- Put pineapple chunks, diced cheese, and miniature marshmallows in a bowl and set aside. Use the juice from the can of pineapple. Put the juice, sugar, egg, and cornstarch in a pan over medium heat. Stir constantly until mixture thickens. Pour immediately over pineapple chunks, marshmallows, and cheese. This will slightly melt the cheese and marshmallows and blend the flavors. Add nuts and chill

- Combine pineapple cheese and marshmallows in bowl. For Sauce: In small pan mix; sugar, flour, pinch of salt. Add egg and mix. Combine vinegar and water and add slowly to egg mixture. Add butter, cook over medium heat until thick. Pour over pineapple, marshmallow and cheese. Chill.

All the ingredients in this recipe say "turn around and run!" But it is so good. It is comfort food from my childhood. It is sweet, salty, and creamy. Reminds me of going to Grandma's after church.

Steps:
- 1. Pour drained pineapple chunks, marshmallows, nuts, and velveeta cubes into a bowl and toss to combine. Set aside.
- 2. Mix reserved pineapple juice, sugar, and cornstartch in a small saucepan. Beat in eggs. Cook until thick. Add butter.
- 3. Pour hot mixture over pineapple and marshmallows and cheese. Stir just to combine. Cool completely.
- 4. Whip cream until soft peaks form. Fold into cooled pineapple and cheese mixture. Chill for a few hours before serving.
PINEAPPLE AND CHEESE SALAD
Don't be turned away by the title, this is the most delicious, decadent salad. It's almost dessert. My Grandmother created this and passed it down to me. My co-workers have come to love it and my kid's friends all beg me to make it when they come over to the house. It's also a fav for holiday dinners!

Steps:
- Drain the pineapple rings reserving all the syrup. In a small saucepan combine sugar, flour, beaten eggs and reserved syrup from the can of pineapple rings. Cook the mixture over medium high heat stirring constantly until thickened. Remove from heat and allow sauce to cool completely.
- Cut pineapple rings into bite-size pieces. Stir completely cooled sauce, pineapple pieces, cheese pieces and mini marshmallows together until everything is well coated with sauce. Refrigerate until serving.
