1/2 cup vegetable oil
8 stale 12 inch flour tortillas, torn in 1 inch pieces
2 1/2 tablespoons chili powder blend, or to taste
1/2 teaspoon sea salt, or to taste

Steps:

  • In a cast iron skillet, heat the oil to the smoking point, then add the tortilla pieces and fry them. Turn them often, until they are crisp and evenly colored. Transfer chips to a towel-lined sheet pan. Drain the oil and lower the heat. Sprinkle the chili powder and salt over the tortilla pieces. Cook, 1 to 2 minutes, tossing constantly. Cool on paper towels to absorb any excess oil.

A healthier way to make tostadas and better tasting. The simple secret to making crispy tostadas is baking the corn tortillas instead of frying.

½ teaspoon garlic salt
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon ground cumin, or to taste
¼ teaspoon ground black pepper
½ pound ground beef
½ cup chopped sweet onion, or more to taste
1 clove garlic, minced
6 corn tortillas
2 tablespoons vegetable oil
2 cups refried beans
2 cups shredded lettuce, or as desired
1 ½ cups shredded Cheddar cheese
1 tomato, diced

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Mix garlic salt, onion powder, garlic powder, cumin, and black pepper together in a small bowl.
  • Heat a large skillet over medium-high heat. Cook and stir beef, onion, and garlic in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Keep warm while preparing tostada shells.
  • Brush oil over both sides of tortillas and arrange on a baking sheet.
  • Bake tortillas in preheated oven until crisped on top, about 5 minutes. Flip tortillas and continue baking until other side crisps, 2 to 3 minutes more.
  • Heat refried beans in a saucepan over medium-low, stirring regularly until hot, about 5 minutes (see Cook's Note).
  • Divide refried beans between tostadas and spread over one side of each; spoon ground beef mixture over the beans. Top each tostada with lettuce, Cheddar cheese, and diced tomato.

1 teaspoon vegetable oil
1/4 cup finely chopped yellow bell pepper
1/4 cup sliced green onions (4 medium)
1/4 cup finely chopped poblano chile
1 package (8 oz) salad-style imitation crabmeat, finely chopped
1/2 cup shredded pepper Jack cheese (2 oz)
1/4 cup Old El Paso™ Thick 'n Chunky salsa
1/2 bag (10-oz size) bowl-shaped white corn tortilla chips (54 chips)
1/3 cup crumbled cotija or feta cheese (about 1 1/2 oz)
1/2 ripe medium avocado, pitted, peeled and cut into 54 small slices

Steps:

  • Heat oven to 375°F. In 10-inch skillet, heat oil over medium-high heat. Add bell pepper, onions and chile; cook 3 to 4 minutes, stirring frequently, until soft. Remove from skillet; place in medium bowl. Stir in imitation crabmeat, pepper Jack cheese and salsa until well mixed.
  • Place tortilla chips, hollow side up, on ungreased large cookie sheet. Spoon 1 heaping teaspoon crabmeat mixture into each chip. Top each evenly with cotija cheese.
  • Bake 6 to 8 minutes or until pepper Jack cheese in crabmeat mixture is melted. Place on serving plate; garnish each with avocado slice.

Vegetable oil (for frying)
20 4-inch-diameter corn tortillas (cut from larger corn tortillas, if necessary)
3 tablespoons olive oil
2 small poblano chilies,* thinly sliced
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 cup thinly sliced onion
4 garlic cloves, thinly sliced
1 teaspoon minced seeded jalapeño chili
3/4 pound crabmeat, coarsely flaked
1/2 cup seeded chopped tomatoes
1/2 cup crumbled Cotija or feta cheese
1/3 cup coarsely chopped toasted pumpkin seeds (pepitas)
1/4 cup coarsely chopped fresh cilantro
1 tablespoon fresh lime juice
1 large avocado, halved, pitted, peeled, diced
1 cup grated Monterey Jack cheese

Steps:

  • Heat enough vegetable oil in heavy large skillet over medium-high heat to reach depth of 1 inch. Working in batches, add tortillas and fry until crisp, about 45 seconds per side. Transfer to paper towels to drain. (Fried tortillas can be made 1 day ahead. Cool tortillas completely and store in resealable plastic bag at room temperature.)
  • Heat olive oil in heavy large skillet over medium heat. Add poblano chilies, bell peppers, onion, garlic, and jalapeño; sauté until just beginning to soften, about 12 minutes. Transfer to large bowl; cool.
  • Mix crab, tomatoes, Cotija cheese, pumpkin seeds, cilantro, and lime juice into vegetable mixture. Season with salt and pepper. (Crab mixture can be made 4 hours ahead. Cover and chill.)
  • Preheat broiler. Place tortillas in single layer on 2 baking sheets. Top with crab mixture and avocado. Sprinkle with Monterey Jack cheese. Broil until cheese melts, about 30 seconds, then serve.
  • *Fresh green chilies that are often called pasillas; available at Latin American markets and some supermarkets.
