TOMATO AND FETA GALETTE

A light and savory meal to use up all of those tomatoes from the garden.

1 tablespoon butter
1 tablespoon olive oil
1 large onion, diced
2 cloves garlic, minced
1 tablespoon fresh thyme
salt and ground black pepper to taste
1 sheet frozen puff pastry, thawed
1 pound tomatoes, sliced into 1/4-inch rounds
½ cup grated Parmesan cheese, or more to taste
½ cup panko bread crumbs
½ cup crumbled feta cheese
1 tablespoon fresh parsley
1 egg, beaten
2 tablespoons thinly sliced fresh basil

Steps:

  • Heat butter and oil together in a skillet over medium heat; add onion. Cook and stir until onion is translucent, 10 to 15 minutes. Stir garlic, thyme, salt, and pepper into onion; cook and stir until fragrant, about 2 minutes. Remove skillet from heat.
  • Roll out puff pastry on a lightly floured surface. Line a baking sheet with parchment paper and place puff pastry on parchment paper. Place baking sheet in the freezer.
  • Preheat oven to 450 degrees F (230 degrees C).
  • Arrange tomato slices on a wire rack placed on top of a baking sheet. Sprinkle salt over tomato slices and set aside to drain tomatoes, about 10 minutes.
  • Mix Parmesan cheese, bread crumbs, feta cheese, and parsley together in a bowl. Spread 1/2 of this cheese mixture over the puff pastry, leaving a 1-inch border around the edges. Layer the onion mixture over cheese mixture layer.
  • Blot tomatoes dry and arrange over onion layer. Sprinkle remaining cheese mixture over tomato layer. Fold the puff pastry border over the edges of the tomatoes and lightly brush egg over pastry.
  • Bake in the preheated oven until crust is golden and puffed, about 20 minutes. Sprinkle fresh basil over galette and allow to cool for 15 minutes before slicing.

Layers of thyme-flecked potato and tomato slices are baked to crisp perfection. If you have a mandoline, use it to make the thinnest, most even potato slices.

2 tablespoons extra-virgin olive oil, plus more for baking sheet
1 teaspoon fresh thyme leaves, plus sprigs for garnish
1/2 teaspoon coarse salt
3 medium red potatoes (3 inches in diameter each, about 3/4 pound total), cut crosswise into 1/8-inch-thick rounds
1 medium tomato (about 1/2 pound), cut crosswise into 8 slices

Steps:

  • Preheat oven to 400 degrees. Brush a baking sheet with oil; set aside. Stir thyme, oil, and salt in a medium bowl. Add potatoes; toss to coat.
  • Arrange potatoes on prepared baking sheet, overlapping slices slightly in a spiral to make 4 rounds (about 5 inches in diameter each). Add tomatoes to bowl with remaining oil mixture; turn to coat. Place 2 tomato slices on top of each potato round. Bake until potatoes are tender and edges are beginning to brown, 15 to 22 minutes. Garnish with thyme sprigs.

We watched Michele make this galette in class using the dough recipe # 184444(this is the pastry dough referred to in the ingredients...Zaar doesn't recognize galette dough). The success of this galette depends entirely on the quality of the tomatoes, so use the best home grown (if possible) tomatoes you can find. You will want a variety with dense flesh, one that feels heavy in your hand. Simple and lovely recipe that tastes even better.

4 -5 medium tomatoes, dense flesh heirlooms
4 slices bacon
1 (14 inch) pastry dough, chilled for 1 hour (rz.# 184444)
3 ounces Fontina cheese, thinly sliced
2 tablespoons fresh chives or 2 tablespoons parsley
1 egg white
1 tablespoon water
1 teaspoon coarse sea salt or 1 teaspoon hawaiian alaea salt
salt
fresh black pepper

Steps:

