Tomatoes Stuffed With Fresh Mozzarella And Basil Recipes
MOZZARELLA-STUFFED TOMATOES
Steps:
- Preheat oven to 375 degrees F.
- Cut the tops off the tomatoes and, using a spoon, hollow out the middle. In a medium bowl, combine the mozzarella, bread crumbs, parsley, garlic, oregano, and olive oil. Season to taste with salt and pepper. Place the stuffing in the tomatoes, taking care not to pack them too tight. Place on a baking sheet and transfer to the oven. Roast for 30 minutes.
FRESH MOZZARELLA WITH RED AND YELLOW TOMATOES AND BASIL VINAIGRETTE
Steps:
- Arrange the cheese and tomatoes on a platter and drizzle with the vinaigrette, to taste, and garnish with basil leaves.;
- Combine all ingredients and blend until smooth. Adjust seasoning with salt and pepper, to taste.

- Preheat the oven to 400 degrees. Coat a small cast iron skillet or a small baking dish with olive oil cooking spray.
- Prepare the tomatoes by cutting off the 1/4 top portion of the tomato horizontally. Use a spoon to scoop out the flesh being careful not to puncture the bottom of the tomatoes. Place the empty tomatoes in the prepared cast iron skillet.
- Using your hands, separate the seeds from the scooped out tomato flesh and transfer the flesh to a cutting board and chop the flesh finely. Discard the seeds and tomato water.
- Make the stuffing by combining the mozzarella cheese, 1/4 cup parmesan cheese, basil, panko crumbs, chopped tomato flesh, butter, garlic, sea salt, and freshly cracked pepper, to taste; mix until well combined.

Mix cubed mozzarella cheese and chopped basil in medium bowl. Divide cheese mixture among tomato shells, packing gently. DO AHEAD Can be made 2 hours ahead. Cover tomatoes and chill. Bring to room temperature before continuing.
- Invert 1 filled tomato on each plate. Pour vinaigrette into 6 shot glasses. Place 1 shot glass next to each tomato. Garnish each tomato with basil leaf.
