1 package (19 ounces) frozen cheese tortellini
1 pound sliced fresh mushrooms
1 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon pepper
1/2 cup butter, divided
1 can (12 ounces) evaporated milk
1/2 pound brick or Muenster cheese, cubed
3 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
2 cups shredded part-skim mozzarella cheese

Steps:

  • Preheat oven to 350°. Cook tortellini according to package directions. , Meanwhile, in a large skillet, saute mushrooms, garlic powder, onion powder and pepper in 1/4 cup butter until mushrooms are tender. Remove and keep warm. , In same skillet, combine milk and remaining butter. Bring to a gentle boil; stir in brick cheese until smooth. Drain tortellini; place in a large bowl. Stir in mushroom mixture and spinach. Add cheese sauce and toss to coat. , Transfer to a greased 13x9-in. baking dish; sprinkle with mozzarella cheese. Cover and bake 15 minutes. Uncover; bake 5-10 minutes longer or until heated through and cheese is melted.

1 bag fresh ravioli (or tortellini) stuffed with four cheeses (or flavor of your choice)
1 large can marinara sauce (or make your own, about 2 to 3 cups)
Mozzarella cheese (shredded) or cheese of your choice
1 bag fresh spinach (baby spinach isn't necessary) about 2 pounds.
Olive oil
2 large garlic cloves

Steps:

  • Cook the pasta, according to package directions, in heavily salted boiling water (this is your only chance to season the pasta properly). For the spinach(optional): Heat just enough olive oil to coat the bottom of a skillet, about 1 Tablespoon. Add two cloves of peeled fresh garlic and cook at low heat-- for 5-10 minutes. The idea is to infuse the flavor of the garlic into the oil. Add one bag (about 2 pounds) of fresh spinach into the pan of oil and turn the heat to medium. The spinach will look like a LOT, but it will wilt down and shrink as it cooks-- about 5-10 minutes. Remove the garlic cloves and set aside. In an oven-proof pan, pour a layer of marinara sauce to coat the bottom. Add the drained pasta, and the cooked spinach. Add a layer of cheese. Repeat, if there is enough to do so. Bake at 350°F for about 20 minutes, or until the sauce is bubbly and the cheese is melted. Garnish with freshly grated Parmesan cheese.

1/3 cup refrigerated basil pesto
1 jar (15 oz) Alfredo pasta sauce
1/4 cup vegetable or chicken broth
1 package (25 oz) frozen cheese-filled ravioli (do not thaw)
1 cup shredded Italian cheese blend (4 oz)
Chopped fresh basil leaves, if desired
Paprika, if desired

Steps:

  • Heat oven to 375°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray.
  • In medium bowl, toss spinach and pesto. In another bowl, mix Alfredo sauce and broth. Spoon one-third of sauce mixture (about 1/2 cup) into baking dish. Top with half of spinach mixture. Arrange half of ravioli in single layer over spinach mixture. Repeat layers. Top with remaining sauce mixture.
  • Bake uncovered 30 minutes. Sprinkle with cheese. Bake 5 minutes longer or until bubbly. Garnish with basil and paprika.

Steps:

1 1/2 lbs ground beef or 1 1/2 lbs turkey
1 tablespoon roasted garlic grapeseed oil
1 tablespoon spices (Wildtree Hot & Spicy Fra Diavolo Blend)
1 tablespoon crushed garlic
28 ounces crushed tomatoes
6 ounces tomato paste
2 tablespoons spices (Wildtree Hot & Spicy Fra Diavolo Blend)
1/2 teaspoon salt
16 ounces o frozen 3 cheese tortellini
8 ounces shredded mozzarella cheese

Steps:

  • Preheat oven to 400.
  • Heat a large skillet over medium high heat. Add ground beef or turkey, grapeseed oil, 1 T fra diavolo blend and garlic to skillet.
  • Brown approximately 5-7 minutes. Drain off any excess grease from the ground beef.
  • Add the tomato sauce bag contents to the ground beef skillet. Stir. Simmer uncovered approx 7-8 minutes.
  • In a 2 quart casserole pan, layer tomato meat sauce, frozen tortellini (yes, bake from frozen!), and mozzarella cheese, finishing with a layer of tomato sauce and then cheese. Bake COVERED at 400 for approx 30 minutes, or until center of lasagna is hot. Uncover and cook an additional 5-7 minutes to slightly brown the cheese on top.
  • Serve with salad and garlic bread.

3 (9 ounce) packages stouffer creamed spinach, defrosted according to package directions
6 ounces shredded mozzarella cheese or 6 ounces jalapeno jack cheese
24 ounces fresh sliced white mushrooms
1 teaspoon chopped garlic
3 twists fresh black pepper
10 -12 plum tomatoes, seed and chop 2 cups and reserve the remaining to top casserole
1/2 cup grated parmesan cheese

Steps:

  • Preheat oven to 350 degrees.
  • Grease a large casserole dish.
  • Combine pasta, creamed spinach, cheese, mushrooms, garlic and black pepper in a large bowl.