  • Remove the stem cores of the tomatoes and slice into 3/8-inch thick slices.
  • Place in a single layer on cookie sheets and season with salt. Cover with a clean tea towel and set them aside.
  • Fry the bacon slices until just crisp and drain on paper towels; set aside.
  • Drain the juices that have collected around the tomatoes, using you fingers to press out any large pockets of seeds and gel.
  • Preheat the oven to 400ºF.
  • Remove the chilled dough from the refrigerator and if you have not put it on a baking sheet lined with parchment, do so now.
  • Arrange the cheese slices over the surface of the tart, leaving a 2-inch margin around the edges.
  • If more juices have formed around the tomatoes, drain them again.
  • Set the tomatoes on top of the cheese in concentric circles that overlap slightly. (Basically, make it look pretty.).
  • Season the tomatoes lightly with kosher salt and generously with black pepper from a mill.
  • Scatter the chives over the top of the tomatoes.
  • Arrange the bacon strips on top.
  • Gently fold the edges of the tart up and over the tomatoes, pleating the edges as you fold them. (Pinch and fold, pinch and fold).
  • Mix the egg white and Tbs of water in a small dish.
  • Using a pastry brush, brush the edge of the tart lightly with the egg wash and sprinkle it with sea salt.
  • Bake until the pastry is golden brown and the tomatoes are soft and fragrant, about 35-40 minute.
  • Transfer to a rack to cool slightly.
  • Cut into wedges and serve warm.

500g tomatoes (use a mixture of sizes and colours), cut into ½cm pieces
50g gruyère or vegetarian alternative, coarsely grated
1 garlic clove, finely grated
1 tbsp chopped oregano or thyme
225g plain flour, plus extra for dusting
100g cold butter, cut into cubes
2 eggs, plus extra beaten egg for brushing

Steps:

  • Tip the tomatoes into a colander set over a large bowl, sprinkle over 1 tsp salt and set aside for 1 hr to draw out the moisture. Meanwhile, make the pastry. Tip the flour, butter and a good pinch of salt into a food processor and blitz to a fine breadcrumb-like consistency. Beat the eggs in a jug, then tip into the processor and pulse to a soft dough - if it seems dry, add ½ tsp cold water at a time until it comes together. Shape into a disc, then wrap and chill for 20 mins.
  • Heat the oven to 180C/160C fan/gas 4. Tip the tomatoes into a large bowl with the cheese, garlic, herbs and a good grinding of black pepper. Gently combine using your hands and set aside.
  • Roll the chilled pastry out on a lightly floured surface to a roughly 30cm circle. Pile the tomato mixture into the middle, leaving a roughly 5cm border around the edge. Brush the exposed pastry border with some beaten egg, then fold the border up so it slightly overlaps the tomato filling. It doesn't need to be even or neat.
  • Brush the pastry with more beaten egg, then bake for 40-50 mins until the pastry is golden and the tomatoes have softened and are tender.

A very simple basic galette from one of our National supermarkets as part of a Christmas feast, though I think it is a dish you could serve at any time of the year. Also instead of red potatoes or desiree, you could use pontiacs. Preparation time could vary depending on whether you use a mandolin or food process or cut the potatoes with a knife.

80 g butter (melted)
2 garlic cloves (minced)
1 kg potato (red suggested)
salt (freshly ground)
pepper (freshly ground)

Steps:

  • Preheat oven to 200C or 180C fan forced.
  • Brush a 20cm springform pan with melted and then combine the remaining butter and garlic in a small bowl.
  • Peel potatoes and slice as thin as possible (would suggest a mandolin or food processor).
  • Make a layer of potatoes in the base of the pan, overlapping slightly and brush with some garlic butter and season lightly with salt and freshly ground black pepper.
  • Repeat layers, brushing each with garlic butter and seasoning with the salt and pepper every couple of layers.
  • When you have made the final layer, press down to compact the potato, before giving a final brush of butter.
  • Stand pan on a baking tray, cover with foil and bake for 1 hour, uncover pan and cook for a further 30 minutes or until potato is tender and the top is a golden brown.
  • Run a knife around the inside of the pan and release the sides and cut into wedges to serve.

This savory galette, using summer fresh vegetables and a purchased pie crust, is a delightfully different side dish that makes good use of zucchini, yellow squash, tomatoes, and onion. If you don't have Gruyere cheese, substitute Swiss.

