MEXICAN TORTA BURGERS

Mexican Torta Burgers image

Provided by Food Network Kitchen

Time 30m

Yield 4 servings

Number Of Ingredients 10

1 1/2 pounds ground beef, preferably chuck
Kosher salt and freshly ground pepper
Vegetable oil, for the grill
4 soft kaiser rolls, split
1 avocado, halved, pitted and sliced
Juice of 1/2 lime
1 15-ounce can refried black beans, warmed
1/2 cup queso fresco cheese, crumbled
Pickled jalapeno slices, for topping
1 1/2 cups shredded iceberg lettuce

Steps:

  • Form the beef into four 6-ounce patties, about 3/4 inch thick; press the center of each patty with your thumb to make a 1/2-inch-deep indentation. Season the patties on both sides with salt and pepper. Lightly brush the grill grates with the vegetable oil, then grill the patties, indentation-side up, until marked on the bottom, about 5 minutes. Flip and cook until marked and slightly firm, about 3 more minutes for medium doneness. Remove the patties to a plate and let rest 5 minutes. Grill the rolls, cut-side down, until lightly toasted, about 1 minute. Toss the avocado and lime juice in a bowl and season with salt and pepper. Spread the refried beans on the bun bottoms, then top with the burger patties, cheese, avocado, pickled jalapenos and lettuce. Cover with the bun tops.

MEXICAN MILANESE STYLE SANDWICHES ("TORTAS")

Mexican Milanese Style Sandwiches (

Provided by Marcela Valladolid

Time 28m

Yield 4 servings

Number Of Ingredients 18

Four 4-ounce chicken, beef or pork cutlets
Salt and freshly ground black pepper
1 cup all-purpose flour, for dredging
1 cup plain bread crumbs, for dredging
2 eggs, beaten
Vegetable oil, for shallow frying
4 Bolillo or Telera rolls or French bread
Chipotle Mayonnaise, recipe follows
4 lettuce leaves optional
Eight 1/4-inch slices tomato
Twelve 1/4-inch slices avocado
12 thin slices white onion
12 pickled jalapeno slices or 4 canned chipotles in adobo
8 lime wedges, for garnish
1 canned chipotle chile in adobo sauce or 1/2 teaspoon hot sauce
1 teaspoon fresh lime juice
1/4 cup mayonnaise
Salt and freshly ground black pepper

Steps:

  • Season the cutlets with salt and pepper, to taste. Put the flour in a dinner plate and season with salt and pepper. Put the bread crumbs in a second plate and the beaten eggs in a shallow bowl. Dip the cutlets into the flour, then the eggs and finally into the bread crumbs, pressing down on both sides so that the bread crumbs adhere to the meat.
  • Heat 1/2-inch oil in a large skillet to 350 degrees F. Pan-fry the cutlets in batches until golden, about 2 to 3 minutes per side depending on the thickness. Set aside to drain on paper towels.
  • To assemble the sandwiches, halve the rolls horizontally. Pull out the soft center of the slices and discard. Spread each roll evenly with the Chipotle Mayonnaise. Put the cutlets on the bottom halves of the rolls and top with lettuce, tomato, avocado, onion and jalapeno. Arrange the sandwiches on serving plates and garnish with lime wedges.
  • In a small bowl mash together the chipotle chile, lime juice and mayonnaise. Season with salt and pepper, to taste.

Time 4h15m

Yield 6 servings

Number Of Ingredients 45

2 tablespoons chili powder
2 tablespoons ground cumin
2 tablespoons granulated garlic
1 tablespoon smoked paprika
2 teaspoons dry mustard
1 teaspoon ground coriander
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
2 1/2 pounds boneless pork butt, fat trimmed, cut into 3 or 4 large pieces
1/4 cup canola oil
One 12-ounce bottle Mexican beer
6 to 8 dried chile de arbol
2 tablespoons canola oil
1/2 white onion, diced
1 jalapeno, cored, seeded and diced
2 cloves garlic, minced
2 teaspoons ground cumin
1 teaspoon dried Mexican oregano
1/4 cup red wine vinegar
One 28-ounce can crushed fire-roasted tomatoes
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
6 bolillo rolls (see Cook's Note)
Olive oil, for brushing
2 cups shredded green cabbage
1/2 cup chopped fresh cilantro
Pico de gallo, recipe follows
Pickled Red Onions, recipe follows
4 Roma tomatoes, diced
1 jalapeno, seeded and minced
Juice of 1 lime
1/2 red onion, minced
2 tablespoons chopped fresh cilantro
1 teaspoon minced garlic
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
1 tablespoon olive oil
1 red onion, halved and thinly sliced
Sea salt
1 bay leaf
Pinch cayenne
Pinch ground cinnamon
1 whole star anise
2 tablespoons honey
1/4 cup red wine vinegar

