Another cookie jar mix posted by request. I have not yet made this recipe. Times are guesstimates for preparing the jar mix. This recipe originates from the "Gifts for the Cookie Jar" cookbook.

1/2 cup packed brown sugar
1/4 cup sugar
1 cup quick-cooking oats
1 cup flour
1/2 teaspoon baking powder
1/8 teaspoon baking soda
1/2 cup raisins
1/2 cup coconut
1/2 cup M&M's plain chocolate candy
1 egg
6 tablespoons butter, softened

Steps:

  • *Jar Mix Instructions*.
  • In 1-quart jar, pack brown sugar on bottom and level.
  • Pour sugar in jar and level.
  • Pour oats in jar and level.
  • In small bowl, combine flour, baking powder and baking soda, mixing well.
  • Spoon flour mixture into jar and level.
  • Sprinkle in raisins, leveling as necessary.
  • Sprinkle coconut over raisins and level.
  • Sprinkle M&M's and place lid on jar.
  • *Preparation Instructions*.
  • Preheat oven to 375 degrees Fahrenheit.
  • Empty jar contents into large bowl.
  • Add egg and butter.
  • Beat on low speed to blend.
  • Drop heaping teaspoonfuls onto ungreased cookie sheet.
  • Bake 10- 12 minutes or until edges are lightly browned.
  • Cool on cookie sheet for 1 minutes, then transfer to cooling rack.

¼ cup almonds
¼ cup dried cranberries
¼ cup shelled roasted peanuts
¼ cup candy-coated milk chocolate pieces (such as M&M's®)
1 cup rolled oats
¾ cup all-purpose flour
½ cup brown sugar
½ teaspoon baking soda
½ teaspoon salt
½ cup butter, softened
¼ cup honey
1 egg
½ teaspoon vanilla extract

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line 2 cookie sheets with parchment paper.
  • Mix almonds, cranberries, peanuts, and candy pieces together to make trail mix.
  • Mix oats, flour, brown sugar, baking soda, and salt together in a large bowl. Beat in butter, honey, egg, and vanilla extract using an electric mixer or wooden spoon until dough is thoroughly combined. Fold in trail mix.
  • Drop tablespoonfuls of cookie dough onto the prepared cookie sheets.
  • Bake in the preheated oven until edges are set and bottoms of cookies are golden brown, about 8 minutes. Cool on wire racks.

I was determined to make a tasty, guilt-free cookie and I am very pleased with how these turned out. They're not very sweet but have a subtle flavor of applesauce and cinnamon mixed in with chocolate chips, nuts, and dried cranberries.

½ cup applesauce
½ cup white sugar
½ cup brown sugar
1 ½ teaspoons vanilla extract
2 egg whites
1 ¼ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
¾ teaspoon ground cinnamon
1 ¼ cups quick cooking oats
½ cup semisweet chocolate chips
½ cup chopped walnuts
⅓ cup dried cranberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 2 baking sheets.
  • Beat applesauce, white sugar, brown sugar, and vanilla in a large bowl. In another bowl, use an electric mixer to beat egg whites until they are frothy and begin to firm up. Fold egg whites into applesauce mixture. Combine the flour, baking soda, salt, and cinnamon. Fold into the egg mixture. Stir in the oats, chocolate chips, walnuts, and cranberries. Drop by heaping teaspoons on prepared baking sheets.
  • Bake cookies in preheated oven until set and lightly browned, about 10 minutes. Remove immediately to wire racks to cool.

This cookie gets its name from the West Coast Trail on Vancouver Island. It's my adaptation of the perfect nut-free trail cookie that's been our family's favorite chewy oatmeal cookie for 10 years. Loaded with choco-chips and dried cranberries. The flax seed meal and pumpkin seeds give them a nutty taste, without the nuts. Perfect for school kids or those with allergies.

1 cup unbleached all-purpose flour
½ cup whole wheat flour
⅓ cup flax seed meal
1 teaspoon ground cinnamon
½ teaspoon baking soda
¼ teaspoon salt

½ cup white sugar
2 eggs
2 teaspoons vanilla extract
2 cups rolled oats
1 cup semisweet chocolate chips

¾ cup unsweetened shredded coconut
½ cup coarsely chopped pumpkin seeds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
  • Whisk together all-purpose flour, whole wheat flour, flax seed meal, cinnamon, baking soda, and salt in a bowl.
  • Beat together butter, brown sugar, and white sugar in a large bowl until smooth and creamy; Stir in eggs and vanilla. Stir flour mixture into creamed butter mixture until dough is just combined. Fold oats, chocolate chips, cranberries, coconut, and pumpkin seeds into dough just until evenly combined.
  • Shape dough into 1 1/2-inch balls or drop by heaping tablespoonfuls onto the prepared baking sheets about 2 inches apart; press to flatten slightly.

Trail Mix Cookie mix in a jar with tag attached with directions on how to prepare the mix. These make wonderful gifts to give any time of year and also for wedding favors, hostess gifts, baby showers or take to a cookie exchange and make sure to bake some up so people know what they taste like to. Store in a cool dry place away from a heat source so condensation and clumping does not occur. Enjoy!

½ cup packed brown sugar
½ cup white sugar
¾ cup wheat germ
⅓ cup quick cooking oats
1 cup raisins
⅓ cup flaked coconut

Steps:

  • Layer ingredients in order given in a quart ''wide mouth'' canning jar. Mix the flour together with the baking powder. Press each layer firmly in place, it will be a tight fit.
  • Attach directions to jar: Trail Mix Cookies 1. Empty jar of cookie mix into large mixing bowl. Use your hands to thoroughly blend mix. 2. Add: 1/2 cup butter or margarine, softened at room temperature. DO NOT USE DIET MARGARINE. Mix in 1 egg, slightly beaten and 1 teaspoon vanilla. 3. Mix until completely blended. You will need to finish mixing with your hands. 4. Shape into walnut sized balls and place 2 inches apart on a sprayed cookie sheets. 5. Bake at 350 degrees F (175 degrees C) for 12 to 14 minutes until edges are lightly browned. Cool 5 minutes on baking sheet. Remove cookies to racks to finish cooling. Makes 2 1/2 dozen cookies.

3/4 cup wheat germs
1/3 cup quick oats
1 cup raisins
1/3 cup firmly packed flaked coconut
1/2 cup pecans
3/4 cup flour
1 teaspoon baking powder

Steps:

  • Mix flour and baking powder together.
  • Layer ingredients in order given in a 1 quart "wide mouth" canning jar. Press each layer firmly in place before adding next ingredient.
  • On a card write the following directions:
  • 1. Empty jar of cookie mix into large mixing bowl. Use your hands to thoroughly blend mix.
  • 2. Add: 1 stick butter or margarine, not diet, very soft; 1 egg, slightly beaten; 1 teaspoon vanilla (opt)
  • 3. Mix until completely blended. You will need to finish mixing with your hands.
  • 4. Shape into balls the size of walnuts. Place 2" apart on sprayed baking sheets.
  • 5. Bake at 350 degrees F for 12-14 minutes until edges are lightly browned. Cool 5 minutes on baking sheet. Remove cookies to racks to finish cooling.
