Steps:
- Preheat oven to 350 F.
- Cut cod into serving size pieces.
- Mix butter and lemon juice.
- In a separate bowl mix flour, salt and white pepper.
- Dip cod in butter/lemon then roll in flour mixture.
- Place in unreleased 8 x 8" pan. Pour whats left of the butter mixture on top.Sprinkle with paprika.
- Bake uncovered for 25-30 mn. or until fish flakes easily with a fork.
- Garnish with lemon slices and fresh chopped parsley.

- Preheat oven to 375°.
- Arrange fish in a shallow casserole; pour half the melted butter over the fillets.
- Sprinkle with salt, pepper, and paprika.
- Place the fish in the oven and bake, uncovered, basting occasionally, until the fish flakes with fork, about 15-20 minutes.
- Garnish with parsley; serve with lemon slices and the remaining melted butter for dipping.
BOILED COD
Known as "Kokt Torsk" in Norway. this recipe was submitted by Dagny Taranger from Frekhaug, Norway and Gerd Doroshuk of Dauphin, Manitoba. It was included in the Extending the Table Cookbook and is posted here for ZWT6.

Steps:
- Combine water, salt, vinegar and basil in a large kettle and bring to a boil.
- Add the cod.
- Reduce the heat and simmer for 8 minutes.
- Make sure to keep the water just below the boiling point to prevent the fish from falling apart.
- Remove fish from water and place on serving platter.
- Top with chopped parsley in melted margarine, or a hollandaise sauce.
- Serve with boiled potatoes and carrots.

MICROWAVE TORSK WITH LEMON BUTTER
My Scandinavian mother always referred to cod fish as torsk and my brother and I loved it when she made her baked torsk. I like this recipe because it's easy and I can make it in the summertime without having to turn on the oven. Serve with clarified butter for dipping if you're a real butter junkie.

TORSK
Torsk is broiled and buttered cod fillets. This recipe uses frozen fish; defrosting is not necessary. Make sure to use butter. There it too much water in margarine.

- Preheat broiler. Lightly grease a cookie sheet.
- Place the fish in a large saucepan. Mix together the water, sugar, and salt. Pour the water-mixture over the fish. The water-mixture should fully cover the fish, if it doesn't add more water. Bring the water to a boil over a medium-high heat. Boil for 3 to 5 minutes.
- Remove fillets from water, and blot on paper towels to remove excess water. Brush with 6 tablespoons melted butter, and sprinkle with paprika.
- Broil for 8 to 10 minutes per inch of thickness, or until the fillets are golden brown. Serve with the remaining melted butter.