Steps:

  • For the braised pork butt: Preheat the oven to 325 degrees F.
  • In a small bowl, combine the chili powder, cumin, garlic, paprika, mustard, coriander, salt and pepper. Pat the pork dry, then coat it with the rub.
  • In a large cast-iron pan, heat the canola oil over medium-high heat. Sear the pork until browned on all sides, 8 to 10 minutes. Pour in the beer, cover the pan tightly with foil and transfer it to the oven for 2 1/2 to 3 hours. Let the pork cool a bit before shredding.
  • For the tomato sauce: Soak the chile de arbol for 20 minutes in warm water. Once rehydrated, remove the stems and seeds and roughly chop. Heat the canola in a medium saucepan over medium heat. Add the onion and saute until translucent, 5 to 7 minutes. Stir in the chile de arbol, jalapeno, garlic, cumin and oregano and cook for another 2 to 3 minutes, until fragrant. Add the vinegar, tomatoes and 1 cup water. Bring to a simmer and cook for 45 to 50 minutes, stirring often. When done, puree the sauce until smooth. Season with salt and pepper to taste.
  • To assemble the sandwich: Slice the bolillos in half, leaving them hinged at one end. Brush the insides with olive oil. Place the bolillos cut-side up on a baking sheet; transfer to the oven and toast until crispy, about 5 minutes. Fill each bolillo with some shredded pork, topped with some tomato sauce, shredded cabbage, cilantro, pico de gallo and pickled red onions. Serve.
  • In a bowl, combine the tomatoes, jalapeno, lime juice, red onion, cilantro and garlic. Mix to combine. Season with salt and pepper, and refrigerate for 1 hour to allow flavors to meld.
  • Heat a small saucepan over medium heat. Add the olive oil, the onions and some sea salt, and saute until the onions are just softened, about 5 minutes. Add the bay leaf, cayenne, cinnamon, start anise, honey, red wine vinegar and just enough water to cover. Bring to a boil, then turn off the heat. Set aside to cool to room temperature. Remove the whole spices and refrigerate until ready to serve.

  • Queso Fundido Torta. This hot and cheesy torta recipe gets a slightly smoky boost from roasted poblano peppers. The best time to start sautéing the chorizo is while the peppers are roasting in the oven, so everything comes out hot at the same time.
  • Cemita Poblana (Puebla-Style Sandwich) This filling sandwich is a staple in the Mexican state of Puebla, where it earns its name from the signature sesame seed encrusted rolls it uses (i.e., cemitas).
  • Pressure Cooker Chicken Salsa Tortas. These pressure cooker tortas are as easy as they are delicious. This chicken torta recipe only calls for seven ingredients—eight if you include the optional queso fresco—including a jar of salsa and six bolillo rolls.
  • Molletes. A mollete is an open-faced sandwich popular throughout northern Mexico. Just like our version, this Mexican sandwich recipe is served open face, loaded with black beans, cheese, and fresh pico de gallo.
  • Torta Ahogada (Drowned Sandwich) A true tortas ahogadas recipe is dipped (ahogadas means "drowned" in English) in a red chile sauce before serving.

  • In a food processor combine bacon, onion, and garlic. Cover and pulse with several on/off turns until finely chopped. Transfer mixture to a medium saucepan. Cook over medium heat for 5 minutes or until bacon is completely cooked but not crispy, stirring frequently. Remove from heat. Let bacon cool completely.
  • In a large bowl stir together ground beef, bacon mixture (including drippings), the snipped cilantro, the lime juice, salt, and black pepper. Divide meat mixture into six portions. Shape each portion into a thin oblong patty slightly larger than the circumference of a hoagie roll. Cover and refrigerate patties for at least 30 minutes or up to 4 hours.
  • In a grill pan or an extra-large skillet cook patties over medium-high heat for 4 to 6 minutes, turning once halfway through cooking time. Remove from heat. Top each patty with a slice of the cheese.
  • For sauce, in a small bowl stir together mayonnaise, ketchup, and smoked paprika. Generously spread sauce onto cut sides of the hoagie rolls. Layer hoagie roll bottoms with meat patties, avocados, tomatoes, lettuce, and cilantro sprigs. If desired, top with pickled jalapeño chile peppers and/or hot pepper sauce. Top with hoagie roll tops.
