side with the beef mixture, tightly roll up the dough into a log, jelly-roll style. Pinch the open ends together to seal, then tuck them underneath the log. Transfer the log, seam side-down, to the prepared baking sheet, brush all over with water and sprinkle with sesame seeds. Bake, rotating the pan halfway through, until the bread is golden brown, about 40 minutes.
- While the bread bakes, whisk together the mayonnaise, onion flakes, sugar, a pinch of salt and pepper and the remaining 3 tablespoons ketchup, 2 tablespoons finely chopped dill pickle chips and 1 teaspoon pickle brine in a small bowl. Taste, and season the special sauce with additional salt if needed. Let the bread cool for 10 minutes. Slice into 8 pieces and serve warm with the special sauce.
THE GARBAGE PLATE (BURGER VERSION)
If you are from the Rochester area that phrase would make your mouth water. This is any drunk college kids best friend. It is a mixture of meat, carbs, and more carbs piled onto a foam container found in Nick Tahou's and "hots" food joints all over the Rochester area. For about 6 bucks (including tip) you get this plate plus a soda, not too shabby. They have a veggie version, fish, and my favorite--the white hot version. When I left the Rochester to go to school the first thing I would do when I came home was got to a "hots" and order a garbage plate. Also dont expect to finish this unless you are drunk. For more info on this delicious dish go to wikipedia.org and search garbage plate. (I put the direct link on here before but it messed up the rest of the recipe for some reason, so youre gonna have to do it the hard way lol) Also times are approx. if you make your own sauce or not. Also to speed things up I use Recipe #226112 for the potatoes. This recipe is scaled to one, but it can really feed at least four people.... but whats the fun in sharing a garbage plate??

- TO MAKE SPECIAL SAUCE:.
- In large skillet fry chopped onion and garlic in oil until soft. Add meat, stirring constantly with fork to keep its texture fine.
- Once meat is cooked add water and tomato paste, cook for 10 minutes.
- Then add sugar and spices. Cook 30 minutes, adding water if needed.
- ASSEMBLY:.
- Mix together the noodles, mayo, celery, seasoning, and carrots and place into a large square foam container (or plate, but not as authentic).
- Fry potatoes in butter until very crispy then put next to mac salad on plate.
- Place OPTIONAL beans of plate if needed.
- Cook hamburger until well done and top with sliced cheese.
- Then place burgers ON TOP of the mac salad and home fries.
- Mix together about equal parts mustard and horseradish and pour on top of burgers and top with optional onions.
- Pour hot sauce or VERY LARGE spoonfuls of special sauce and a HUGE glob of ketchup over burgers (some like to stir everything together so its one huge mess).
- Eat with plastic fork, or just use the bread as a spoon and try not to pass out. This should take about an hour to finish.
- YUM, every drunk college kids dream food.

- Place a 9-in. cast-iron skillet over medium heat. Meanwhile, gently shape beef into 4 balls, shaping just enough to keep together (do not compact). , Increase burner temperature to medium-high; add oil. Working in batches, add beef. With a heavy metal spatula, flatten to 1/4- to 1/2-in. thickness; sprinkle each with 1/8 teaspoon salt and pepper. Cook until edges start to brown, about 1-1/2 minutes. Turn burgers and sprinkle with additional 1/8 teaspoon salt and pepper. Cook until well browned and a thermometer reads at least 160°, 1 minute.