1 pastry for a 9 inch single crust pie
2 small Roma tomatoes, peeled and cut into 1/4 inch slices
1 small yellow squash, cut into 1/4-inch slices
1 small zucchini, cut into 1/4-inch slices
1 teaspoon kosher salt, divided
1 tablespoon unsalted butter
1 tablespoon all-purpose flour
½ teaspoon herbes de Provence, divided
freshly ground black pepper
1 cup milk
4 ounces shredded Gruyere cheese, divided
1 tablespoon bread crumbs
½ small onion, thinly sliced
1 large egg, beaten
fresh herbs for garnish (optional)

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a sheet pan with parchment paper.
  • Allow the dough to come to room temperature, about 20 minutes.
  • Meanwhile, place sliced tomatoes in a single layer on a paper towel-lined plate, and place zucchini and yellow squash slices on plates as well, also in a single layer. Sprinkle vegetables lightly with salt, about 1/4 teaspoon for each vegetable. Allow to stand for 20 minutes.
  • Melt butter in a small saucepan over medium heat. Stir in flour and cook, stirring, until all the flour is incorporated into the butter, about 3 minutes. Season with 1/4 teaspoon herbes de Provence, black pepper, and any remaining salt. Slowly add milk, stirring constantly to avoid lumps.
  • Continue to cook and stir until mixture has thickened and bubbles break open (some cooks call this stage "making bullseyes"), 5 to 8 minutes. Remove from heat and stir in 1/2 of the shredded Gruyere. Allow sauce to cool slightly.
  • If using purchased pie dough, open the pouch and place dough onto the prepared sheet pan. Slowly unroll the dough, pinching together to close any tears. Sprinkle bread crumbs over the dough.
  • Blot tomatoes and squash with paper towels.
  • Ladle sauce over the dough, leaving about a 1 1/2-inch border without sauce. Starting on the outside edge of the sauce, alternate slices of yellow squash, onion, zucchini, and tomato, repeating until all the sauce is covered by the vegetables. Sprinkle remaining herbes de Provence over the vegetables, and gently fold the crust over the outside edge of the vegetables.
  • Brush beaten egg onto the folded pie dough.
  • Place galette in preheated oven and bake until the crust is brown and the vegetables are tender, 25 to 30 minutes.
  • Sprinkle remaining shredded cheese on top of the warm galette and bake until cheese is melted, 3 to 5 more minutes.
  • Allow to cool for 5 minutes. Garnish with fresh herbs and serve.

I haven't tried this yet. I was looking for a recipe similar to this wonderful stuff that my greek roomate uded to make in college. We called it tomato spegetti -- but basically it was potatoes, tomato sauce, and basil. but i forgot what else. this recipe seemed kinda close. hope you like it.

5 medium red potatoes, washed & grated
1/4 teaspoon salt
1/4 teaspoon coarse black pepper
3 cloves garlic, minced
1 teaspoon chopped fresh thyme or 1/2 teaspoon dried thyme
1 tablespoon white wine vinegar
1 large egg
3 tablespoons olive oil
3 large firm very ripe tomatoes, sliced
3 ounces chevre cheese or 3 ounces feta cheese, crumbled
10 whole basil leaves, cut 1/4 inch strips

Steps:

  • Preheat oven to 400 degrees and place the rack in the lowest position.
  • Place potatoes in a strainer and press with the back of a spoon to remove all the moisture.
  • In a medium bowl, combine the potatoes, salt, pepper, garlic, thyme, vinegar, egg and two tablespoons of the olive oil.
  • Pat the mixture into a well-oiled 9-inch pie plate.
  • Bake for 30 minutes.
  • Remove from the oven and brush the crust with the remaining oil.
  • Arrange tomatoes in concentric overlapping circles on the potatoes.
  • Sprinkle with cheese and basil.
  • Season with salt and pepper to taste and return to the oven.
  • Bake for 15-20 minutes until the cheese is light brown and bubbly.
  • Remove and allow to cool for five munutes before cutting into wedges.
  • Makes approximately six servings.
