Scott Jones of Tulsa, Oklahoma spruces up store-bought frozen cheese tortellini with peas, prosciutto and a smooth, cheesy sauce. You can't beat this side dish for speed and satisfying taste.

1 package (19 ounces) frozen cheese tortellini
1 tablespoon all-purpose flour
1 cup half-and-half cream
1/2 cup shredded part-skim mozzarella cheese
1/2 cup shredded Parmesan cheese
10 thin slices prosciutto, chopped
1 package (10 ounces) frozen peas
1/4 teaspoon white pepper

Steps:

  • Cook tortellini according to package directions. Meanwhile, in a large skillet, combine flour and cream until smooth; stir in the cheeses. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat., Drain tortellini; add to the cheese sauce. Stir in the prosciutto, peas and pepper. Cook for 5 minutes or until heated through.

2 (9 ounce) packages refrigerated cheese-filled egg tortellini
1 cup whipping cream
2 ounces freshly grated parmesan cheese
3 slices prosciutto, chopped
3 marinated artichoke hearts, quarters sliced

Steps:

  • Prepare Tortellini according to package instructions; drain.
  • Heat cream in a large skillet over low heat.
  • Gradually sprinkle in cheese, stirring constantly, until blended.
  • Simmer, stirring occasionally, 15 to 20 minutes.
  • Add Tortellini, Prosciutto, and artichoke hearts; simmer, stirring occasionally, 5 to 10 minutes or until sauce is slightly reduced.
  • Serve immediately.
  • Serve with crusty Italian bread, if desired.

6 slices bacon
3 tablespoons olive oil
2 cloves garlic, minced
8 ounces mushrooms, sliced
½ teaspoon kosher salt
¾ cup white wine
1 ½ pounds refrigerated cheese tortellini
2 cups frozen peas
1 (15 ounce) jar Alfredo sauce
1 ½ teaspoons ground black pepper

Steps:

  • Add bacon to a large skillet over medium-high heat and cook until crispy, about 5 minutes. Remove from pan and set aside, reserving drippings in the skillet.
  • Reduce heat under skillet to low. Add olive oil and garlic to drippings in the skillet. Cook and stir until garlic becomes aromatic, no more than 1 minute. Add mushrooms to skillet and sprinkle with kosher salt. Cook until mushrooms soften and turn brown, 5 to 8 minutes. Add white wine to the skillet and simmer until mushrooms are cooked fully, about 15 minutes.
  • Meanwhile, fill a large pot with lightly salted water and bring to a rolling boil; stir in tortellini and return to a boil. Cook uncovered, stirring occasionally, for about 4 minutes. Add peas and continue cooking until tortellini float to the top and the filling is hot, 2 to 3 minutes more. Drain and set aside.
  • Add Alfredo sauce and black pepper to the skillet with the fully cooked mushrooms and stir completely. Simmer for 10 minutes. Add cooked tortellini and peas to the skillet and stir gently until well coated. Crumble cooked bacon slices on top and serve in bowls.

1/3 cup butter, cubed

1-3/4 cups heavy whipping cream
1/4 teaspoon coarsely ground pepper
3/4 cup grated Parmesan cheese
Shredded Parmesan cheese, optional
